The Crisco® Bake It Better Challenge: Shortening vs. Butter

For this recipe, I was thrilled to participate in the Crisco®Bake It BetterChallenge. The goal was simple yet intriguing: use Crisco All-Vegetable Shortening in a classic sugar cookie recipe and compare the results against the same recipe made with butter. As a passionate baker, I’m always keen to explore how different ingredients impact the final product, and this challenge provided a fantastic opportunity to really understand the nuances of shortening versus butter in sugar cookie baking.

The differences were quite striking, and I’m excited to share my findings. Often, home bakers default to butter for most recipes, assuming it’s always the superior choice. However, shortening offers unique properties that can truly enhance certain baked goods, especially cookies. Let’s delve into what makes Crisco All-Vegetable Shortening a game-changer for these Brown Sugar Pecan Sugar Cookies.

Why Crisco Makes the Best Sugar Cookies

The science behind baking fats reveals why shortening and butter yield different results. Butter, while flavorful, contains about 80% fat and 20% water. This water content can contribute to gluten development, making cookies spread more and sometimes resulting in a chewier, denser texture. Shortening, on the other hand, is 100% fat and has a higher melting point. This lack of water and higher melting point means it creates less steam during baking, which helps the cookies hold their shape better and reduces spread, allowing for thicker, more tender cookies.

Crisco-baked sugar cookies demonstrating superior thickness and shape retention compared to butter-based cookies.

During the challenge, the Crisco sugar cookies were visibly superior. They were noticeably thicker and impeccably held the intricate designs of the fun cookie stamps I used. The butter-based cookies, in stark contrast, didn’t rise nearly as much, and their stamped patterns faded significantly during baking, resulting in a less defined and flatter appearance. Texture-wise, the Crisco cookies boasted a light, airy, and wonderfully tender crumb, a delightful departure from the denser texture of the butter cookies. This delicate balance of crisp edges and a soft interior is precisely what you look for in a perfect sugar cookie.

Beyond the texture and aesthetics, Crisco offers practical advantages in the kitchen. Its ability to be stored at room temperature means it’s always ready to use, eliminating the waiting time often required for butter to soften. This convenience can be a real time-saver, especially during busy holiday baking marathons. I’m particularly fond of the Crisco All-Vegetable Shortening Baking Sticks; they are pre-measured in one-cup increments, which adds an extra layer of ease and precision to my baking process, making cleanup and measurement much simpler.

Side-by-side comparison of sugar cookies baked with Crisco versus butter, highlighting the visible difference.

Side-by-side, the evidence was clear: Crisco cookies truly are noticeably better for maintaining shape and achieving a desirable texture. Shortening proves to be an excellent substitute in many baked goods, bringing consistency and quality that can sometimes be elusive with butter. Its consistent performance ensures that your cookies will turn out perfectly every time, holding their shape and delivering that delightful melt-in-your-mouth experience.

Crafting the Perfect Brown Sugar Frosting and Toasted Pecans

After perfecting the sugar cookie base with Crisco, the next step was to elevate them with complementary flavors and textures. I chose to top these exceptional sugar cookies with a rich, velvety brown sugar frosting. This frosting is not just sweet; it carries a deeper, more nuanced caramel-like flavor from the brown sugar, which pairs beautifully with the simple elegance of the sugar cookie. The addition of a hint of cinnamon in the frosting further enhances this festive appeal, bringing out the warmth and spice synonymous with holiday treats.

To add an irresistible textural contrast and an extra layer of flavor, I adorned these cookies with crunchy toasted pecans. Toasting pecans is a crucial step that intensifies their nutty flavor and gives them a wonderful crispness, transforming them from good to truly exceptional. The combination of the tender cookie, the creamy, spiced frosting, and the crunchy, aromatic pecans creates a symphony of flavors and textures that is simply divine. These Brown Sugar Pecan Sugar Cookies are an absolute pleasure to bake and even more delightful to share with family and friends. Every person who tried them raved about their unique flavor and perfect texture. I am confident that you will find as much joy in them as we did!

Tips for Baking Impeccable Sugar Cookies

  • Measure Flour Correctly: Always stir your flour, then spoon it into your measuring cup, and level it off with a straight edge. This prevents over-measuring, which can lead to dry cookies.
  • Don’t Overmix: Once you add the dry ingredients, mix just until combined. Overmixing can develop the gluten too much, resulting in tough cookies.
  • Chill Your Dough: While Crisco helps with shape retention, a brief chill (30 minutes to an hour) can further firm up the dough, making it easier to roll and cut, and ensuring even less spread.
  • Even Thickness: Roll your dough to a consistent thickness (1/4-inch for crisp, 3/8-inch for softer) for uniform baking. Using rolling pin guides can be helpful.
  • Watch the Edges: Sugar cookies bake quickly. Keep an eye on them and remove them from the oven as soon as the edges turn a light golden brown. Overbaking will make them dry and crumbly.
  • Cool Completely: Allow cookies to cool completely on a wire rack before frosting. Warm cookies will melt the frosting.

Ingredients

Crisco® Classic Sugar Cookie Cut-Outs:

  • 3 cups (360 g) all-purpose flour, (stir, spoon, & level)
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup (226 g) Crisco® All-Vegetable Shortening
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 2 Tbsp milk
  • 2 tsp vanilla extract

Brown Sugar Frosting:

  • 1 cup (226 g) Crisco® Butter Flavor All-Vegetable Shortening, (one baking stick)
  • ½ cup (100 g) brown sugar, gently packed
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • 3 cups (360 g) powdered sugar
  • 2-4 Tbsp milk
  • 1 cup (112 g) pecans

Instructions

  1. FOR THE COOKIES: Preheat oven to 350 degrees Fahrenheit (175°C). In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  2. Using an electric hand mixer, cream the shortening and granulated sugar in a large bowl on high speed until the mixture is light and fluffy.
  3. Add the egg, milk, and vanilla extract to the creamed mixture. Mix until just combined. Gradually blend in the dry flour mixture until a soft dough forms.
  4. Divide the dough in half. On a lightly floured surface, roll out each half to a 1/4-inch thickness for crisp cookies, or 3/8-inch thickness for softer cookies. Cut out shapes using 2 to 3-inch cookie cutters. Place the cut cookies 2 inches apart on a baking sheet lined with parchment paper or a silicone mat.
  5. Bake for 8-9 minutes, or until the edges are just beginning to turn a light golden brown. Remove from the oven and let rest on the cookie sheet for 1-2 minutes before carefully transferring them to a wire cooling rack to cool completely.
  6. FOR THE FROSTING: Using an electric hand mixer, cream the Crisco Butter Flavor All-Vegetable Shortening, brown sugar, cinnamon, and vanilla in a large bowl until smooth. Gradually add the powdered sugar, mixing until well combined. Add milk 1 tablespoon at a time until the desired creamy consistency is reached.
  7. TOAST PECANS: In a dry saute pan over medium-high heat, toast the pecans for about 2-5 minutes, stirring continually, until they are fragrant. Be careful not to burn them. Allow them to cool, then finely chop half of the toasted pecans.
  8. Pipe or spread the brown sugar frosting generously on top of the completely cooled cookies. Place one whole toasted pecan in the center of each frosted cookie, and then sprinkle a few of the chopped nuts around it. Store the finished Brown Sugar Pecan Sugar Cookies in an airtight container at room temperature.

Notes

For best results, ensure all ingredients for the cookies and frosting are at room temperature unless otherwise specified. This helps in creating a smooth, well-emulsified batter and frosting. Adjust milk quantity in frosting to achieve your preferred spreading or piping consistency.
