- 2 large overripe bananas, mashed
- ⅓ cup (75 g) coconut oil, melted and cooled
- 1 large egg
- ¼ cup (50 g) granulated sugar
- ¼ cup (50 g) light brown sugar
- 1 ½ cups (180 g) all-purpose flour (stir, spoon & level)
- ¼ cup (20 g) cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 ½ cups (231 g) chopped fresh cherries
Instructions
- Preheat oven to 350 degrees Fahrenheit (175°C). Place cupcake liners in (or generously spray) a 12-cup muffin tin and set aside.
- Using an electric or stand mixer, beat together the mashed banana, melted and cooled coconut oil, egg, granulated sugar, and light brown sugar until thoroughly combined and smooth.
- In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt. Gradually sift these dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix; a few lumps are acceptable. Gently fold in the chopped fresh cherries by hand.
