For the past three weeks, my life has been a blur of rolling pins, precise measurements, and the sweet aroma of baking. This update delves into the demanding yet incredibly rewarding world of professional pastry arts, covering everything from delicate tarts to the glorious layers of puff pastry, all while navigating the vibrant energy of a dynamic city.

My culinary education has been an exhilarating sprint, covering an astonishing breadth of techniques and recipes in a short span. Since my last update, we’ve navigated the intricate world of 18 different pies and tarts, mastered 10 recipes involving pâte à choux, and meticulously crafted 15 creations using pâte feuilletée, or puff pastry. This intense period also included three practical exams, pushing my skills to their limits, and, of course, an endless mountain of dishes to wash – a less glamorous but unavoidable part of the process. Despite the physical and mental demands, my passion for pastry making has only intensified. I truly love every moment of learning and creating in this dynamic environment, even if the dish duty remains my least favorite aspect.

The Relentless Pace of Culinary Training: A Test of Endurance and Passion

Culinary school, particularly at this professional level, has proven to be far more intense and physically and emotionally challenging than I ever anticipated. There was simply no way to fully prepare for the sheer speed and precision required daily. From 8:30 AM to 2:30 PM, I am in constant motion, my brain operating at mach speed to track every ingredient, every component of multiple recipes simultaneously. The focus needed to stay ahead, prevent any burning mishaps (of food or myself!), and absorb every detail from the chef’s demonstrations is immense. It’s a full-sensory immersion, a dance of technique and timing that leaves me both wired from the adrenaline and utterly exhausted by the end of each day.

Yet, the journey doesn’t stop when the apron comes off. The constant tasting and the rich, buttery creations of French pastry demand a certain level of discipline outside the kitchen. So, even when my body aches, I push myself to the gym. Someone, after all, enjoyed a few too many servings of pâte à choux and puff pastry. I won’t name names, but my taste buds certainly had a field day!

So, what exactly have I been meticulously crafting in the pastry kitchen? From foundational tarts to delicate puff pastry masterpieces, the past few weeks have been a whirlwind of sweet discoveries.

Mastering Pies and Tarts: Precision and Artistry

The unit on pies and tarts truly challenged my perceptions and expanded my repertoire. The sheer variety and complexity of fillings, crusts, and decorative finishes made this module particularly demanding yet incredibly rewarding. Each day presented us with the task of producing 3-4 distinct pies and tarts, requiring surgical precision and impeccable organization.

My partner and I developed a formidable rhythm, executing each step with the speed and coordination of a well-oiled machine. If I do say so myself, we were a formidable “tour de force” in the kitchen, meticulously arranging fresh fruits, piping delicate creams, and achieving that perfect golden-brown crust. The satisfaction of seeing a tray of perfectly uniform, beautifully decorated tarts emerge from the oven was immense, a testament to our growing teamwork and individual skills.

The Irresistible Allure of Pâte Feuilletée (Puff Pastry)

Just when I thought pies and tarts held the top spot in my heart, we moved on to pâte feuilletée, or puff pastry, and my world was utterly transformed. I have an undeniable weakness for anything flaky and buttery, and puff pastry, with its countless delicate layers, embodies perfection. The process of laminating butter into dough, folding and rolling repeatedly to create hundreds of paper-thin layers, is a true art form. And once you fill that ethereal pastry with something as divine as frangipane, a rich almond cream, I completely lose all sense of restraint. My self-control and, perhaps more tellingly, my waistline, have been on an extended vacation for weeks!

Sacristans: A Sweet Revelation

Among the many puff pastry wonders, the Sacristans quickly became an obsession. These delightful treats are essentially strips of puff pastry rolled with a generous coating of sugar, chopped almonds, and even more sugar. The resulting sweet, crunchy, and flaky indulgence is, without exaggeration, one of the most addictive sweets I have ever encountered. I confess to eating a significant number even before class ended! The temptation was simply too great to resist; each bite was a symphony of caramelized sugar and delicate pastry. My commitment to culinary education, after all, necessitates thorough taste testing!

Gâteau Pithivier: A Buttery Dream

Then there’s the Gâteau Pithivier, a pastry so exquisite it makes you want to “shut the front door” in awe. This masterpiece features buttery, flaky puff pastry elegantly wrapped around a generous filling of frangipane – a luxurious blend of almond cream and pastry cream. The contrast between the crisp exterior and the rich, moist interior is simply divine, creating a truly sinfully delicious experience that is both sophisticated and deeply satisfying.

Conversations and Tartes aux Poires en Cages: Delicate Delights

My absolute favorites from this unit, however, were the charming little Conversations (visible in the top right of the image above). These adorable puff pastry tartlets, filled with more of that luscious almond cream, are then topped with an additional layer of buttery puff pastry and elegantly glazed with royal icing. As they bake, the royal icing hardens into a sweet, crunchy shell that perfectly complements the creamy almond filling and the flaky, rich pastry. It’s clear by now, I have an undeniable weakness for almond cream!

Equally captivating were the tiny Tartes aux Poires en Cages (bottom pictures above). Can you even comprehend the level of cuteness and delicate artistry involved in these pear tarts? Each one is a miniature marvel, showcasing the versatility and visual appeal achievable with puff pastry.

Tarte Tatin Reimagined: A Caramelized Masterpiece

My past experiences with Tarte Tatin, even in Paris, had left me unimpressed. I’d always found them to be mushy, flavorless apples on a rather nondescript pastry base – a truly “bleh” experience. However, the Tarte Tatin we created in class was a complete revelation, shattering all my preconceived notions.

This version featured perfectly caramelized, flambéed apple halves baked beneath a magical puff pastry crust. The combination was mind-blowingly delicious: rich caramel, tender apples infused with brandy, and the signature buttery, flaky texture of puff pastry. It was a symphony of flavors and textures, proving that a truly well-executed Tarte Tatin can be an unforgettable dessert. The transformation from a previously disappointing dish to an absolute favorite highlights the importance of proper technique and quality ingredients.

Pâte à Choux: A Matter of Preference

While I’ve been effusive about puff pastry, I suppose I can’t entirely gloss over pâte à choux. However, I must confess to being somewhat “meh” about it. This unpopular opinion nearly caused riots in the women’s locker room, but I stand by it. While I appreciate the technical skill involved, and I know many adore éclairs (you know who you are, Chiara!), the dough itself, to my palate, lacks inherent flavor. The combination of a creamy, cold filling inside a relatively neutral, puffy shell just isn’t my personal preference for a dessert experience. It’s a versatile dough, no doubt, but it doesn’t quite capture my heart in the same way puff pastry does.

Oh, except for one glorious exception: the filling for the Paris-Brest! This exquisite cream is like Nutella on crack – incredibly creamy, intensely flavorful, and utterly impossible to stop eating. I was dangerously close to piping it directly into my mouth, but I managed to refrain, upholding my reputation as a (mostly) dignified lady. It’s truly a testament to how a sensational filling can elevate even a ‘meh’ dough into something spectacular!

Ron Ben-Israel, a revered alumnus of the International Culinary Center (ICC), shared insights from his illustrious career, offering a glimpse into the possibilities that await. Jacques Torres, the esteemed Pastry Dean, is a true legend, and observing his passion and expertise was an unforgettable experience. These encounters serve as powerful motivators, reinforcing the incredible standards and creativity inherent in the professional pastry world.

Reflections on the Journey So Far: Growth and Passion

These past weeks have not just been about learning recipes; they’ve been about cultivating precision, developing intuition, and understanding the science and artistry behind every bake. The challenges have been immense, pushing me to my limits, but the growth I’ve experienced is undeniable. Every successful pastry, every technique mastered, reinforces my passion for this intricate craft. This journey is as much about self-discovery as it is about culinary education, shaping me into a more resilient and skilled baker.
