These Triple Chocolate Brownies are intensely chocolatey: a fudgy brownie base studded with chocolate chips, topped with a light whipped chocolate frosting and finished with a thin ganache drizzle.

The brownie base might be my favorite of all time. It’s rich and fudgy — worth the little extra effort compared to a boxed mix. These brownies are perfect for anyone who loves chocolate. If you’re a frosting fan, double or triple the frosting and ganache layers. I prefer a lighter finish, but feel free to add extra toppings if you like.

Ingredients

Brownie:

  • 4 oz (113 g) unsweetened chocolate baking squares
  • ⅔ cup (150 g) unsalted butter
  • ¾ cup (128 g) semi-sweet chocolate chips + ½ cup (85g) extra semi-sweet chocolate chips
  • 1 ⅓ cup (160 g) all-purpose flour, (stir, spoon & level)
  • 1 tsp baking powder
  • ½ tsp salt
  • 4 large eggs
  • 2 cups (400 g) granulated sugar
  • 2 tsp vanilla extract

Whipped Chocolate Frosting – Makes 1 ¼ cups (Frosting lovers may want to double):

  • ¼ cup (50 g) granulated sugar
  • 4 Tbsp (20 g) cocoa powder
  • 1 cup (237 ml) heavy cream
  • 1 tsp vanilla extract

Ganache Drizzle (Double or triple to cover the whole pan for a third layer):

  • ¼ cup (43 g) semi-sweet chocolate chips
  • 2 Tbsp heavy cream
  • ⅛ tsp vanilla extract

Instructions

  • For the brownie: In a saucepan over medium-low heat, melt the unsweetened chocolate squares, butter and ¾ cup of the semi-sweet chocolate chips. Remove from heat and let cool for about 5 minutes. Sift together flour, baking powder and salt in a separate bowl.
  • In a large bowl, whisk the eggs, granulated sugar and vanilla until combined. Stir in the slightly cooled chocolate mixture, then add the dry ingredients and mix until just incorporated. Fold in the extra ½ cup of chocolate chips.
  • Pour the batter into a greased 13×9-inch pan and bake at 350°F (175°C) for 25–30 minutes, until a toothpick inserted near the center comes out with a few moist crumbs.
  • Once the brownies have cooled completely, make the whipped chocolate frosting. In a stand mixer fitted with the whisk attachment, whip the heavy cream, granulated sugar, cocoa powder and vanilla until stiff peaks form. Spread the frosting over the cooled brownies. Note: the whipped frosting may lose some volume over time.
  • For the ganache drizzle: Heat the chocolate chips and heavy cream in short 10–15 second bursts in the microwave, stirring between bursts, until melted and smooth. Stir in the vanilla. Drizzle over the frosting and refrigerate until set. If doubling or tripling the ganache for a full third layer, heat carefully in short intervals, stir until smooth, cool slightly, spread over the frosting and chill until firm.
