Ingredients

Beet Crust:

  • 1 cup roasted and pureed beets I roasted 2 beets at 400°F (200°C) for 45 minutes
  • ¾ cup almond meal
  • ⅓ cup whole wheat flour (or gluten-free flour blend for a GF option)
  • ½ tsp salt
  • 2 tsps baking powder
  • 1 tbsp melted coconut oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cane sugar

Toppings:

  • 1 ½ cups Chocolate chips (divided)
  • 1 ½ cups Peanut butter chips (divided)
  • Coconut cream or whipped cream or ice cream or frozen yogurt (for spreading)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix all the beet crust ingredients together until well combined. Press the mixture evenly onto a greased pizza pan or baking sheet. Bake for 25-28 minutes, or until the crust is set and slightly golden at the edges. Let it cool completely to room temperature before adding toppings. This step is crucial for the toppings to set properly.
  • Once the beet crust has cooled, spread your choice of coconut cream, whipped cream, ice cream, or frozen yogurt over the base. Sprinkle ½ cup of chocolate chips and ½ cup of peanut butter chips evenly over the cream layer.
  • Melt the remaining 1 cup of chocolate chips in a microwave-safe bowl or double boiler. Drizzle the melted chocolate artistically over the pizza. Repeat this process with the remaining 1 cup of peanut butter chips, melting them and drizzling over the chocolate.
  • For best results, chill the dessert pizza for at least 30 minutes before slicing and serving. This allows the toppings to firm up slightly, making for cleaner cuts and a more enjoyable texture.
