Ingredients

BREAD:

  • ½ cup (113 g) butter, softened
  • ¾ cup (150 g) coconut sugar, or brown sugar
  • 4 large bananas, mashed
  • 2 large eggs
  • ⅓ cup (80 ml) buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups (240 g) white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup (140 g) fresh blueberries, (if using frozen, do not thaw)
  • 1 cup (140 g) fresh raspberries, (if using frozen, do not thaw)

ICING:

  • 2 oz (57 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 Tablespoons half-and-half cream

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Lightly grease two 9-inch loaf pans. Set aside.
  2. Make the bread: In a large bowl, using a handheld electric mixer, beat softened butter and sugar until light and creamy. Add mashed bananas, eggs, buttermilk, and vanilla extract, and continue to beat on medium speed until the mixture is smooth and well combined.
  3. In a separate large bowl, whisk together the white whole wheat flour, baking soda, and baking powder.
