Ingredients

  • 1 Tbsp oil, (olive/canola/vegetable)
  • 2 chicken breasts, cubed
  • 1 cup onion, diced (1 small or ½ large onion)
  • 1 cup carrots, diced (3-4 carrots)
  • ½ cup celery, diced (1-2 ribs of celery)
  • 4 Tbsp butter
  • ⅓ cup all-purpose flour
  • 1 ½ cups chicken broth, (low-sodium)
  • 1 cup milk
  • 1 tsp dried thyme
  • salt and pepper to taste
  • ¾ cup frozen peas

Pie Crust:

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 cup shortening, (butter flavor preferred)
  • 1 large egg
  • 1 Tbsp white distilled vinegar
  • 5 + Tbsp ice-cold water

Instructions

Prepare Pie Crust:

  1. Combine flour and salt in a large bowl. Stir well. Cut in shortening with a pastry blender, two forks, or pulse briefly in a food processor until the mixture resembles coarse crumbs with some pea-sized chunks of shortening remaining.
  2. In a separate small bowl, whisk together the egg, vinegar, and 5 tablespoons of ice-cold water. Gradually add this liquid mixture to the flour mixture.
