It’s been a while since I shared a recipe here, and I’m grateful to the friends who guest-posted while I migrated the blog from Blogger to WordPress. They kept things going and brought you some delicious, inspiring recipes.

Today I’m sharing my version of Cowboy Caviar. If you’ve never had it, you’re missing out. I first discovered it at a grocery-store deli years ago—I wasn’t a big bean fan then, but I couldn’t stop eating that bowl of Cowboy Caviar.

This dip is ideal for your upcoming Super Bowl party and always gets devoured quickly. It’s quick to prepare, and compared to cheesy or fried appetizers, it’s a lighter option—packed with beans, vegetables, and tossed in a light Italian dressing. I hope you enjoy it!

Ingredients

  • 15 oz can black beans, rinsed and drained
  • 15 oz can black-eyed peas, rinsed and drained
  • 15 oz can corn, drained
  • 1 handful cilantro, chopped
  • 1 bunch green onions, chopped
  • 2 or 3 medium avocados, diced
  • 2 or 3 roma tomatoes, diced
  • Juice of 1 lime
  • 1 cup light Italian dressing

Instructions

  • In a large bowl, combine the black beans, black-eyed peas, corn, cilantro, green onions, diced avocados, and diced roma tomatoes. Squeeze the lime over the avocados to help prevent browning.
  • Pour the light Italian dressing over the mixture and toss gently to coat. Chill before serving and keep refrigerated. Toss occasionally while chilled to redistribute the dressing. Serve with tortilla chips.
