Ingredients (US Customary)

  • 2 cups all-purpose flour
  • 2 cups pecans finely chopped
  • ¾ teaspoon kosher salt
  • 1 cup unsalted butter slightly softened
  • ⅓ cup granulated sugar
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups powdered sugar for coating

Instructions

Make the Dough:

  1. Preheat the oven to 325°F (160°C). Line two baking sheets with parchment paper.
  2. Chop pecans until no pieces larger than a pea remain, or pulse in a food processor until finely ground (the texture of coarse cornmeal).
  3. In a medium bowl, combine flour, chopped pecans, and salt; whisk to combine thoroughly.
  4. Cream the butter and sugar together until light and fluffy, scraping the sides of the bowl as needed. Beat in the vanilla until well-combined. Add all the flour mixture, and mix on low speed until the dough just begins to come together but still looks shaggy. Scrape down the sides of the bowl and continue mixing on low until the dough is cohesive, about 10-15 more seconds. Do not overmix.

Portion, Bake & Coat:

  1. Roll heaping tablespoons of dough into uniform balls and place 1 inch apart on your prepared baking sheet. Using a tablespoon cookie scoop before rolling helps ensure consistent sizing. Optional: For the tallest cookies, chill dough balls in the refrigerator for 15-20 minutes before baking.
  2. Bake for 17-19 minutes, or until the bottoms are lightly golden and the tops are beginning to show small, delicate cracks. Be careful not to over-bake them, as this will lead to a dry and overly crumbly texture.
  3. Cool the cookies for 2 minutes on the baking sheet before carefully transferring them to wire racks to cool until just slightly warm to the touch.
  4. Place 1½ cups powdered sugar in a large plastic bag or a shallow bowl. Working with two to three cookies at a time, gently toss them in the powdered sugar to coat thoroughly. The slight warmth of the cookies helps the sugar adhere. Place the coated cookies back on the wire rack.
  5. Allow the cookies to sit for at least an hour, or ideally, up to overnight, to cool completely and for flavors to fully meld. Once fully cooled, repeat the tossing in powdered sugar (or even edible glitter for extra festivity!). Enjoy your perfect snowball cookies!
