Happy New Year, everyone! The holidays often bring rich, indulgent foods, and January is a common time to reset eating habits. This month I’ve invited several guest bloggers to share their favorite healthy meals, snacks, drinks and even desserts as part of “Healthy Food, Healthy You!” month. Expect a variety of flavorful, nourishing recipes to kick off your year.

I’m grateful to friends contributing recipes while I take time this month to migrate my blog from Blogger to WordPress. Thai Chicken Lettuce Wraps

Yields2 -3 servings

Ingredients

  • 1 Tbsp canola oil
  • 2 chicken breasts, cut into small ½-inch cubes
  • 4 cloves garlic, minced (or 2 tsp prepared garlic)
  • ½ sweet onion, chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup shredded or matchstick carrots, about 5–6 baby carrots cut into matchsticks
  • ½ cup finely shredded cabbage or cole slaw mix
  • 3-4 green onions, thinly sliced
  • ¼ cup cilantro, chopped
  • ⅓ cup sweet chili sauce, found in the Asian section
  • 1 Tbsp smooth peanut butter
  • Lettuce leaves, butter or bib lettuce works best; romaine or green leaf also OK

Instructions

  • Heat a large skillet over medium heat and add the canola oil. Add the cubed chicken, minced garlic, chopped onion, salt and pepper. Cook, stirring occasionally, until the chicken is no longer pink and the onions are soft, about 6–8 minutes.
  • Stir in the carrots, shredded cabbage and green onions. Continue cooking 4–5 minutes, until the vegetables are tender.
  • Add the chopped cilantro, sweet chili sauce and smooth peanut butter. Mix thoroughly until everything is heated through and well combined. Serve the mixture spooned into washed lettuce leaves.
