Why You Will Love This Recipe

Light, tender cupcakes topped with a stabilized whipped cream cheese frosting and a syrupy strawberry sauce hit every dessert note: tender cake, creamy frosting, and fresh fruit. These cupcakes are pretty enough for Valentine’s Day but work equally well for Easter, summer parties, or anytime you want a strawberries-and-cream treat.

The recipe is built from three simple components:

  1. Homemade vanilla cupcakes
  2. Whipped cream cheese frosting
  3. Fresh strawberry sauce topping

Strawberry Shortcake Cupcakes

The vanilla cupcake batter is straightforward and yields about 15 standard cupcakes. The whipped cream cheese frosting uses cream cheese to stabilize whipped cream so the frosting holds a piped edge and contains the fruit filling. The strawberry sauce is cooked quickly with sugar, lemon juice, and cornstarch until it becomes syrupy—fresh strawberries give the brightest flavor.

Labeled ingredients needed to make Strawberry Shortcake Cupcakes.
  • Granulated sugar – for the cupcakes and strawberry sauce.
  • Cornstarch – to thicken the strawberry sauce.
  • Water and lemon juice – to thin and brighten the strawberry topping.
  • Strawberries – fresh is best; frozen can work if chopped as they cook.
  • All-purpose flour – for the cupcake structure; measure accurately.
  • Baking powder and salt – for lift and flavor balance.
  • Neutral oil – keeps the cake moist without heaviness.
  • Eggs – for structure and lightness.
  • Vanilla extract – adds depth to the batter and frosting.
  • Buttermilk – tenderizes the crumb; use a milk + vinegar substitute if needed.
  • Cream cheese – brick style, cold, full fat or Neufchatel for the frosting.
  • Powdered sugar and heavy cream – to sweeten and lighten the frosting.

First, Make the Strawberry Sauce Topping

Make the strawberry sauce first so it has time to cool completely before assembling.

Steps to make strawberry sauce topping.
  • Whisk granulated sugar and cornstarch in a medium saucepan.
  • Add water, lemon juice, and diced strawberries; stir to combine.
  • Cook over medium heat, stirring constantly, until the mixture boils and thickens into a syrup. Transfer to a heat-safe container and refrigerate until cool.

Next, Make the Vanilla Cupcakes

Preheat the oven to 350°F (375°F high altitude). Line muffin tins with liners.

Steps 1-4 to make homemade vanilla cupcakes.
  1. Sift together flour, baking powder, and salt; set aside.
  2. Whisk oil and granulated sugar in a large bowl until combined.
  3. Add eggs one at a time, mixing after each addition, then stir in vanilla.
  4. Add half the dry ingredients and mix until just combined.
  5. Stir in the buttermilk until combined, then add the remaining dry ingredients and mix gently. Do not overmix.
  6. Scoop batter about 2/3 full into liners (a #24 scoop yields ~15 cupcakes). Bake 15–20 minutes until a toothpick comes out clean or with a few moist crumbs. Cool completely.
Steps 5-8 to make homemade vanilla cupcakes.

Last, Make the Whipped Cream Cheese Frosting

Using the two-bowl method works best for this frosting: beat the cream cheese with powdered sugar and flavoring, then fold in whipped heavy cream.

Steps to make whipped cream cheese frosting.
  • Beat the cold cream cheese briefly until smooth, then add powdered sugar, a pinch of salt, and vanilla; beat to combine.
  • Whip cold heavy cream to stiff peaks (stop before it turns to butter).
  • Fold or gently beat the whipped cream into the cream cheese mixture until combined. Chill the frosting if the kitchen is warm.

Topping the Strawberry Shortcake Cupcakes

With cooled cupcakes, cooled strawberry sauce, and chilled frosting, assemble the cupcakes.

Topping vanilla cupcakes with whipped cream frosting and strawberry sauce to make strawberry shortcake cupcakes.
  1. Spread a thin layer of frosting over each cupcake as a mini crumb coat.
  2. Pipe a ring of frosting around the edge of each cupcake, leaving a well in the center (a Wilton 2D tip works well).
  3. Spoon about a tablespoon of cooled strawberry sauce into the center of each cupcake.

Serving and Storing

  • Serve immediately after assembling for the best texture and appearance.
  • Store leftovers in an airtight container in the refrigerator for 3–4 days.
  • Remove refrigerated cupcakes 20–30 minutes before serving so the cake softens to room temperature.

Recipe Variations

  • Stabilized whipped cream: Substitute stabilized whipped cream for the cream cheese frosting if you prefer a lighter topping—use gelatin to help it hold shape.
  • Fresh strawberry cupcakes: Fold diced strawberries into the batter for extra fruit flavor.
  • Fruit swap: Raspberries also work well in place of strawberries for a slightly different tartness.

Recipe Notes

  • Fill liners 2/3 full: This recipe makes about 15 cupcakes. Use a second pan for any extra batter to avoid overflow.
  • Make buttermilk quickly: Mix 1 tsp lemon juice or vinegar with milk and let sit 5 minutes if you don’t have buttermilk on hand.
  • Decorating tools: An offset spatula for the crumb coat, a Wilton 2D tip for piping, and a small scoop for the strawberry sauce make assembly easier.
