Ingredients

Crust/Topping:

  • 3 cups (360 g) all-purpose flour (stir, spoon, & level)
  • 1 cup (200 g) granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 cup (226 g) unsalted butter (2 sticks), cold, cut into Tablespoons
  • 1 large egg

Peach Layer:

  • 5 (672-756 g) large peaches, pitted, peeled, and diced (about 4 to 4 1/2 cups)
  • ½ cup (100 g) granulated sugar
  • 1 Tbsp cornstarch
  • 1 tsp lemon juice
  • ½ tsp ground cinnamon

Glaze:

  • 1 cup (120 g) powdered sugar
  • ¼ tsp almond or vanilla extract
  • 1-2 Tbsp milk

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Lightly grease a 9×13-inch baking dish.
  2. FOR THE CRUST/TOPPING: In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Use a fork or pastry blender to cut in the cold butter until the mixture resembles coarse sand. Add the egg and mix with your hands until the dough starts to hold together but is still crumbly. Press 2/3 of the mixture evenly onto the bottom of the prepared baking dish. Reserve the remaining 1/3 for the crumb topping.
  3. FOR THE PEACHES: In another medium bowl, whisk together the sugar, cornstarch, lemon juice, and cinnamon. Add the diced peaches and toss gently to combine and coat them thoroughly. Evenly distribute the peach mixture over the pressed bottom crust in the baking dish. Crumble the reserved 1/3 crust mixture over the peach layer. For larger, more satisfying chunks of topping, gently squeeze and clump sections of the reserved mixture in your hands before crumbling them over the peaches.
  4. Bake for 45 to 50 minutes, or until the crumb topping is lightly golden brown and the peach filling is bubbling enticingly in the center. Allow the bars to cool completely on a wire rack before proceeding to the next step.
  5. FOR THE GLAZE: In a small bowl, whisk together the powdered sugar, almond (or vanilla) extract, and milk. Start with 1 tablespoon of milk and add more, a little at a time, until you achieve your desired drizzling consistency. Drizzle the prepared glaze over the completely cooled bars. Once the glaze has set, cut the bars into squares and serve. Store any leftover bars covered at room temperature.
