I’m a big fan of Oreo desserts and often use store-bought Oreos as a base. For mint lovers, these bars dial up the flavor with mint Oreos in the crust and chunks mixed into the cheesecake filling.

These bars start with a crunchy mint Oreo crust and finish with a rich mint cheesecake. I added extra chopped Oreos to the filling for texture and bursts of chocolate-mint in every bite. They’re especially festive with a hint of green food coloring for St. Patrick’s Day, but the color is optional—flavor is what matters most.

The bars bake to a slightly wobbly center with set edges, then chill until firm. Once cooled, they slice into tidy squares that are creamy, chocolatey, and full of mint cookie pieces—always a crowd pleaser.

Mint Oreo Cheesecake Bars
Ingredients
- 40 Mint Oreo Cookies, divided (one Family Size package)
- 4 Tbsp (57 g) butter, melted
- 24 oz (678 g) block cream cheese (three 8 oz blocks), room temperature
- 3/4 cup (150 g) granulated sugar
- 3/4 cup (180 g) sour cream, room temperature
- 1/2 tsp vanilla extract
- 1 tsp mint extract
- 1/2 tsp salt
- 3 large eggs, room temperature
- green food coloring, optional
Instructions
- Preheat oven to 325°F. Line a 13×9-inch pan with parchment paper, leaving a 2-inch overhang on both sides.
- Place 26 mint Oreos in a food processor and pulse until finely ground. Add melted butter and mix until crumbs are evenly coated. Press mixture firmly into the prepared pan. Bake 10 minutes, then transfer to a cooling rack.
- Roughly chop the remaining mint Oreos and set aside.
- In a large bowl, beat the cream cheese with an electric mixer on medium speed until smooth. Add the sugar and mix until combined, scraping the bowl as needed.
- Beat in the sour cream, vanilla, mint extract, and salt. Scrape the bowl again.
- Add eggs one at a time, beating well after each addition.
- If desired, add a drop of green food coloring and mix until evenly colored.
- Fold in half of the chopped mint Oreos. Pour the cream cheese mixture over the crust, spreading it evenly. Sprinkle the remaining chopped Oreos on top.
- Bake for about 40 minutes, until the filling is slightly wobbly in the center and set at the edges. Cool on a rack for 1 hour, then chill in the refrigerator for at least 3 hours.
- Lift the bars from the pan using the parchment overhang, cut into squares, and serve.
