What is Pistachio Salad?

Pistachio Fluff is a no-bake dessert made from instant pistachio pudding mix combined with whipped topping, fruit, and mini marshmallows. Traditional versions trace back to the 1970s when boxed pudding and whipped topping were a popular combination; since then, people have added crushed pineapple, fruit cocktail, nuts, and other mix-ins to personalize the recipe.

One popular variation adds cottage cheese to temper the sweetness, increase volume, and add a bit of protein. If you enjoy fruit with cottage cheese, you’ll likely appreciate this version. If you’d rather skip cottage cheese, the salad works perfectly without it—just follow the slightly different mixing method noted below.

  • Pistachio Instant Pudding Mix
  • Crushed Pineapple (drained if using cottage cheese; use with juices if omitting cottage cheese)
  • Mini Marshmallows
  • Whipped Topping (e.g., Cool Whip), thawed
  • Cottage Cheese (optional)

How to Make Pistachio Fluff

  1. In a large bowl, combine the pistachio pudding mix with the whipped topping and cottage cheese (if using). Mix until smooth and evenly blended.
  2. Fold in the drained crushed pineapple and mini marshmallows until distributed throughout the mixture.

Serve immediately or, for the best texture, chill for 1–2 hours. Cooling allows the pudding mix to absorb moisture and creates a thicker, fluffier texture.

Note: If you omit the cottage cheese, do not drain the pineapple. Start by combining the pudding mix with the crushed pineapple and its juices, then fold in the whipped topping and mini marshmallows.

Ingredients

  • 16 oz tub small curd low-fat cottage cheese*
