In fact, I made a batch of these candy corn Rice Krispie treats in August and couldn’t resist bringing them over. They didn’t mind one bit that Halloween was still more than two months away! Ingredients

  • 4 Tbsp (57 g) butter
  • 1 tsp vanilla extract
  • 16 oz (453 g) bag mini marshmallows
  • Orange food coloring, (or about 6 drops red and 12 drops yellow liquid food coloring for a custom blend)
  • 6 cups (164 g) Rice Krispies Cereal
  • 2 cups (340 g) semi-sweet chocolate chips*
  • 1 cup (170 g) white chocolate chips*
  • 1 ½ tsp coconut oil or shortening, divided (optional, helps thin the chocolate for smoother dipping)

Instructions

  • Prepare Baking Dish: Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking. Set this prepared dish aside.
  • Melt Butter and Vanilla: In a large stock pot, melt the butter over medium heat. Once melted, stir in the vanilla extract until well combined. The vanilla adds a delightful aromatic note that truly enhances the flavor of the treats.
  • Add Marshmallows and Color: Add the mini marshmallows to the melted butter mixture. Also, add your orange food coloring at this stage. Stir continuously until the marshmallows are completely melted and smooth. For a vibrant candy corn orange, you may need to adjust the amount of food coloring; add more in small increments until you achieve your desired hue. Remove the pot from heat immediately once fully melted to avoid overcooking the marshmallows, which can result in hard treats.
  • Incorporate Cereal: Pour the Rice Krispies Cereal into the marshmallow mixture. Using a spatula, gently fold the cereal until it is evenly coated with the orange marshmallow goodness. Be careful not to press down too hard, as this can crush the cereal. Transfer the mixture to your prepared baking dish and gently flatten it evenly using the back of a greased spatula or your hands (lightly buttered to prevent sticking). Allow the treats to cool completely at room temperature, which will make them easier to cut.
  • Cut into Candy Corn Shapes: Once cooled, carefully pull the entire slab of Rice Krispie treats out of the pan. Place it on a cutting board. To create the candy corn triangles, first cut the slab in half lengthwise. Then, cut each half into a zig-zag pattern to form the distinctive triangular shapes. Refer to the provided image for a visual guide to ensure perfect candy corn replicas.
  • Melt Dark Chocolate: Place half of the semi-sweet chocolate chips (about 1 cup) into a microwave-safe bowl. If using, add ½ tsp of coconut oil or shortening; this step is optional but highly recommended as it helps to thin the chocolate, making it smoother and easier for dipping, resulting in a cleaner finish. Microwave in short bursts of 15 seconds, stirring thoroughly in between each burst, until the chocolate is completely melted and smooth. Be cautious not to overheat the chocolate, as it can seize.
  • Dip in Dark Chocolate: Take each Rice Krispie triangle and dip the wider (fat) end about one-third of the way up into the melted dark chocolate. Allow any excess chocolate to drip off, then gently scrape off any remaining excess against the edge of the bowl. Place the dipped triangles on a tray lined with wax paper, parchment paper, or a silicone baking mat. You will likely need two trays to accommodate all the treats. If the chocolate in the bowl starts to thicken, gently reheat it in 15-second bursts with an additional ½ tsp of coconut oil or shortening if needed, stirring until smooth. Continue dipping all triangles until complete. For faster setting, place the trays in the freezer for approximately 10 minutes, or until the chocolate is firm.
  • Melt and Dip in White Chocolate: In a separate microwave-safe bowl, melt 1 cup of white chocolate chips (the other half of the bag) with ½ tsp of coconut oil or shortening (optional, for thinning). Follow the same melting process as with the dark chocolate: microwave in 15-second intervals, stirring well after each, until smooth and fully melted. Now, take the opposite, pointed end (the top third) of each chocolate-dipped triangle and dip it into the melted white chocolate. Scrape off any excess and return the triangles to the lined trays. Repeat this process for all remaining triangles.
  • Final Chill and Serve: Freeze the “candy corn” triangles one last time for about 10-15 minutes, or until both layers of chocolate are completely set and firm. Once set, they are ready to be enjoyed! Store any leftovers in an airtight container at room temperature for up to 3 days to maintain their freshness and chewy texture. For longer storage, they can be kept in the refrigerator, but let them come to room temperature before serving for the best experience.
