Italian Sausages with Peppers and Grapes: A Hearty Umbrian-Inspired Delight

Italian Sausages with Peppers and Grapes served with polenta
Experience the rustic charm of Umbrian cuisine with this flavorful Italian Sausage and Grape dish.

Journey to the heart of Italy with a dish that beautifully marries savory Italian sausages with the surprising sweetness of grapes and the vibrant crunch of bell peppers. This Italian Sausages with Peppers and Grapes recipe, inspired by the traditional Umbrian culinary landscape and the esteemed Lidia Bastianich, offers a truly unique and satisfying dining experience. While grapes have long been a staple in Central Italian cuisine, adding tender bell peppers not only enhances the visual appeal but also introduces an extra layer of texture and a touch of earthiness, making this a truly well-rounded meal perfect for any occasion.

This remarkable dish is naturally gluten-free and finds its perfect companion in a creamy bed of polenta, absorbing all the rich, flavorful juices. Be warned, this recipe is designed to yield a generous quantity, making it an ideal choice for large family gatherings, feeding a hungry crowd of teenagers, or entertaining dinner guests. The magic unfolds as the ingredients slowly simmer together; the grapes burst, releasing their sweet and tart juices, which then combine with the savory fats from the sausages to create a luscious, glistening glaze. This slow cooking process is key to developing the depth of flavor that makes this dish so incredibly irresistible.

The Irresistible Allure of Slow-Cooked Perfection

The tantalizing aroma of Italian Sausages with Peppers and Grapes fills the kitchen during slow cooking.

Anticipation is part of the pleasure with this recipe. The delightful aromas that waft from the kitchen as this dish slowly cooks are almost unbearable in their deliciousness. It takes approximately 45 minutes for all the flavors to truly “marry” and meld into a harmonious symphony, but every minute is worth the wait. The slow simmering allows the ingredients to transform, creating a depth of flavor that quick-cooking simply cannot achieve. To ensure everything cooks evenly and has ample space, it’s crucial to use a large pot or skillet. I often start in a spacious stockpot to brown the sausages and then transfer everything to a large skillet for the final glazing, ensuring every component is perfectly cooked and coated in that delectable sauce.

The beauty of this dish lies in its simplicity and the unexpected combination of ingredients that creates such a complex flavor profile. The lightly spiced Italian sausages provide a robust foundation, while the grapes, once cooked, offer a sweet, slightly tart counterpoint that cuts through the richness of the meat. The tender bell peppers add a gentle sweetness and a pleasant texture, making each bite a delightful experience. It’s a departure from typical sausage and pepper dishes, introducing a sophisticated twist that will surely impress your palate and your guests.

Crafting the Perfect Glaze: Grapes, Sausages, and Bell Peppers

Observe the stunning, almost orange-hued sauce glistening in the skillet – that’s the magic of this recipe. It’s a flavor that stands apart, unique and utterly delicious. While the original recipe might call for a generous amount, it’s easily halved for smaller households, ensuring you always have the perfect amount of this incredible meal. The fusion of savory, subtly spicy sausages with the sweet and tart burst of cooked grapes, complemented by the softened bell peppers, creates an unforgettable taste sensation. This dish is a testament to the fact that sometimes, the most unexpected combinations yield the most extraordinary results. Don’t hesitate to give it a try; you won’t be disappointed!

Italian Sausages with Peppers and Grapes

Created by Amber Brady

Yields: 8 servings

Ingredients

For the Italian Sausages with Peppers and Grapes:

  • ¼ cup extra virgin olive oil
  • 8 large garlic cloves, peeled and lightly crushed
  • 2 ½ pounds Johnsonville Sweet Italian Sausage Links (approximately 2 packages or 10 links)
  • ½ tsp crushed chili flakes (adjust to your spice preference)
  • 1 ¼ pound seedless green grapes, washed (about 3 cups)
  • 1 red bell pepper, cored, seeded, and sliced into julienne strips
  • 1 yellow/orange bell pepper, cored, seeded, and sliced into julienne strips
  • 1 green bell pepper, cored, seeded, and sliced into julienne strips

For the Basic Polenta:

  • 4 ½ cups water
  • 1 tsp salt
  • ¾ cup plus 2 Tbsp yellow cornmeal
  • 1 ½ Tbsp unsalted butter

Instructions

  1. In a large (12-inch) skillet or stock pot, heat the extra virgin olive oil over low heat. Add the peeled garlic cloves. Once the garlic begins to sizzle and release its aroma, carefully add the Italian sausage links in a single layer. Cover the pan and allow the sausages to cook gently, turning them occasionally to ensure even browning and to help them render some of their delicious fat. This initial slow cooking builds a foundational flavor.
  2. After 10 minutes of initial cooking, sprinkle in the crushed chili flakes (if using) and continue to cook for an additional 10 minutes. By this point, the sausages should be beautifully golden brown on all sides. Carefully tilt the pan and remove all but a few tablespoons of the rendered fat. Discard the cooked garlic cloves as they have imparted their flavor. Transfer the browned sausages to a separate skillet, cover them, and keep them warm on very low heat while you prepare the glaze.
  3. Add the washed grapes to the skillet where the sausages were browned, stirring them well to coat thoroughly with the remaining pan juices and flavorful residue. Cover the skillet and cook until the grapes soften significantly and generously release their sweet, tart juices, which typically takes about 7 to 10 minutes. Next, add the julienned bell peppers to the grapes and continue cooking until the peppers become tender-crisp, approximately 5 minutes. Finally, return the hot, browned sausages to the pan with the grape and pepper mixture. Stir everything gently to ensure the sausages are coated in the exquisite grape and pepper glaze/sauce. Let it simmer together for another 5 minutes to fully meld the flavors.
  4. To serve this magnificent dish, slice the cooked sausages in half (if desired for easier eating). Arrange them artfully on a generous bed of creamy polenta (preparation instructions below). Spoon the vibrant grape and pepper mixture generously over the sausages, and don’t forget to drizzle all the luscious pan juices over the top for maximum flavor. Garnish with fresh parsley or basil for an added touch of freshness.
  5. For the Polenta: In a separate large saucepan, bring 4 ½ cups of water to a rolling boil. Add 1 teaspoon of salt to the boiling water. Gradually, and while continuously whisking, pour in the yellow cornmeal. Reduce the heat to low, ensuring the mixture continues to simmer gently. Cook the polenta, stirring frequently, until it thickens to your desired consistency and the cornmeal is tender. This usually takes about 15 minutes. (Note: sometimes polenta thickens very quickly; if this happens, remove it from the heat and let it rest for about 10 minutes to allow the cornmeal to fully soften without becoming too stiff). Once cooked, stir in the 1 ½ tablespoons of butter until it is completely melted and incorporated, making the polenta rich and smooth. Serve immediately.

Notes

This recipe creates a rich, complex flavor profile that benefits greatly from the slow cooking process. For a spicier kick, feel free to increase the amount of crushed chili flakes. If cooking for a smaller group, easily halve all ingredients for 4 servings. Leftovers are delicious and can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
