McCormick Taco Casserole Recipe: Quick Weeknight Mexican Bake

Some evenings I’m simply worn out and cooking feels like too much—especially when the kids are bouncing off the walls and my husband isn’t home yet. In those chaotic moments, I often wish we could just eat out. Then I remember that “homemade” doesn’t always mean starting from scratch.

With a packet of McCormick Taco Seasoning Mix, some browned ground beef and a few pantry cans—pinto beans, corn and tomato sauce—we put together a fast, satisfying casserole that tastes like a home-cooked meal without a lot of fuss.

Layer the seasoned beef and beans with tomato sauce and corn, top with shredded cheddar and a handful of coarsely crushed tortilla chips, then bake until the cheese is melted. It’s quick, hearty and a family favorite on busy weeknights.

My kids loved eating it with chips—when they saw the dish they excitedly called it “jelly beans” and “chippies.” Even though they don’t always go for taco-flavored ground beef, they devoured this casserole. It’s a great way to make taco night feel new and fun.

We served ours with sour cream and sliced green onions. Black olives or chopped tomatoes also make great toppings if you want to add a fresh element.

Ingredients

  • 1 ½ lbs ground beef
  • 1 packet taco seasoning
  • 1 (16oz) can pinto beans, drained and rinsed
  • 1 (15oz) can tomato sauce
  • 1 (11oz) can corn, drained
  • 1 cup shredded cheddar cheese
  • 1 cup coarsely crushed tortilla chips

Instructions

  • Preheat oven to 400°F. Brown the ground beef in a large skillet over medium-high heat; drain any fat.
  • Stir in the taco seasoning, pinto beans, tomato sauce and corn. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes. Spoon into a 2‑quart baking dish. Top with shredded cheddar and crushed tortilla chips.
  • Bake 5 to 10 minutes, or until the cheese melts. Serve with optional toppings such as sour cream, sliced green onions or black olives.
