CHEESECAKE:

  • 20 oz (565 g) block-style cream cheese, room temperature
  • ¾ cups (150 g) granulated sugar
  • ½ Tablespoon vanilla extract
  • ¼ teaspoon coarse salt
  • 2 large eggs
  • ½ cup (120 g) sour cream
  • 6 regular Oreo cookies, coarsely crushed

CAKE:

  • 2 cups (400 g) granulated sugar
  • 1 ¾ cups (210 g) all-purpose flour (stir, spoon & level)
  • ¾ cup (60 g) dutch processed cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (237 ml) milk
  • ½ cup (118 ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (237 ml) boiling water

FROSTING:

  • 8 oz (226 g) white chocolate chips
  • 1 cup (226 g) butter (2 sticks), softened slightly to room temperature
  • 2 teaspoons vanilla extract
  • 4-6 cups (480-720 g) powdered sugar
  • ¼ – ⅓ cup (59-80 ml) heavy cream or milk

DECORATION:

  • 3-4 regular Oreo cookies, crushed
  • Extra Oreos for border, etc.

Instructions

  1. CHEESECAKE:

    Preheat oven to 325˚F (160°C). Set a kettle of water to boil. Using an electric mixer, beat cream cheese on medium until fluffy, scraping down the side of the bowl. Gradually add sugar, beating until fluffy. Beat in vanilla extract and salt. Beat in eggs, one at a time, scraping down the side of the bowl after each addition. Beat in sour cream. Fold in crushed Oreos.

  2. Cut parchment paper in a circle and line the bottom of an 9-inch spring-form pan (with the raised side of the bottom insert facing up). Wrap the bottom half of the pan tightly in foil. Pour in the filling. Place the spring-form pan in a roasting pan or rimmed baking sheet. Pour boiling water into the roasting pan to come halfway up the side of the spring-form pan (or as high as possible without spilling water into the oven).
  3. Bake until just set in the center, about 45 minutes. Turn the oven OFF. Let rest in the CLOSED oven for 2 hours. Run a paring knife around the edge of the cheesecake. Remove the outer ring of the spring-form pan, but leave the metal bottom attached. Wrap in plastic wrap and FREEZE OVERNIGHT.
  4. CAKE:

    Heat oven to 350˚F (175°C). Grease and flour the edges of two 9-inch round cake pans. Cut a parchment circle to fit the bottom of each pan. A quick squirt of pan spray in the bottom before adding the parchment circle will help it stay in place. (This parchment & flouring method is HIGHLY suggested to help remove the cake without any sticking.)

  5. In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla; beat on medium speed of an electric mixer for 2 minutes. Stir in the boiling water (the batter will be thin). Pour batter evenly into the prepared pans.
  6. Bake for 30 to 35 minutes or until a wooden pick inserted in the center comes out clean. Cool for 10 minutes in the pans; then remove from pans to wire racks to cool completely. *OPTIONAL: Wrap cakes in plastic wrap & FREEZE OVERNIGHT with the cheesecake. You can leave the parchment circle on if desired, and peel it off when the cake is frozen. Having frozen cake really helps to eliminate the need for a crumb coat when frosting, and it thaws quickly.
  7. FROSTING:

    Place white chocolate in a double boiler over a pot of simmering water just until it begins to melt. Stir until fully melted, remove from heat, and set aside to cool slightly.

  8. Meanwhile, cream butter until light and fluffy. Once the white chocolate has cooled to near room temperature, beat it into the creamed butter. Continue to mix at low to medium speed while adding vanilla. Gradually add in cream/milk and powdered sugar, alternating until the frosting reaches desired consistency (aim for smooth and spreadable, not too stiff).
  9. ASSEMBLY:

    Place one layer of chocolate cake on your cake stand or serving plate. If desired, frost the top with a thin layer of frosting and a sprinkle of crushed Oreos.
