With school letting out next week for us, I’m already planning summer get-togethers and potlucks. One recipe that always comes to mind for warm-weather gatherings is this chilled vegetable pizza. Served cold, it feels light and fresh, and the crisp vegetables add great texture.

I don’t usually choose cold pizza, but this is my exception because it’s meant to be enjoyed chilled. The combination of a tender baked crust and a cool, flavorful topping is surprisingly satisfying.

I’ve served this vegetable pizza at baby showers, bridal showers, and ladies’ nights—any event where a simple, delicious appetizer is needed. It’s a safe bet because it’s easy to make and everyone enjoys it.

This version is inspired by a classic produce tray. If you like, you can add celery or swap any vegetables to suit your taste. Everything is combined on the crust so there’s no need to dip individual vegetables—making it easier to serve and eat.

One of the best features is that you can make this ahead of time. It keeps well in the refrigerator for a few days: the dough remains soft but sturdy, the cream cheese-ranch layer doesn’t make the crust soggy, and the raw vegetables stay crisp.

There’s no reason not to try this—use up garden produce or pick your favorite vegetables and make a bright, fresh vegetable pizza for your next gathering.
Vegetable Pizza
Ingredients
- 1 loaf Rhodes White Bread, thawed and risen (about 4–5 hours at room temperature)
- 8 oz block-style cream cheese
- 1/2 cup sour cream
- 1 oz packet dry ranch dip mix
- 1 Tbsp dried chives (or 2 Tbsp fresh)
- 1/2 cup shredded cheddar cheese
- 1/2 cup broccoli florets, chopped
- 1/4 cup baby carrots, sliced
- 1/4 cup cherry tomatoes, quartered
Instructions
- Preheat oven to 425°F. On a large greased baking sheet, roll the thawed loaf of Rhodes White Bread into a rectangle. Use a fork to poke holes across the dough.
- Bake 10–13 minutes or until golden brown. Remove and let cool completely.
- In a large bowl, beat the cream cheese, sour cream, dry ranch mix, and chives with a hand mixer until smooth and well combined.
- Spread the cream cheese mixture over the cooled crust, leaving a 1/2-inch border around the edges.
- Sprinkle with shredded cheddar and top with the chopped vegetables.
- Cover with plastic wrap and refrigerate until ready to serve.
- To serve: remove plastic wrap. Cut into 2×4 rows, then halve each rectangle diagonally to make 16 triangles. Serve chilled.
Notes
You can swap vegetables depending on what’s in season or what you prefer. Celery, bell peppers, cucumber, or sliced radishes are good additions. This pizza holds up well in the refrigerator for a few days, making it great for make-ahead entertaining.
