Crinkle-Style Lime Cookies

These lime crinkle cookies are inspired by classic lemon crinkles but swap lemons for limes for a brighter, tangier profile. The exterior is soft with a slightly crisp sugar coating, while the interior remains dense and moist — almost like a cross between a citrus cookie and a lime bar.

The recipe uses fresh lime zest and juice for natural flavor. A touch of food coloring is optional if you want a more vivid green inside the cracks when the powdered sugar splits open.

How to Make Lime Crinkle Cookies

Note: Full ingredient quantities and the printable recipe card follow below.

Steps to make lime cookies.
  1. Whisk together the flour, baking powder, and salt; set aside.
  2. Cream room-temperature butter, granulated sugar, and lime zest in a stand mixer fitted with the paddle until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in lime juice and optional food coloring until evenly incorporated.
  5. Add the flour mixture and mix on low until combined. The dough should be thick and slightly sticky.

If the dough seems too soft or wet, refrigerate for about 30 minutes until firm enough to scoop.

Scooping and Coating the Lime Cookies

Scoop of lime cookie dough being coated with granulated sugar, and then powdered sugar.
  • Place granulated sugar and powdered sugar in separate small bowls.
  • Use a medium cookie scoop (#40; about 1.5 tablespoons) to form dough balls. A trigger scoop helps with sticky dough.
  • Roll each ball in granulated sugar first, shake off excess, then generously coat with powdered sugar.

Baking and Storing

Before and after baking lime crinkle cookies.
  • Arrange cookies several inches apart on a parchment- or silicone-lined baking sheet.
  • Bake at 350°F for 9–11 minutes, until cookies are puffy and edges are set. The centers of the cracks should look nearly matte with a hint of shine.
  • Cool a few minutes on the pan, then transfer to a wire rack to cool completely.
  • To store: Keep cookies in an airtight container at room temperature up to 4 days, or refrigerate up to 1 week.

Tips for Success

  • Butter temperature matters. Room-temperature butter should give slightly when pressed but not be greasy. Too-soft butter makes cookies spread; chill the dough if needed.
  • Double coating helps. Rolling in granulated sugar before powdered sugar prevents the coating from dissolving and gives a slight crisp exterior while keeping the interior tender.
  • Chill for thicker cookies. If you prefer taller cookies, refrigerate the dough before baking to slow spreading.

Can I freeze these cookies?

Yes. You can freeze both raw dough balls and fully baked cookies.

  • To freeze dough: Scoop uncoated dough onto a lined sheet and freeze until firm (1–2 hours). Transfer to a freezer-safe bag for up to 3 months. When ready, let dough sit 20–30 minutes at room temperature, then roll in sugars and bake.
  • To freeze baked cookies: Freeze cooled cookies in single layers separated by parchment, wrapped or in a freezer bag, up to 3 months. Thaw in the fridge or at room temperature. Powdered sugar may absorb slightly during freezing but won’t alter the flavor.

Soft-baked Lime Crinkle Cookies are flavored with real lime zest and juice. The powdered sugar cracks as it bakes revealing the tangy and moist lime cookies underneath.
28 cookies

Ingredients

  • 2 1/3 cups (292 g) all-purpose flour (stir, spoon & level)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113 g) unsalted butter (1 stick), room temperature
  • 1 1/4 cups (250 g) granulated sugar
  • 1 Tablespoon lime zest (about 2 limes)
  • 2 large eggs, room temperature
  • 1/4 cup (59 ml) lime juice (about 2 limes)
  • Neon green food coloring, optional

Coating

  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (60 g) powdered sugar

Instructions

  • Preheat oven to 350°F. Line half sheet pans with silicone mats or parchment.
  • Whisk flour, baking powder, and salt together; set aside.
  • Cream butter, granulated sugar, and lime zest until combined.
  • Add eggs one at a time, mixing after each. Stir in lime juice and optional food coloring.
  • Add the flour mixture and mix on low until combined; dough will be thick and slightly sticky. If too soft, chill about 30 minutes.
  • Place granulated sugar and powdered sugar in separate bowls. Scoop dough with a #40 (about 1.5 Tbsp) scoop. Roll dough in granulated sugar, shake off excess, then coat with powdered sugar. Place cookies several inches apart on prepared sheets.
  • Bake at 350°F for 9–11 minutes, until cookies are puffy and edges are set. Centers of cracks should be almost matte. Cool on the pan a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Thicker cookies: Chill dough before baking to reduce spread and achieve taller cookies.
  • More lime flavor: Rubbing zest into the sugar releases oils for extra citrus aroma. For an even stronger lime note, add 1/8 tsp food-grade lime essential oil or 1 tsp lime extract.
  • To store: Airtight container at room temperature up to 4 days, or refrigerated up to 1 week.
  • Freeze dough: Scoop uncoated dough onto a lined sheet and freeze 1–2 hours until firm. Transfer to a freezer-safe bag for up to 3 months. Thaw 20–30 minutes, then roll in sugars and bake.
  • Freeze baked cookies: Freeze cooled cookies in single layers separated by parchment for up to 3 months. Thaw in the refrigerator or at room temperature. Powdered sugar may absorb slightly but won’t affect taste.
