A Symphony of Flavors and Textures in Every Spoonful
The star of the show, roasted red peppers, provides a distinct smoky sweetness that forms the foundational backbone of the rich broth, infusing it with a vibrant, complex character. This isn’t just a simple chicken broth; it’s a deeply aromatic base that cradles tender pieces of chicken and apple sausage. The sausage, with its subtle sweetness and savory notes, perfectly complements the peppers, adding a lean protein that is both satisfying and full of flavor. Then there’s the orzo pasta – its tiny, rice-like shape makes it an excellent vehicle for absorbing all those delicious broth flavors, adding a delightful chewiness to every bite without making the soup overly heavy. Ingredients
- 12 oz package Aidells Chicken & Apple Smoked Chicken Sausage, (approximately 4 links) cut in half width-wise & then sliced
- 1 Tbsp olive oil
- ½ medium onion, finely diced
- 2 cloves garlic, minced
- 2 red peppers, roasted, peeled & finely sliced*
- 2 bay leaves
- 6 cups chicken broth, (for rich flavor, I recommend mixing hot water with Better Than Bouillon Chicken Base)
- ⅔ cup orzo pasta
- 1 ½ tsp dried parsley
- 2 Tbsp basil, chopped (fresh or Gourmet Garden Paste works wonderfully)
- Salt & Pepper, to taste
- Optional: Serve with a sprinkle of shredded parmesan cheese
Instructions
-
In a large non-stick stock pot, brown the chicken and apple sausage slices over medium-high heat for approximately 5 to 6 minutes, until nicely caramelized and lightly crisped. Remove the cooked sausage and transfer it to a separate bowl, setting it aside.
-
Add the olive oil to the now-empty stock pot and heat over medium-high heat. Add the finely diced onion and sauté for about 5 minutes, or until the onions become translucent and softened. Stir in the minced garlic and cook for another minute until it becomes fragrant, being careful not to let it burn.
-
Introduce the sliced roasted red peppers, bay leaves, and chicken broth to the pot. Bring the mixture to a rolling boil, then reduce the heat to a gentle simmer. Cover the pot with a vented lid and allow it to simmer for 15 minutes, letting all the wonderful flavors meld beautifully into the broth.
-
Carefully remove and discard the bay leaves from the soup. Increase the heat to bring the mixture back to a boil. Add the orzo pasta, dried parsley, and the browned chicken sausage back into the pot. Cook the orzo for approximately 10 minutes, or according to the package directions, until it is tender yet still al dente.
-
Finally, stir in the fresh or paste basil. Season the soup generously with salt and freshly ground black pepper to taste. Ladle the hot soup into bowls and serve immediately. For an extra touch of deliciousness and richness, sprinkle with shredded parmesan cheese, if desired.
Recipe Notes: Roasting Red Peppers at Home
*To achieve perfectly roasted red peppers at home for this soup: Begin by thoroughly rinsing your red peppers. Using a gas stovetop burner or a gas grill on medium-high heat, carefully char each side of the pepper. Rotate them frequently until the skin is entirely black and blistered, and the pepper itself has softened and slightly shriveled. Immediately transfer the charred peppers into a zip-top plastic bag and seal it for about 5 minutes. The steam trapped inside will help loosen the skin, making it easier to peel. Once cooled slightly, carefully peel off and discard the charred skin. Slice open the peppers, remove the seeds, white veins, and stems, and then slice the roasted pepper flesh thinly, ready to be added to your flavorful soup.
For a quicker alternative to roasting your own, you can always use high-quality jarred roasted red peppers. Simply drain them well and slice as directed in the recipe.

Tips for Elevating Your Roasted Red Pepper Soup Experience
While the recipe for this comforting soup is fantastic as written, a few extra tips and tricks can help you tailor it to your personal preferences, enhance its flavors, and ensure maximum enjoyment every time you prepare it.
Ingredient Enhancements and Clever Substitutions
- Sausage Variations: If chicken and apple sausage isn’t readily available or you prefer a different flavor profile, feel free to experiment with other lean sausages. Options like turkey sausage, a mild Italian chicken sausage, or even a spicy Italian chicken sausage can add a delightful kick. For those seeking a vegetarian or vegan option, consider using a high-quality plant-based sausage alternative or simply loading up on more vibrant vegetables like zucchini or bell peppers.
- Broth Quality Matters: The quality of your chicken broth significantly impacts the soup’s overall depth and richness. Opt for a low-sodium, high-quality chicken broth or a savory bone broth for added nutritional benefits and a more profound taste. Using a concentrated chicken base, such as “Better Than Bouillon,” is an excellent way to control the salinity and infuse the soup with an incredibly rich, homemade flavor.
- Fresh Herb Power: While dried parsley is convenient and works well, a sprinkle of fresh chopped parsley or basil just before serving can add a vibrant burst of freshness, a beautiful green garnish, and an aromatic lift that brightens the entire dish.
- Boosting the Greens: For an extra dose of nutrients and color, stir in a generous handful of fresh spinach, baby kale, or chopped Swiss chard during the last few minutes of cooking. Allow the greens to wilt gently into the hot broth, adding another layer of wholesome goodness.
Perfect Serving Suggestions and Ideal Pairings
This hearty soup is incredibly satisfying and can easily stand alone as a complete meal. However, it also pairs wonderfully with a few simple accompaniments that enhance the dining experience:
- Crusty Bread: A warm, crusty baguette, a rustic loaf of artisanal bread, or even some homemade sourdough is absolutely perfect for soaking up every last drop of the rich, flavorful broth.
- Garlic Knots or Breadsticks: These add another layer of savory garlic flavor and a satisfying crunch that complements the soft texture of the soup beautifully.
- Simple Side Salad: A light, crisp green salad tossed with a zesty vinaigrette dressing can provide a refreshing contrast, cutting through the richness of the soup and adding a touch of freshness.
- Enhanced Cheese Garnish: Beyond the suggested Parmesan, a dollop of creamy fresh ricotta cheese swirled into each bowl or a crumble of tangy feta cheese can introduce a lovely creamy texture or a delightful salty kick.
Storage and Reheating for Delicious Leftovers
As mentioned, this soup makes fantastic leftovers, often tasting even better the next day as the flavors continue to meld! To store, allow the soup to cool completely to room temperature before transferring it to airtight containers. It will keep well in the refrigerator for up to 3-4 days. When reheating, you might notice that the orzo has absorbed most of the liquid, resulting in a thicker consistency. You can easily thin it out to your desired preference by adding a splash of extra chicken broth, water, or even a little milk or cream for added richness, then reheat gently on the stovetop or in the microwave until heated through.
For longer storage, this soup freezes beautifully. To maintain the best texture, I recommend freezing the soup without the orzo, or cooking the orzo separately and adding it fresh when you serve. Freeze in individual portions for quick and convenient future meals. Thaw overnight in the refrigerator and reheat as directed, adjusting liquid as needed.
The Wholesome Appeal: Discover the Nutritional Benefits
This soup isn’t just a treat for your taste buds; it’s also packed with wholesome ingredients that contribute to a balanced and nutritious meal. The lean chicken and apple sausage provides an excellent source of protein, crucial for muscle repair, growth, and prolonged satiety, helping you feel full longer. Red peppers are nutritional powerhouses, rich in vitamins A and C, which are potent antioxidants that bolster immune health and promote healthy skin. Onions and garlic, foundational aromatics in this dish, offer various health benefits, including anti-inflammatory and immune-boosting properties. The chicken broth contributes essential hydration and beneficial minerals, while the orzo pasta provides complex carbohydrates for sustained energy throughout your day. By enjoying a bowl of this delicious soup, you’re treating your body to a flavorful, nutrient-dense meal that supports overall well-being and provides true comfort.
