Brownies
Ingredients
Brownies:
- 18.3 oz (520 g) box family size brownie mix, (for a 13×9″ pan)
Ingredients for brownie mix (as per package instructions – mine called for):
- ½ cup (118 ml) vegetable oil, *use amount listed on your box
- ¼ cup (59 ml) water, *use amount listed on your box
- 2 large eggs, *use amount listed on your box
Peanut Butter Buttercream:
- ½ cup (113 g) unsalted butter, (1 stick) softened
- 1 cup (264 g) creamy peanut butter
- pinch salt
- 2 ½ cups (300 g) powdered sugar
- 1 tsp vanilla extract
- 1-2 Tbsp milk
Chocolate Glaze:
- 1 cup (170 g) semi-sweet chocolate chips
- ¼ cup (66 g) creamy peanut butter
Instructions
-
Prepare the Brownie Base: Bake brownies according to the directions on your box mix for a 13×9″ pan. Ensure you grease the pan thoroughly before adding the batter and baking. This prevents sticking and ensures easy removal. Once baked, allow the brownies to cool completely on a wire rack. This is crucial for the layers to set properly.
-
Craft the Peanut Butter Buttercream: In a stand mixer, cream together the softened unsalted butter, creamy peanut butter, and a pinch of salt. Beat until the mixture is smooth and any butter lumps are completely gone. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated. Continue adding milk, one tablespoon at a time, until the buttercream reaches a smooth, spreadable consistency. Spread this rich peanut butter buttercream evenly over the cooled brownies.
-
Apply the Chocolate Glaze: In a microwave-safe bowl, melt the semi-sweet chocolate chips and the remaining creamy peanut butter. Heat in short bursts (e.g., 30 seconds, stir; then 15 seconds, stir; repeat until smooth and fully melted). Stir frequently to prevent burning. Pour the warm chocolate mixture over the peanut butter buttercream layer, spreading it gently and evenly with a spatula. For an elegant touch, you can create a decorative design by zig-zagging the chocolate from one corner of the pan to the opposing corner, then dragging the tip of your spatula or a knife back and forth across the zig-zag pattern. Allow the chocolate glaze to set completely before cutting into squares. You may refrigerate them to speed up this process.
Notes
For best results, ensure all ingredients for the buttercream are at room temperature. This helps achieve a smooth, lump-free texture. If you prefer a less sweet brownie, you can use a dark chocolate brownie mix for the base.

Tips for Perfect Buckeye Brownies Every Time
While this recipe is incredibly forgiving, a few pointers can elevate your Buckeye Brownies from great to absolutely phenomenal:
- Don’t Overbake the Brownies: The key to fudgy brownies is to pull them from the oven when they’re slightly underbaked in the center. A toothpick inserted into the center should come out with moist crumbs, not wet batter. Overbaking leads to dry, cakey brownies, which we want to avoid for this decadent treat.
- Room Temperature Butter for Buttercream: For the smoothest, creamiest peanut butter buttercream, make sure your butter is properly softened at room temperature. This allows it to cream easily with the peanut butter and powdered sugar, preventing lumps and ensuring a silky texture.
- Achieving the Right Buttercream Consistency: Add milk to the buttercream gradually, one tablespoon at a time. You want a consistency that’s easy to spread but still firm enough to hold its shape. Too much milk will make it runny, while too little will make it too stiff.
- Gentle Melting for Chocolate Glaze: When melting the chocolate chips and peanut butter, use short intervals and stir frequently. Chocolate can seize or burn if overheated. The residual heat will continue to melt any small lumps after stirring.
- Patience is a Virtue: Allow each layer to cool and set properly. The brownies must be completely cool before adding the buttercream, and the chocolate glaze needs to set before slicing. Rushing this process can lead to messy layers.
Variations and Customizations for Your Buckeye Brownies
The beauty of a classic recipe like Buckeye Brownies is how easily it can be adapted to suit your taste. Here are a few ideas to get you started:
- Chocolate Choices: Experiment with different types of chocolate for the glaze. Dark chocolate will provide a more intense, less sweet contrast to the peanut butter, while milk chocolate will create a sweeter, creamier topping. You could even use white chocolate for a unique twist.
- Peanut Butter Power: While creamy peanut butter provides a smooth finish, adventurous bakers might try a natural, unsweetened peanut butter for a deeper, less sugary flavor, or even chunky peanut butter for added texture in the buttercream layer. Just be aware that natural peanut butter can sometimes alter the texture of the buttercream slightly.
- Salty Sweet Perfection: A sprinkle of flaky sea salt over the finished chocolate glaze before it sets will beautifully enhance the flavors and add a sophisticated touch, cutting through the sweetness with a delightful savory note.
- Nutty Additions: For an extra crunch, fold finely chopped roasted peanuts into the peanut butter buttercream or sprinkle them over the chocolate glaze.
- Mini Buckeye Bites: Instead of cutting into traditional squares, slice them into smaller, bite-sized pieces for a perfect party appetizer or a controlled indulgence.
Serving and Storage Suggestions
These Buckeye Brownies are fantastic on their own, but they also pair wonderfully with a scoop of vanilla bean ice cream or a glass of cold milk. For a more sophisticated dessert, serve them alongside a cup of freshly brewed coffee or a rich espresso. To store, place the cooled and cut brownies in an airtight container. They will keep well at room temperature for up to 3-4 days or in the refrigerator for up to a week. For longer storage, they can be frozen for up to 2-3 months. Thaw them in the refrigerator overnight or at room temperature for a few hours before serving.
The Perfect Treat for Any Occasion
Whether you’re celebrating a special occasion, bringing a dish to a potluck, or simply craving a truly satisfying dessert, these Buckeye Brownies are a guaranteed hit. Their layered elegance makes them seem complex, but their straightforward preparation means you can enjoy a homemade treat without the fuss. They embody comfort, nostalgia, and pure indulgence in every square. Get ready to fall in love with your new favorite chocolate and peanut butter dessert!
