Quinoa Vegetarian Meatballs {GF Option}

Ingredients 

 

  • 2 cups cooked quinoa [instruction below]
  • ¼ cup parmesan cheese grated
  • ¼ cup asiago cheese grated
  • ¼ cup fresh basil minced
  • 2 tablespoons fresh cilantro minced
  • 1 teaspoon fresh oregano minced
  • ½ teaspoon fresh thyme
  • 3 small garlic cloves minced fine
  • 1 large egg
  • 2 large pinches kosher salt
  • ½ teaspoon black pepper
  • ¼ cup Italian seasoned bread crumbs
  • 1 pinch crushed red pepper flakes

Instructions 

To make the Quinoa:

  • In a fine sieve strainer, pour 1 cup quinoa, pick over for stones, and rinse with cold water. In a medium saucepan mix the quinoa with 2 cups cold water (or broth). Add about 1 tablespoon olive oil and a large pinch of kosher salt, and stir to mix. Bring to a boil over medium high heat, stir, reduce heat to a simmer and cover. Cook covered for approximately 30-40 minutes or until all the liquid has been absorbed and the quinoa is soft.

To make the meatballs:

  • Preheat your oven to 350°F (175°C). Heat a large cast iron skillet or heavy-bottomed pan over medium heat until searing hot.
  • In a large mixing bowl, combine all the prepared ingredients thoroughly. Once mixed, pour a small amount of olive oil into your preheated skillet. Begin forming the meatball mixture into balls slightly smaller than a golf ball. Carefully place the first meatball in the center of the skillet. Continue forming and adding the remaining meatballs, arranging them in a spiral pattern radiating outwards from the center. Work as quickly as possible to ensure even cooking and searing. While some prefer to pre-form all meatballs before cooking, I find it more efficient to form them directly into the hot pan, saving valuable time in the kitchen.
  • Once all meatballs are in the skillet and the bottom sides have browned beautifully, it’s time to gently turn each one to sear the other sides. Due to potential uneven heat distribution in certain burners or skillets, I often rotate meatballs from the center to the outer edges of the pan to guarantee a consistent, golden sear on every single one. Continue turning until all sides are nicely browned.
  • After searing, you have two options: either transfer the entire skillet directly into your preheated oven, or carefully move the browned meatballs to a rimmed baking sheet. Bake for 25 minutes to ensure they are cooked through and tender in the center.

Yield: Approximately 18 delicious meatballs.

To make these meatballs entirely gluten-free, simply ensure you use certified gluten-free breadcrumbs. While you could experiment with substituting gluten-free flour for breadcrumbs, I haven’t personally tested this variation and cannot guarantee the results or texture.
