Ultimate Chili Verde Beef Chimichangas: A Timeless Family Favorite

Growing up, certain meals held a special place in our family traditions. This Chili Verde Beef Chimichanga recipe was undoubtedly one of them. While my mom didn’t make it very often due to its time-intensive nature, the rare occasions she did were met with immense excitement. My siblings and I would eagerly devour our fair share, savoring every tender, flavorful bite. My sister, in particular, would request this culinary masterpiece for her birthday every year, and I distinctly remember it gracing the table for her high school graduation celebration. With three of us kids having birthdays in July, and mine being the last of the month, my sister’s early-month request meant I could enjoy this incredible meal sooner and still look forward to another one of my favorites on my own special day. It wasn’t just a meal; it was an experience, a celebration of family, and a flavor memory etched deep into our hearts.

Yields:

18
chimichangas or about 9 cups of meat filling

Ingredients

  • 5 lbs beef chuck roast, (the flat kind – you may need to buy 2 roasts to achieve 5 lbs)
  • Salt and pepper, to taste
  • 3 Tbsp shortening or coconut oil
  • 3 medium onions, chopped
  • ¼ cup all-purpose flour
  • 4 oz can diced green chiles
  • 14-16 oz green chili salsa, (such as Herdez Salsa Verde for authentic flavor)
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 tsp ground cumin
  • 2 (10-count) packs taco size flour tortillas
  • 2 cups + additional oil (canola or vegetable), for frying

Instructions

  1. Begin by generously seasoning both sides of your beef chuck roast(s) with salt and freshly ground black pepper. This initial seasoning is crucial for building a deep flavor foundation. In a sturdy, heat-retaining pan, sear all sides of the roast(s) until beautifully browned. This searing step locks in juices and creates a rich crust. Once seared, transfer the roast(s) into a large baking dish, ideally a 13×9-inch pan.
  2. Cover the baking dish tightly with aluminum foil and place it in a preheated oven at 300˚F (150˚C). Allow the roast(s) to slow-cook for approximately 4 hours. It’s important NOT to add any water to the pan; the beef will naturally release its own flavorful juices as it cooks, creating a tender, succulent result. The low and slow cooking method is key to achieving fall-apart tender meat.
  3. Once the meat is incredibly tender and easily shreddable, carefully remove it from the oven. Drain the cooking juices into a separate bowl and set them aside; these juices are liquid gold for flavor. Shred the cooked beef using two forks, then skim any excess fat from the surface of the reserved juices. Pour the skimmed juices back over the shredded meat to keep it moist and infuse it with even more flavor. Set this flavorful meat mixture aside.
  4. In a separate large sauté pan, melt the shortening or coconut oil over medium heat. Add the chopped onions and cook for about 5 minutes, or until they become soft and translucent. Next, sprinkle in the all-purpose flour and stir it continuously with the onions for 1 minute; this will create a roux that helps thicken the sauce. Gradually mix in the diced green chiles, green chili salsa (such as Herdez Salsa Verde for an authentic taste), garlic powder, salt, and ground cumin. Continue to cook, stirring occasionally, until the sauce thickens to your desired consistency. Finally, add the prepared shredded beef mixture into the onion and salsa mixture, stirring well to combine, and heat thoroughly until everything is warmed through.
  5. Warm your taco-sized flour tortillas slightly to make them more pliable. Spoon about ⅓ to ½ cup of the savory chili verde beef filling into the center of each tortilla. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to create a burrito-style chimichanga. Ensure they are rolled snugly to prevent the filling from escaping during frying.
  6. In a large, heavy-bottomed pot or Dutch oven, heat 2 cups or more of canola or vegetable oil until it reaches about 350-375°F (175-190°C). If you don’t have a thermometer, a small piece of tortilla should sizzle vigorously when dropped in. Carefully place the folded chimichangas, seam-side down, into the hot oil. Fry each side until it achieves a beautiful golden-brown color, which usually takes approximately 45 seconds to 1 minute per side. Avoid overcrowding the pan to maintain oil temperature and ensure even cooking. Once golden, remove the chimichangas and allow them to drain on a plate lined with paper towels to absorb any excess oil. Serve immediately, garnished with your favorite toppings like sour cream, shredded cheese, and a dash of hot sauce if desired.

Notes & Tips

  • TO FREEZE (Meat Filling): This recipe yields a large batch, perfect for freezing! You can freeze half or two-thirds of the prepared chili verde beef mixture in an airtight zip-top freezer bag or container. Ensure all air is removed to prevent freezer burn. To use, thaw the meat filling overnight in the refrigerator. Reheat thoroughly on the stovetop or in the microwave, adding a splash of beef broth or water if needed to restore moisture. Once reheated, proceed with filling the tortillas and frying/baking as directed.
  • SLOW COOKER METHOD: For an even more hands-off approach to cooking the beef, you can use a slow cooker. After searing the chuck roast(s) as instructed in Step 1, place them into your slow cooker. Follow the rest of the recipe as written, cooking on LOW for 10-12 hours until the beef is incredibly tender and easily shredded. Drain, reserve juices, shred, and proceed with making the sauce and assembling the chimichangas.
  • HEALTHIER OPTION: For a lighter version, after filling and folding the tortillas, you can bake or air fry the chimichangas instead of deep frying. To bake, preheat your oven to 400°F (200°C), lightly brush the chimichangas with oil, and bake for 15-20 minutes, flipping halfway, until golden and crispy. For air frying, preheat to 375°F (190°C), lightly spray with oil, and air fry for 8-12 minutes, flipping halfway, until crisp.

Why These Chili Verde Beef Chimichangas Stand Out

Beyond the tender beef and vibrant green chili flavor, what truly sets this chimichanga recipe apart is its ability to bring people together. It’s a dish that feels like a warm hug, a testament to home cooking at its finest. The rich, savory notes from the slow-cooked beef meld seamlessly with the subtle heat and tangy freshness of the salsa verde and diced chiles, creating a complex yet comforting profile that appeals to all palates. Whether you’re an avid cook or a beginner, the steps are designed to be straightforward, ensuring a successful and rewarding culinary adventure. Plus, the ability to make a substantial batch means you can enjoy the fruits of your labor over multiple meals, making it a truly economical and time-saving option for busy weeknights or future gatherings.

Tips for Mastering Your Chimichangas

  • Choosing Your Beef: Always opt for a good quality chuck roast. Its marbling and connective tissues break down beautifully during slow cooking, yielding the incredibly tender, shreddable meat essential for chimichangas.
  • The Art of Searing: Don’t skip the searing step! A deep brown crust not only looks appealing but also develops rich, complex flavors through the Maillard reaction, which is critical for the overall taste of the beef.
  • Patience is Key: The 4-hour cooking time (or 10-12 in a slow cooker) is non-negotiable for true tenderness. Resist the urge to rush it; your patience will be rewarded with melt-in-your-mouth beef.
  • Perfect Shredding: Once the beef is cooked, it should shred easily with two forks. If it’s still tough, it needs more cooking time. For an even finer shred, you can use a stand mixer with a paddle attachment for just a few seconds.
  • Rolling Techniques: Ensure your tortillas are warm and pliable before filling. This prevents cracking and helps create a tight, secure roll. Place the filling slightly off-center, fold the two short sides over, then roll tightly from the long side.
  • Optimal Frying Temperature: Maintaining the correct oil temperature (350-375°F or 175-190°C) is crucial. Too cool, and your chimichangas will be greasy; too hot, and they’ll burn before the tortilla crisps evenly. Use a kitchen thermometer if possible.
  • Avoid Overcrowding: Fry chimichangas in batches. Overcrowding the pot will drop the oil temperature and lead to soggy results.

Delicious Serving Suggestions and Pairings

These Chili Verde Beef Chimichangas are a meal in themselves, but they truly shine when accompanied by complementary sides and toppings. Think beyond the basic and create a full Mexican fiesta experience! Traditional toppings are a must: a generous dollop of cool sour cream, a sprinkle of freshly shredded Monterey Jack or cheddar cheese, and your favorite hot sauce to add an extra kick. For freshness, consider adding a scoop of vibrant pico de gallo, creamy guacamole, or thinly sliced avocado. Don’t forget a sprinkle of fresh cilantro for a burst of herbaceous flavor.

To round out your meal, pair these hearty chimichangas with classic Mexican side dishes. Fluffy Mexican rice, rich and savory refried beans, or a refreshing corn salad with lime and cojita cheese are all excellent choices. For a lighter touch, a simple green salad with a zesty vinaigrette can balance the richness of the chimichangas. And to complete the experience, consider serving with your favorite cold cerveza, a refreshing margarita, or a homemade agua fresca.

Freezer Meal Prep: Your Future Self Will Thank You

One of the many advantages of this Chili Verde Beef Chimichanga recipe is its incredible suitability for freezer meal prep. By making a large batch, you can effortlessly stock your freezer with delicious, homemade meals that are ready when you are. As noted above, the shredded beef filling freezes beautifully on its own. However, you can also assemble the chimichangas completely before frying or baking and freeze them! To do this, prepare the filling and roll the chimichangas as instructed. Place them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container, separating layers with parchment paper to prevent sticking. They will keep for up to 3 months.

When you’re ready to enjoy, you have a few options: thaw them in the refrigerator overnight and then fry or bake as usual, or you can even cook them from frozen. If cooking from frozen, add an extra 5-10 minutes to the baking time or fry them at a slightly lower temperature (around 325-350°F or 160-175°C) for a bit longer, ensuring the internal temperature reaches a safe 165°F (74°C) and the exterior is golden and crispy. This meal prep strategy means you can enjoy these exquisite chimichangas even on the busiest of days, turning a special occasion dish into an everyday convenience.

Customizing Your Chili Verde Chimichangas

While this recipe provides a fantastic foundation, feel free to personalize your chimichangas to your taste preferences. For those who love more heat, consider adding a pinch of cayenne pepper or a finely diced jalapeño to the beef mixture. If you prefer a richer, smokier flavor, a small amount of chipotle in adobo sauce can be a wonderful addition. You could also experiment with different types of chiles in your salsa verde base to alter the flavor profile – Hatch chiles, for example, offer a distinct, earthy flavor. While this recipe focuses on beef, the chili verde sauce could potentially be adapted for other proteins, though the chuck roast’s texture is ideal for shredding. Don’t be afraid to make this recipe your own!

From cherished childhood memories to new family traditions, these Chili Verde Beef Chimichangas are more than just a recipe; they are a celebration of flavor, comfort, and togetherness.
