Ingredients

  • 8 oz (226 g) block cream cheese, cold
  • ½ cup (113 g) butter, (1 stick) room temperature
  • 1 cup (120 g) powdered sugar
  • zest of 1 lemon
  • 1 tsp pure lemon extract
  • 1 tsp fresh lemon juice

  • Electric hand mixer

Instructions

  • Place the cold cream cheese in a large mixing bowl.
  • Beat with an electric hand mixer until smooth.
  • Add the butter gradually, about 2 tablespoons at a time, beating until fully incorporated and smooth.
  • Add the lemon zest, lemon extract, fresh lemon juice, and powdered sugar. Blend until well combined and silky. Use to spread or pipe on cooled cupcakes or cakes.

Notes

  • Yield: About 1 1/2 cups of frosting, enough for roughly 12–15 cupcakes.
