Light Chicken Salad
Ingredients
- 13 oz can cooked chicken, shredded (about 1 ¾ to 2 cups; rotisserie chicken works great too)
- 1 cup green grapes, halved
- ½ cup cashew halves/pieces
- ½ cup dried cranberries
- ½ cup plain nonfat Greek yogurt
- 1 tsp Nature’s Seasons Seasoning Blend (a mix of salt, black pepper, sugar, onion powder, garlic powder, parsley, celery seed and other spices)
Instructions
- Shred the canned chicken into a large bowl using a fork.
- Add the halved grapes, cashews, dried cranberries, Greek yogurt, and seasoning blend. Mix until everything is evenly combined.
- Serve on whole wheat bread, a sandwich thin, or in a lettuce cup/wrap.
