If you follow this blog, you may know I recently completed a six-week health challenge. Cleaning up my diet and choosing healthier options has made a noticeable difference in how I feel. One change I made during the challenge was switching to Silk almond milk. For two servings you’ll need 1/2 cup old-fashioned oats, 1/2 cup vanilla Greek yogurt, 1 tablespoon chia seeds, and 2/3 cup Silk Almond Coconut Blend. Mix everything together, divide into jars, and refrigerate for at least eight hours or overnight.

In the morning, add fresh fruit and enjoy. To keep the tropical theme, I topped mine with diced kiwi and fresh pineapple, which pair nicely with the coconut notes in the almond coconut blend. My husband loved this combination.

Ingredients

  • ½ cup old fashioned oats
  • ½ cup vanilla Greek yogurt
  • 1 Tbsp chia seeds
  • ⅔ cup Silk Almond Coconut Blend
  • 1 kiwi, peeled and diced
  • ¼ cup fresh diced pineapple

Instructions

  • Combine oats, vanilla Greek yogurt, chia seeds, and Silk Almond Coconut Blend. Stir until evenly mixed.
  • Divide the mixture between two half-pint mason jars, cover, and refrigerate overnight (about 8 hours).
  • In the morning, divide the kiwi and pineapple between the jars, stir if desired, and enjoy. Jars can be refrigerated up to 3 days.
