Hi everyone! I’m Aimee from Like Mother Like Daughter. I’m thrilled to join Amber again for her Healthy Food, Healthy You month on Dessert Now, Dinner Later. I previously shared an easy no-bake cheesecake here, which was indulgent, but today’s recipe leans toward comfort with healthier ingredients. I’ll admit I have a big sweet tooth, but now that I’m pregnant with my first child I’m focusing more on nutritious meals that support both my health and my baby’s.

Sometimes a mama-to-be still needs comfort food, and a healthy dinner doesn’t mean giving that up. This chicken (or turkey) noodle soup is a satisfying blend of comforting flavor and wholesome ingredients. It’s a brothy, non-creamy soup loaded with vegetables. I used leftover smoked turkey, but cooked chicken works equally well. Brothy soups like this are an excellent, nutrient-rich option for chilly days.

Chicken Noodle Soup

Ingredients
- 1 cup celery, chopped
- 1 cup carrots, chopped
- ½ cup onion, chopped
- 10-12 cups water
- 3 Tbsp low sodium chicken bouillon
- ¼ tsp ground black pepper
- ½ Tbsp Italian seasoning
- 2 bay leaves
- 3 cups chicken or turkey, shredded and cooked
- 8 oz egg noodles
- 2 Tbsp all-purpose flour
Instructions

Place the chopped celery, carrots and onion into a large pot. Add the water, chicken bouillon, black pepper, Italian seasoning, and bay leaves.

Bring the mixture to a boil over medium-high heat.

Reduce the heat slightly and simmer for about 25 minutes. (If using raw chicken, you can cook it in the broth during this step.)

Add the cooked, shredded chicken or turkey and the egg noodles to the pot.

Cook for about 10 minutes, or until the noodles are tender according to package directions.

Remove and discard the bay leaves.

Whisk the flour with 3 tablespoons of water in a small bowl to make a thin paste.

Stir the flour mixture into the soup and simmer a couple more minutes to slightly thicken the broth.

Serve the soup hot with bread or crackers on the side. Enjoy!
