Yields:
12 to 24 brownies depending on size

Ingredients

For the Brownies:

  • 2 cups (400 g) granulated sugar
  • 1 cup (226 g) butter, melted
  • 4 large eggs
  • 2 tsp vanilla extract
  • 6 Tbsp unsweetened cocoa powder
  • 2 cups (240 g) all-purpose flour
  • 8 oz (227 g) mini marshmallows (half a bag)
  • ½ cup (56 g) walnuts, chopped

For the Frosting:

  • ¼ cup (57 g) margarine
  • 1 ½ Tbsp unsweetened cocoa powder
  • 3 Tbsp milk
  • 2 ½ cups (300 g) powdered sugar
  • ½ tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and set aside.
  2. In a large mixing bowl, combine the granulated sugar and melted butter. Mix until well incorporated.
  3. Add the eggs one at a time, mixing well after each addition until the mixture is smooth and creamy.
  4. Stir in the vanilla extract and unsweetened cocoa powder until fully combined.
  5. Gradually add the all-purpose flour, mixing until just combined. Be careful not to overmix, as this can lead to tough brownies.
  6. Pour the brownie batter evenly into the prepared 9×13-inch pan.
  7. Bake for 23 to 25 minutes, or until a toothpick inserted into the center comes out with moist crumbs, not wet batter.
  8. Remove the brownies from the oven and immediately sprinkle the mini marshmallows evenly over the hot surface.
  9. Place the pan back in the oven for an additional 2 minutes, or until the marshmallows are puffy and slightly golden. Watch carefully to prevent burning.
  10. Remove from the oven and immediately sprinkle the chopped walnuts over the melted marshmallows.
  11. While the brownies are cooling slightly, prepare the frosting: In a small saucepan over medium heat, melt the margarine.
  12. Stir in the unsweetened cocoa powder and milk until smooth. Bring the mixture to a gentle boil, stirring constantly.
  13. Remove from heat and gradually whisk in the powdered sugar and vanilla extract until the frosting is smooth and lump-free.
  14. Generously drizzle the warm frosting over the hot brownies, allowing some of the marshmallows and walnuts to show through for that classic Rocky Road look.
  15. Let the brownies cool completely before cutting into squares. This allows the frosting to set and the brownies to become perfectly fudgy. Enjoy your decadent Rocky Road Brownies!

Notes

For an extra boost of chocolate, consider adding a handful of chocolate chips to the brownie batter before baking.

If you prefer a different nut, pecans or almonds would also be delicious in this recipe.

Ensure your marshmallows are fresh for the best gooey texture.

Pro Tips for the Best Rocky Road Brownies

Achieving brownie perfection is easier than you think with a few simple tricks:

  • Don’t Overmix the Batter: Once you add the flour, mix until just combined. Overmixing develops the gluten in the flour, leading to a tougher, cake-like brownie rather than a rich, fudgy one.
  • Grease Your Pan Well: A well-greased (and perhaps floured or parchment-lined) pan ensures your brownies release cleanly without sticking. Parchment paper with an overhang is especially helpful for easy lifting.
  • Watch the Baking Time: Brownies can go from perfectly fudgy to dry and crumbly in a matter of minutes. Start checking around the 20-minute mark. A toothpick inserted into the center should come out with moist crumbs, not wet batter, but also not completely clean.
  • Marshmallow Timing: The key to perfectly melted and slightly toasted marshmallows is adding them when the brownies are still hot and then returning them to the oven for just a couple of minutes. Keep a close eye on them to avoid burning.
  • Cool Completely: Resist the urge to cut into warm brownies! Allowing them to cool completely helps them set, creating cleaner cuts and a more stable, fudgy texture. Chilling them in the refrigerator for an hour or two can make cutting even easier.

Variations & Customizations for Your Rocky Road Brownies

While the classic combination is always a hit, don’t hesitate to get creative with your Rocky Road Brownies:

  • Nutty Alternatives: Not a fan of walnuts? Try pecans, almonds, or even peanuts for a different crunch. Toasting the nuts lightly before adding them can enhance their flavor.
  • Chocolate Choices: Experiment with different types of chocolate! Add semi-sweet chocolate chips to the batter, or sprinkle milk chocolate or dark chocolate chunks over the marshmallows before the final frosting drizzle. White chocolate chips could also add a fun twist.
  • Extra Toppings: After frosting, sprinkle with shredded coconut, a pinch of sea salt to enhance the chocolate, or even crushed pretzels for a salty-sweet crunch.
  • Spice It Up: A tiny pinch of cayenne pepper in the brownie batter or frosting can add a subtle, warming kick that beautifully complements the chocolate.
  • Mini Brownies: Bake the batter in a mini muffin tin for bite-sized Rocky Road treats, adjusting baking time accordingly.

Storage and Make-Ahead Tips

These Rocky Road Brownies are fantastic for entertaining because they store well and can even be made in advance.

  • Storage: Store leftover brownies in an airtight container at room temperature for up to 3-4 days. For longer storage, you can keep them in the refrigerator for up to a week, though they might become a bit firmer. Let them come to room temperature before serving for the best texture.
  • Freezing: These brownies freeze beautifully! Once completely cooled and cut, place them in a single layer on a baking sheet and freeze until solid. Then, transfer the frozen brownies to an airtight, freezer-safe container or freezer bag, separating layers with parchment paper. They can be frozen for up to 2-3 months. Thaw at room temperature before serving.
  • Make-Ahead: You can bake the brownies a day in advance and store them frosted or unfrosted. If unfrosted, simply prepare the frosting and drizzle it on before serving.

Frequently Asked Questions (FAQ)

Can I use a boxed brownie mix for this recipe?
Yes, absolutely! If you’re short on time, you can use your favorite boxed brownie mix. Prepare the mix according to package directions, then follow the recipe from the step where you add marshmallows and the frosting instructions.
My marshmallows burned! What went wrong?
Marshmallows can burn very quickly due to their high sugar content. The key is to keep a close eye on them during those 2 minutes back in the oven. They should just puff up and get slightly golden, not deeply browned. If your oven runs hot, you might even consider turning off the oven and letting them melt with the residual heat.
Can I skip the nuts?
Of course! If you have a nut allergy or simply don’t like nuts, you can easily omit the walnuts. The brownies will still be delicious with just the chocolate and marshmallows.
How do I get clean cuts?
For perfectly clean cuts, ensure your brownies are completely cooled. Chilling them in the fridge for about 30 minutes to an hour can also help firm up the chocolate and marshmallows. Use a sharp, warm knife (run it under hot water and wipe dry between each cut) and wipe the blade clean between slices.
Can I use different sized marshmallows?
Mini marshmallows work best for even distribution and melting. Larger marshmallows will work, but you might need to cut them into smaller pieces to ensure they melt properly and don’t create overly large pockets of gooeyness.

I hope you enjoy this Rocky Road Brownie recipe as much as I do!
