2 to 3 servings as a meal, 8 servings as a side dish
Ingredients
- 1 lb boneless skinless chicken breasts
- Your favorite chicken seasoning, (Salt & Pepper is fine too.)
- 7.25 oz box Betty Crocker Suddenly Salad CAESAR Pasta Salad Mix
- ⅓ cup Miracle Whip Salad Dressing
- ¼ cup apple juice
- 1 large unpeeled apple, cored, thinly sliced, & then diced
- ½ cup chopped pecans (OPTIONAL)
Instructions
-
Lightly brush your grill rack with vegetable oil. Season the chicken breasts generously with your desired seasonings (simple salt and pepper works wonderfully, but feel free to get creative with poultry rubs). Grill the chicken until it’s golden brown on the outside and no longer pink in the center, ensuring it reaches an internal temperature of 165°F (74°C). Remove from the grill and allow the chicken to cool completely.
-
While the chicken is grilling and cooling, prepare the pasta. Fill a large saucepan approximately two-thirds full with water and bring it to a rolling boil. Carefully stir in the contents of the Pasta-Vegetable pouch from the Betty Crocker Suddenly Salad Caesar mix. Allow the pasta to gently boil uncovered for about 12 minutes, stirring occasionally, until it reaches a tender al dente texture. Drain the pasta thoroughly, then rinse it with cold water to stop the cooking process and prevent sticking. Shake well to ensure all excess water is removed.
-
In a large mixing bowl, combine the seasoning mix from the salad kit, the Miracle Whip salad dressing, and the apple juice. Whisk until well blended and smooth. Once the grilled chicken has cooled, cut it into bite-sized chunks. Add the chicken, the drained and cooled pasta, and the diced apples to the seasoning mixture. Gently toss all the ingredients until everything is evenly coated. Just before serving, fold in the chopped pecans for an added crunch and nutty flavor. Cover the salad and refrigerate any leftovers promptly.
Notes
For best results, use a firm, crisp apple variety such as Fuji, Gala, or Honeycrisp to ensure a delightful crunch. Granny Smith apples can also be used for a tarter contrast. If you’re not a fan of Miracle Whip, a good quality mayonnaise can be substituted, though it will alter the tangy profile slightly. This salad can be prepared a few hours in advance, but it’s best served fresh, especially if you prefer your apples crisp. If making ahead, add the apples and pecans closer to serving time to maintain their texture.

Tips for Perfecting Your Grilled Chicken & Apple Salad
While this recipe is incredibly straightforward, a few expert tips can elevate your Grilled Chicken & Apple Salad from great to absolutely exceptional. Paying attention to these small details can significantly enhance the flavors and textures, ensuring a memorable meal every time.
Choosing the Right Chicken and Seasoning
Opt for boneless, skinless chicken breasts or thighs of uniform thickness for even cooking. If your chicken breasts are very thick, consider butterflying them or pounding them slightly to an even ½-inch thickness. This ensures they cook quickly and remain juicy. As for seasoning, a simple salt and black pepper rub is always effective. However, don’t hesitate to experiment with your favorite poultry blends, such as a lemon-herb seasoning, garlic powder, onion powder, or even a touch of smoked paprika for an extra layer of flavor. Marinating the chicken for 20-30 minutes before grilling can also add tenderness and depth.
Selecting the Best Apples for Crunch and Flavor
The apple is a star in this salad, providing crucial crunch and sweetness. Choose firm, crisp varieties that hold their shape well and don’t brown too quickly once cut. Fuji, Gala, Honeycrisp, or even a slightly tart Granny Smith work wonderfully. Leaving the peel on not only adds vibrant color but also contributes extra fiber and a rustic texture. Make sure to dice them uniformly for an appealing presentation and consistent bite.
Mastering the Pasta Texture
The Betty Crocker Suddenly Salad mix comes with its own pasta, which cooks quite easily. The key is to avoid overcooking it, as mushy pasta can detract from the salad’s texture. Aim for an al dente bite – firm but not hard. Rinsing with cold water immediately after draining is vital to stop the cooking process and prevent the pasta from clumping together. This step ensures your pasta remains distinct and complements the other ingredients beautifully.
Enhancing the Dressing
The combination of Miracle Whip and apple juice creates a unique tangy-sweet dressing. If you prefer a creamier, less tangy dressing, you can substitute a portion of the Miracle Whip with regular mayonnaise. For an extra kick, a small squeeze of fresh lemon juice or a dash of apple cider vinegar can brighten the flavors. Don’t be afraid to taste and adjust the dressing to your personal preference before adding it to the rest of the ingredients.
The Pecans: A Crunchy Finale
Chopped pecans add a delightful nutty flavor and a much-needed textural contrast. Toasting the pecans lightly in a dry skillet for a few minutes before adding them to the salad can significantly enhance their flavor and aroma. Be sure to watch them closely, as nuts can burn quickly. If pecans aren’t your favorite, toasted walnuts or even slivered almonds make excellent substitutes. For those with nut allergies, sunflower or pumpkin seeds can provide a similar crunch.
Creative Variations to Explore
One of the joys of cooking is the freedom to customize and experiment. While the classic Grilled Chicken & Apple Salad recipe is perfect as is, here are some ideas to inspire your culinary creativity and tailor the dish to your taste or what you have on hand:
- Different Proteins: Instead of grilled chicken, consider grilled shrimp for a seafood twist, or thinly sliced turkey breast for a lighter option. For a vegetarian version, grilled halloumi cheese or chickpeas would be excellent additions.
- Add More Veggies: Boost the nutritional content and crunch by incorporating finely diced celery, bell peppers (red or yellow for sweetness), or even a handful of fresh spinach or arugula for a peppery kick.
- Fruitful Additions: Grapes, dried cranberries, or a few thin slices of mandarin oranges can further enhance the sweet aspect of the salad, offering different textures and bursts of flavor.
- Spice It Up: If you enjoy a bit of heat, a pinch of red pepper flakes in your chicken seasoning or a touch of hot sauce in the dressing can add an exciting dimension.
- Herbaceous Notes: Fresh herbs like chopped parsley, dill, or chives can introduce a lovely freshness and aromatic complexity to the salad.
- Cheese Please: Crumbled feta cheese or a sprinkle of shredded cheddar can add a savory, creamy, or sharp element that pairs well with the other ingredients.
