Everything Slider Buns Recipe: How to Make Flavorful Mini Buns

Spring has arrived in Utah and the weather is finally warm enough to fire up the grill. We’ve already grilled twice this season — we couldn’t resist uncovering the grill as soon as the snow melted. Some days already feel like summer, and I love this time of year: bright springs and long, lazy summer evenings make me so happy.

These Everything Slider Buns are perfect for burgers or any mini sandwiches you might want for a barbecue, potluck, or casual snack. They feature my favorite “Everything” seasoning—like the one I use on bagels—which adds great flavor on top of soft, tender rolls. I should have pressed my buns a bit flatter so they looked more like classic slider buns, but the dough turned out incredibly soft and delicious. This may become my go-to roll dough. We absolutely loved them, and I’ll be sharing another recipe tomorrow that uses these cute little buns—stay tuned!

Everything Slider Buns

Ingredients

For the burger buns:

  • 1 cup (237 ml) lukewarm water
  • 2 ¼ tsp yeast, (1 packet)
  • 3 Tbsp granulated sugar
  • 2 Tbsp oil, (vegetable, canola, or olive; plus more for greasing bowl)
  • 2 large eggs, divided
  • 3 ¼ cups (390 g) all-purpose flour, (stir, spoon & level)
  • 1 tsp salt

For the Everything topping:

  • 2 tsp dried minced garlic
  • 1 tsp dried minced onion
  • 1 tsp kosher salt
  • 2 tsp poppy seeds
  • 2 tsp sesame seeds

Instructions

 

  • Pour the lukewarm water into the bowl of a stand mixer, then stir in the yeast and sugar. Let the mixture sit for about 5 minutes until it becomes frothy.
  • Add the oil and one of the eggs to the bowl. Add the flour and salt, and mix on medium-low with the dough hook until the dough begins to come together, about 2 minutes. The dough should pull away from the sides of the bowl; if it doesn’t, add flour by the tablespoon as needed.
  • Increase the mixer to medium and knead for 5 minutes. Transfer the dough to a large bowl lightly greased with oil, cover with a damp towel, and let rise in a warm spot until doubled in size, about 1 to 1½ hours.
  • Line a baking sheet with parchment paper. Turn the dough out onto a lightly floured surface, divide it in half, then divide each half into 8 pieces (about 1.8 oz each if you use a kitchen scale). Roll each portion into a round and place on the prepared baking sheet, spacing them about ½ to 1 inch apart.
  • Flatten each round slightly with your palm. Cover with a damp towel and allow the buns to rise for 20 minutes while you preheat the oven to 350°F (175°C).
  • Combine all Everything topping ingredients in a small bowl. Whisk the remaining egg with 1 tablespoon of water to make an egg wash. Brush the risen buns with the egg wash and generously sprinkle the Everything mixture over the tops.
  • Bake for 18–22 minutes or until the buns are golden brown. Let cool at least 10 minutes before slicing. Store leftovers in a zip-top bag at room temperature.
