What Exactly is a Scotcharoo?

Often compared to traditional Rice Krispie treats, Scotcharoos stand in a league of their own with a distinct profile and an unforgettable texture. While both feature crispy rice cereal, Scotcharoos forgo marshmallows entirely. Instead, their wonderfully soft and chewy base is crafted from a rich, cooked mixture of butter, granulated sugar, light corn syrup, and creamy peanut butter. This unique blend infuses the treats with an unparalleled depth of flavor and a satisfying chewiness that pairs perfectly with the crisp cereal.

The defining characteristic, and the origin of their catchy name, lies in the iconic topping: a luscious blend of melted chocolate chips and butterscotch chips. This sweet, slightly salty, and incredibly smooth layer transforms a simple peanut butter treat into the celebrated Scotcharoo. Historically, these delightful bars gained widespread popularity after their original recipe was featured on the Rice Krispies box in the mid-1960s, quickly becoming a household favorite. They hold a special place in the culinary landscape of the Midwestern United States, particularly cherished in states like Iowa and North Dakota, where they are a staple at potlucks, bake sales, and family gatherings. Their enduring appeal speaks volumes about their timeless taste and simple charm.

Essential Ingredients for Perfect Scotcharoos

Crafting these classic no-bake Scotcharoos requires just a handful of straightforward ingredients, most of which you likely already have in your pantry. Here’s what you’ll need to create this delectable treat:

  • Butter: This is a fundamental component for both flavor and texture in the base. You have the flexibility to use either unsalted or salted butter. Given that Scotcharoos can be quite sweet, using salted butter can provide a subtle counterpoint, balancing the sweetness and enhancing the overall flavor profile.
  • Granulated Sugar: Standard white sugar is used to create the sweet and chewy foundation of the bars.
  • Light Corn Syrup: A crucial ingredient that plays multiple roles. It helps prevent the sugar from crystallizing, ensuring a smooth, non-grainy texture in the base. It also contributes significantly to the signature soft and chewy consistency of Scotcharoos, distinguishing them from traditional crispy treats.
  • Creamy Peanut Butter: The heart of the Scotcharoo base! For the best results and proper consistency, it’s highly recommended to use a firm, “no-stir” creamy peanut butter such as Jif or Skippy. Natural peanut butters, which often separate and have a different oil content, may not yield the same firm and cohesive texture needed for these bars.
  • Rice Krispies Cereal: The quintessential crispy element! Fresh cereal is key here to ensure maximum crunch and lightness, providing that satisfying textural contrast against the chewy base and smooth topping.
  • Chocolate Chips: These form half of the iconic topping. While you can certainly use milk chocolate chips for a sweeter, creamier flavor, semi-sweet chocolate chips are often preferred as they offer a balanced sweetness that prevents the overall dessert from being overly rich. Dark chocolate chips can also be used for a more intense chocolate flavor.
  • Butterscotch Chips: The “scotch” in Scotcharoos! These chips are essential for creating the distinctive, warm, and caramel-like flavor of the topping. Their unique taste, when combined with chocolate, is what makes these bars so memorable.
  • Oil (Optional): A small amount of flavorless oil, such as canola, vegetable, or coconut oil, can be added to the chocolate and butterscotch chips when melting. This helps create a smoother, more fluid topping that is easier to spread evenly over the treats, resulting in a beautiful, glossy finish.

Mastering the Art of Making Scotcharoos: A Step-by-Step Guide

Creating these delightful Scotcharoos is a straightforward process, even for novice bakers. Follow these steps for a perfect batch every time:

First, begin by preparing your crispy rice cereal. Measure out the required amount of Rice Krispies into a very large mixing bowl. The generous size of the bowl will make it easier to evenly coat the cereal later. Next, take a 9×13-inch baking dish and spray it thoroughly with cooking spray. This crucial step will prevent the sticky treats from adhering to the pan, ensuring easy removal and clean cuts. Set the prepared dish aside.

Next, you will create the rich and chewy peanut butter mixture that forms the heart of your Scotcharoos. This step is critical for achieving the perfect soft texture.

A series of images showing the process of making the peanut butter syrup for rice krispie treats: melting butter, sugar, and corn syrup, then adding peanut butter and stirring.
  1. Into a large, heavy-bottomed saucepan, combine the butter, granulated sugar, and light corn syrup.
  2. Place the saucepan over medium-low heat. Stir the mixture frequently and consistently. The goal is to heat the mixture until it is thoroughly hot and the sugar has completely dissolved, making the mixture smooth. It’s absolutely vital to ensure the mixture does NOT come to a rolling boil. If you notice it begins to lightly simmer or bubble around the edges, immediately remove it from the heat. Overcooking or boiling this mixture will result in hard, rock-like Scotcharoos instead of soft, chewy ones. You’ll observe the mixture transforming from a thick, gritty consistency to a thinner, more runny syrup-like state as the sugar dissolves.
  3. Once the mixture is hot and smooth (and before it boils!), promptly remove the saucepan from the heat.
  4. Add the creamy peanut butter directly into the hot mixture. Stir continuously until the peanut butter fully melts and incorporates, resulting in a perfectly cohesive and smooth peanut butter syrup.

Assembling the Peanut Butter Rice Krispie Treats Base

With your peanut butter mixture ready, it’s time to bring together the base of your Scotcharoos. This step is quick and straightforward, forming the delightful foundation for your chocolate butterscotch topping.

Crispy rice cereal coated with a delicious peanut butter syrup being transferred to a pan and gently flattened with a spatula and mini rolling pin to create an even layer.
  • Carefully pour the warm peanut butter mixture over the Rice Krispies cereal in the very large bowl you prepared earlier. Using a sturdy spoon or a silicone spatula, stir diligently until every single piece of Rice Krispies cereal is thoroughly and evenly coated with the rich peanut butter mixture. This ensures a consistent flavor and texture throughout your bars.
  • Transfer the entire mixture of peanut butter Rice Krispies into the prepared 9×13-inch baking pan. Gently spread the mixture into an even layer, pressing it down lightly but firmly.
  • OPTIONAL TIP for a perfect topping: For an exceptionally smooth surface that will make spreading the chocolate butterscotch topping a breeze, place a piece of wax paper over the treats. Then, use a mini rolling pin or simply the palms of your hands to gently but firmly flatten the top surface. Be careful not to press too hard, as this can make your Scotcharoos dense and less chewy. A gentle, even pressure is all that’s needed.

The Irresistible Chocolate Butterscotch Topping

No Scotcharoo would be complete without its signature chocolate and butterscotch topping – it’s the iconic layer that defines this classic treat! Here’s how to create that perfect, glossy finish:

Two images: Top shows butterscotch and chocolate chips in a bowl with a teaspoon of oil nearby. Bottom shows the melted ingredients smoothly stirred together, ready for the treats.
  • Combine the chocolate chips, butterscotch chips, and the optional oil (which aids in creating a smoother, more spreadable topping) in a heat-safe bowl.
  • Place the bowl in the microwave and heat at half power. Microwave in short bursts of 20 seconds, stirring thoroughly after each interval. Continue this process until the chips are completely melted and the mixture is wonderfully smooth and glossy. Be patient and stir well between each heating cycle to prevent burning the chocolate.

  • Once your topping is perfectly melted and smooth, pour it evenly over the pressed peanut butter rice krispie treats in the pan.
  • Using an offset spatula, gently and evenly spread the melted chocolate and butterscotch mixture across the entire surface of the treats, ensuring every corner is covered. For a professional, bakery-style finish, you can refer to this swirled icing tutorial to create beautiful patterns.
  • Allow the chocolate topping to set completely before cutting the bars. For a quicker setting time, place the pan in the refrigerator for about 15-20 minutes. Once firm, cut the Scotcharoos into neat squares.

Get ready to indulge! You are absolutely going to adore these soft, chewy, and utterly delicious Scotcharoos. They are truly the ultimate no-bake treat that’s guaranteed to disappear fast!

Storage & Shelf Life: How Long Do Scotcharoos Stay Fresh?

One of the many appealing qualities of Scotcharoos is their excellent keeping quality, allowing you to enjoy them for days or even weeks after preparation. Here’s how to best store your delicious no-bake bars:

For immediate enjoyment, if stored in an airtight container at room temperature, your chocolate-covered rice krispie treats will retain their wonderful softness and flavor for up to one week. Be sure to keep them in a cool, dry place away from direct sunlight to maintain their texture and prevent the chocolate from melting or becoming sticky. While they can last a week, you might find it hard to resist eating them all much sooner!

Scotcharoos are also fantastic candidates for freezing, making them a great make-ahead option. To freeze them, it’s best to first cut the treats into individual squares. Then, arrange them in a single layer in a freezer-safe container. For stacking multiple layers, place a piece of wax paper or parchment paper between each layer to prevent them from sticking together. This careful layering ensures that each bar remains perfectly preserved. When properly frozen, Scotcharoos can be kept for up to 2-3 months. To enjoy, simply remove them from the freezer and allow them to thaw at room temperature for a short while until they reach your desired consistency. They will taste as fresh as the day you made them!

Expert Tips for Success & Delicious Alternatives

Achieving perfectly soft and chewy Scotcharoos every time is simple if you follow a few key tips and consider some delightful variations:

The Golden Rule for Soft (NOT Hard) Scotcharoos: This is the most crucial piece of advice. The secret to a perfectly soft and chewy Scotcharoo lies in the preparation of the sugar, butter, and corn syrup mixture. You absolutely MUST NOT let this mixture come to a rolling boil. If you observe even the slightest bubbling around the edges of the saucepan, immediately turn off the heat and remove the pan from the stovetop. Allowing it to boil will cause the sugar to crystalize excessively, resulting in a hard, brittle base instead of the desired tender chewiness.

To ensure this, make sure you start cooking the sugar mixture between the low and medium heat settings on your stovetop. Stir it frequently and patiently until the mixture visibly transforms from a thick, somewhat gritty consistency into a thin, smooth, and runny syrup. It’s okay if it still appears slightly grainy; the important thing is that the sugar has dissolved. If you’re unsure, you can carefully taste a tiny cooled drop (be very cautious, as it’s hot!) to check for a smooth, non-grainy texture.

Don’t Love Butterscotch? No Problem! While the classic Scotcharoo is defined by its chocolate and butterscotch topping, you can easily customize it to your taste. If butterscotch isn’t your favorite, simply substitute the butterscotch chips with an equal amount of peanut butter chips for an even more intense peanut butter flavor, or use extra chocolate chips for a rich, double-chocolate experience. Dark chocolate chips can also be a wonderful alternative for a less sweet, more sophisticated topping.

  • 4 Tbsp (57 g) butter, unsalted or salted
  • 1 cup (200 g) granulated sugar
  • 1 cup (237 ml) light corn syrup
  • 1 cup (264 g) creamy peanut butter, like Jif or Skippy

Topping:

  • 1 cup (170 g) semi-sweet chocolate chips
  • 1 cup (170 g) butterscotch chips
  • 1 tsp oil, optional, for thinning (canola/vegetable/coconut)

Equipment

  • Silicone Spatula Set
  • 9×13-inch Pan
  • 6-Quart Steel Mixing Bowl
  • Mini Rolling Pin

Instructions

  • Measure the Rice Krispies into a very large bowl. Spray a 9×13-inch baking dish with cooking spray and set it aside.
  • Place the butter, sugar, and corn syrup into a large saucepan.
  • Cook over medium-low heat, stirring frequently, until the mixture is hot, but NOT boiling, and the sugar is dissolved. (It may come to a light simmer and bubble at the edges, but as soon as that happens remove it from the heat immediately. The mixture will also change from thick and gritty, to thin and runny.)
  • Remove mixture from heat and add the peanut butter. Stir until the peanut butter melts and the mixture looks cohesive.
  • Pour the peanut butter mixture over the crispy rice cereal and stir until the Rice Krispies are coated evenly. Empty the peanut butter Rice Krispies into the prepared pan and spread into an even layer. OPTIONAL: Use wax paper and a mini rolling pin, or your hands, to flatten the top. (This helps the topping spread smoother.)
  • FOR THE TOPPING: Place the chocolate chips, butterscotch chips, and oil (optional) in a heat-safe bowl. Microwave at half power in 20 second increments, stirring in-between each interval, until fully melted and smooth.
  • Pour the melted chocolate over the top of the peanut butter rice krispie treats. Use an offset spatula to spread the chocolate evenly over the pan. (Use this tutorial for swirled icing if you want yours to look like mine.) Allow the chocolate to set. Then cut into squares. TIP: Place pan in fridge for 15-20 minutes to help the chocolate set faster.

Notes

  • Don’t like butterscotch? Use peanut butter chips or extra chocolate chips instead.
  • Storage: Store in an airtight container at room temperature for up to 1 week. To freeze, place bars in a freezer-safe container with wax or parchment paper between the layers and freeze for up to 2-3 months.
