Discover Millet: An Ancient Grain Reimagined for Modern Palates

While beloved quinoa has rightly earned its place as a popular whole grain, it’s time to shine a spotlight on another remarkable ancient staple: millet. Often overlooked in Western cuisine, millet is far from a newcomer to the culinary world. With a history spanning thousands of years, having been cultivated since the pre-Neolithic era, millet has served as a vital food source for numerous civilizations across Africa and Asia. This rich heritage speaks to its incredible resilience and nutritional value, making it a perfect candidate for today’s health-conscious kitchens.

Beyond its fascinating history, one of millet’s most significant advantages is that it’s naturally gluten-free. This makes it an excellent, accessible option for individuals with celiac disease or gluten sensitivities, as well as anyone looking to diversify their grain intake. Nutritionally, millet is a powerhouse, rich in fiber, magnesium, phosphorus, and B vitamins. Its subtle, nutty flavor and light, fluffy texture when cooked correctly make it an ideal canvas for absorbing the myriad of robust flavors in this vibrant grain bowl. Forget heavy, dense grains; millet offers a delightful lightness that complements fresh summer ingredients beautifully.

Crafting the Perfect Summer Grain Bowl: A Symphony of Seasonal Ingredients

The true magic of this Cherry Burrata Millet Grain Bowl lies in its thoughtfully selected components, each contributing a unique layer of flavor and texture to the overall experience. We begin with the foundation: perfectly cooked and lightly toasted millet, offering a wholesome, earthy, and slightly crunchy backdrop. But this bowl is not just about the grain; it’s a vibrant celebration of seasonal produce, high-quality protein, and luxurious cheese.

The Star Components Explained:

  • Nutty Millet: Our chosen ancient grain, providing a delicate, slightly toasted flavor and satisfying texture. When gently pan-fried after initial cooking, it develops an irresistible light crunch that adds another dimension to the bowl.
  • Grilled Red Onions & Charred Shallots: Grilling is a transformative technique for these humble alliums. It coaxes out their natural sugars, imparting a beautiful sweetness and a desirable smoky char that adds significant depth and complexity to the dish. The shallots, in particular, become wonderfully sweet and tender.
  • Spicy Sweet Corn: Fresh yellow sweet corn, straight from the cob, is lightly grilled to enhance its natural sweetness and achieve a slight char. A dusting of aromatic ancho and New Mexico chili powders introduces a subtle yet captivating warmth and smoky undertone, elevating the simple corn into something truly special.
  • Succulent Grilled Chicken: Lean, perfectly seasoned, and expertly grilled chicken breasts provide a hearty and satisfying protein element that makes this grain bowl a complete and fulfilling meal. The grilling process locks in moisture and adds a delicious smoky flavor.
  • Fresh Cherries: The ruby jewels of summer, pitted and halved, deliver a delightful pop of sweet-tart flavor. Their vibrant juiciness cuts through the richness of the other ingredients and brightens the entire dish, creating a fantastic balance.
  • Creamy Burrata: Ah, burrata! This exquisite Italian cheese is truly a showstopper. Featuring a delicate outer shell of mozzarella encasing a luxuriously creamy, stracciatella-filled interior, burrata offers an unparalleled melt-in-your-mouth richness. It melts beautifully into the warm components, offering a salty-sweet indulgence that elevates every single bite. If authentic burrata proves elusive, a high-quality, fresh ricotta can serve as a worthy, albeit slightly different, substitute. For those fortunate enough to live near New York City, a pilgrimage to Di Palo’s in Little Italy for their divine burrata is an experience not to be missed!
  • Bright Cherry Balsamic Vinaigrette: This homemade dressing is the vibrant ribbon that ties all these incredible flavors together. Crafted with tangy white balsamic vinegar, a neutral oil, sweet honey, a touch of brown sugar, and more fresh cherries, it’s a perfectly balanced sweet, tangy, and fruity vinaigrette that complements every element of the bowl, enhancing its fresh, summery appeal.

Ingredients

For the Grain Bowl:

  • 1 cup Millet
  • 2 cups no-sodium stock or water (bonus points for homemade!)
  • 1 tablespoon butter
  • 2 chicken breasts
  • 1 medium red onion
  • 2 cobs yellow sweet corn
  • ½ cup cherries, pitted and halved
  • ½ cup cilantro, chopped
  • Kosher salt
  • Pepper
  • Ancho chili powder
  • New Mexico Chili powder
  • 1 Ball Burrata (or highest quality ricotta as a substitute)

For the Cherry Balsamic Dressing:

  • ¾ cup white balsamic vinegar
  • ¾ cup safflower oil or another neutral oil
  • 2 shallots, sliced into rings and grilled
  • 2 tablespoons honey
  • 1 tablespoon light brown sugar
  • ½ cup cherries, pitted
  • Kosher Salt
  • Pepper

Instructions

Make the Grain Bowl:

  1. Bring stock or water to a boil in a small saucepan with a large pinch of salt and 1 tablespoon butter. Add millet, reduce heat to a simmer, cover, and cook until all liquid is absorbed and the grains are tender (approximately 15-20 minutes). Remove from heat and spread onto a sheet tray to cool slightly and dry out. The bowls can be enjoyed warm.
  2. Preheat a grill pan over medium heat or prepare your outdoor grill. Ensure the grill surface is clean and lightly oiled to prevent sticking.
  3. Peel and slice the red onion into ¼-inch thick rings. Peel and thinly slice the shallots. Lightly coat the onion rings, shallots, and corn cobs with a neutral oil. Season generously with salt and pepper. For the corn, additionally sprinkle with ancho and New Mexico chili powders to impart a delicious spicy-smoky flavor.
  4. First, place the onion rings on the grill. If possible, try to keep them nested for easier flipping. Place the thinly sliced shallots in a cooler corner of the grill to prevent burning. Grill until the onions are tender and beautifully caramelized, and the shallots are charred and sweet. Remove them from the grill. Next, place the seasoned corn cobs on the grill and cook until tender with noticeable char marks. Grilling time for corn can vary; if your corn is exceptionally fresh and in season, a lighter grill is often preferred to maintain its crisp sweetness.
  5. Season both sides of the chicken breasts generously with salt, pepper, ancho chili powder, and New Mexico chili powder. Brush your grill grates or grill pan with oil once more. Place the seasoned chicken breasts in the pan. For more even cooking and a flatter breast, you can wrap the bottom of a cast iron skillet with aluminum foil and place it on top of the chicken to gently press them down. Cook for approximately 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred on the exterior. Remove the chicken to a clean plate, tent it loosely with foil, and let it rest for 8 minutes before slicing. (For more detailed foolproof grilling instructions, you can refer to our Grilled Rosemary Chicken recipe).
  6. While the chicken rests, in a large skillet, melt a small pat of butter. Add the cooked millet and toast it over medium-low heat, stirring occasionally. Season with additional salt and pepper as desired, until the millet becomes slightly crunchy on the exterior but remains tender within. This optional step greatly enhances the nutty flavor and adds an appealing textural contrast to the bowl. Once toasted, gently fold in the fresh chopped cilantro.
  7. During the chicken’s resting period, proceed to prepare the dressing and gather all components for final bowl assembly. This ensures everything is ready simultaneously for the freshest taste.

Make the Cherry Balsamic Dressing:

  1. In a high-speed blender or food processor, combine the white balsamic vinegar, safflower oil (or chosen neutral oil), grilled shallots, honey, light brown sugar, and pitted cherries. Blend until the mixture is completely smooth and emulsified. Alternatively, if you prefer a less pulpy dressing, you could juice the cherries separately and then whisk all ingredients together. Taste the dressing and adjust seasoning with salt, pepper, or additional sugar to your preference, aiming for a perfect balance of sweet and tangy notes.

Assemble Grain Bowls:

  1. Carefully cut the grilled corn kernels off the cobs. A pro tip is to stand the cob upright in a large bowl and slice downwards, which helps contain the kernels.
  2. To assemble each magnificent bowl, start with a generous scoop of the toasted millet as the base. Artfully arrange the grilled red onions, corn kernels, halved fresh cherries, and sliced grilled chicken on top of the millet. Crown each bowl with half a ball of creamy burrata. Finish with a delicate sprinkle of fresh chopped cilantro and a generous drizzle of the bright cherry balsamic vinaigrette. For an extra touch of gourmet elegance, season the burrata directly with flaky sea salt (like Maldon) and freshly cracked black pepper – the delightful combination of the creamy cheese with crunchy salt is truly a taste of heaven. Serve immediately and enjoy the symphony of summer flavors!
