Ingredients

  • ⅓ cup (64 g) shortening
  • ⅓ cup (75 g) butter
  • ¾ cup (150 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ to ½ tsp pure peppermint extract, (depending on desired mint-iness)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ½ cups (180 g) plus 2 Tbsp all-purpose flour, (stir, spoon & level)
  • 1 cup (170 g) Andes Peppermint Crunch Baking Chips, plus more for decoration
  • 1 cup (170 g) good quality white chocolate chips
  • 1 Tbsp shortening (for dipping chocolate)
  • Red Sugar Crystals, for decoration

Instructions

  1. In a stand mixer, cream together the shortening, butter, and granulated sugar until the mixture is light and creamy. This step is crucial for achieving a tender cookie texture, so take your time to ensure it’s well-combined and fluffy. Next, beat in the large egg, vanilla extract, and peppermint extract until everything is fully incorporated. Adjust the peppermint extract quantity based on how intense you want the mint flavor to be.
  2. In a separate medium-sized bowl, whisk together the baking powder, salt, and all-purpose flour. Gradually add these dry ingredients to the wet ingredients in the stand mixer, mixing on low speed until just combined. Be careful not to overmix, as this can lead to tough cookies. Once the dough comes together, gently fold in the Andes Peppermint Crunch Baking Chips. Using a #30 scoop (approximately 2 tablespoons), portion out cookie dough balls. Roll each ball smoothly in the palm of your hand, then place them evenly spaced on a baking sheet lined with parchment paper or a silicone baking mat. Lightly press the top of each cookie dough ball down with your palm to about ½-inch thickness to ensure even baking.
  3. Preheat your oven to 350˚F (175˚C). Bake the cookies for 10-12 minutes, or until the edges are lightly golden and the centers are set. The exact baking time may vary depending on your oven, so keep an eye on them. Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. It is essential that the cookies are entirely cool before dipping them in chocolate to prevent the chocolate from melting off.
  4. Prepare your white chocolate dip: In a microwave-safe bowl, combine 1 cup of good quality white chocolate chips with 1 tablespoon of shortening. Microwave in short bursts (15-30 seconds), stirring well after each burst, until the white chocolate is fully melted and smooth. The shortening helps achieve a beautifully smooth and dippable consistency. Dip the top half of each completely cooled cookie into the melted white chocolate. Gently scrape any excess chocolate drips against the edge of the bowl. Place the dipped cookie back onto the lined baking sheet. Immediately, while the chocolate is still wet, garnish with additional Andes Peppermint Crunch Baking Chips and a few dashes of red sugar crystals for that perfect holiday sparkle. Repeat this process for all the cookies. Allow the chocolate to set completely at room temperature or in the refrigerator for a few minutes before serving, eating, or packaging them as delightful homemade gifts.

Notes

For the best results, use high-quality ingredients, especially for the white chocolate, as it makes a significant difference in flavor and texture. If you prefer a stronger mint flavor, you can increase the peppermint extract to ½ teaspoon. Ensure your butter and shortening are at room temperature for optimal creaming. When measuring flour, spoon it into the measuring cup and level it off with a straight edge to avoid adding too much, which can make cookies dry.

They don’t just taste like Christmas; they look like it too!

Secondly, these cookies strike the perfect balance between comfort and elegance. They’re simple enough for even novice bakers to tackle successfully, yet sophisticated enough to impress at any holiday gathering. The tender, melt-in-your-mouth sugar cookie base provides a comforting canvas for the refreshing kick of peppermint crunch and the luxurious coating of white chocolate. This combination creates a texture profile that is both chewy and crisp, satisfying every craving.

Finally, these cookies are incredibly versatile. While perfect for cookie exchanges, they also make thoughtful homemade gifts. Package them in decorative boxes or bags, and you have a personalized present that truly comes from the heart. They’re also an excellent project for baking with family, creating cherished holiday memories in the kitchen. Their robust flavor holds up well, making them ideal for preparing ahead of time during the busy holiday season.

Tips for Perfect Peppermint Sugar Cookies Every Time

Achieving bakery-quality cookies at home is easier than you think with a few key tips:

  1. Room Temperature Ingredients: Ensure your butter, shortening, and egg are at room temperature. This allows them to cream together smoothly, creating an emulsified mixture that traps air, leading to light and fluffy cookies.
  2. Don’t Overmix: Once you add the flour, mix until just combined. Overmixing develops the gluten in the flour, resulting in tough, dry cookies instead of soft, tender ones.
  3. Measure Flour Correctly: For consistent results, spoon your flour into the measuring cup and level it off with a straight edge. Scooping directly from the bag can pack the flour, adding too much to your recipe.
  4. Perfect Peppermint Balance: Start with ¼ teaspoon of peppermint extract and taste a tiny bit of the raw dough (before adding egg, or if comfortable with raw dough). Add up to ½ teaspoon if you prefer a stronger mint flavor. Remember, the flavor can intensify slightly after baking.
  5. Cool Completely Before Dipping: This cannot be stressed enough! If your cookies are even slightly warm, the white chocolate will melt, slide off, or create a messy finish. Patience is key here.
  6. Melting White Chocolate: Use good quality white chocolate chips or baking bars for dipping. Melt it gently in the microwave in 15-30 second intervals, stirring thoroughly after each. Alternatively, use a double boiler for a more controlled melting process. Adding a tablespoon of shortening or coconut oil helps create a smooth, glossy, and dippable consistency that sets nicely.
  7. Garnish Immediately: Once you dip a cookie, sprinkle the extra peppermint crunch chips and red sugar crystals right away. The chocolate sets quickly, and you want the garnishes to adhere properly.

Variations to Inspire Your Creativity

While the classic White Chocolate Dipped Peppermint Sugar Cookie is perfect as is, feel free to experiment with these delicious variations:

  • Dark Chocolate Delight: Instead of white chocolate, dip the cookies in melted dark chocolate for a rich, sophisticated flavor contrast.
  • Crushed Candy Cane Topping: For an even more intense peppermint kick and festive look, crush some candy canes and sprinkle them over the wet white chocolate.
  • Colorful Sprinkles: If you’re out of peppermint crunch or red sugar crystals, use a mix of festive holiday sprinkles for a bright and cheerful look.
  • Orange Zest Infusion: Add a teaspoon of orange zest to the cookie dough for a subtle citrus note that pairs surprisingly well with peppermint and chocolate.
  • Almond Extract Swap: Replace vanilla extract with almond extract for a different flavor profile in the sugar cookie base.
  • Chocolate Chips in Dough: For a double chocolate peppermint treat, fold in some mini chocolate chips along with the peppermint crunch chips into the cookie dough.

Storage and Gifting Ideas

Proper storage is essential to keep your peppermint sugar cookies fresh and delicious. Once the white chocolate has fully set, store the cookies in an airtight container at room temperature for up to 5-7 days. To prevent them from sticking together or the toppings from smudging, you can place parchment paper between layers of cookies.

These cookies make fantastic gifts! Arrange them beautifully in a holiday tin, a clear cellophane bag tied with festive ribbon, or a small gift box. Add a handwritten tag with the recipe name, and you’ve got a thoughtful, homemade present that anyone would adore. They are perfect for neighbors, teachers, colleagues, or as a host/hostess gift.

Serving Suggestions for a Festive Spread

These White Chocolate Dipped Peppermint Sugar Cookies are versatile and can be enjoyed in many ways:
