Snowball Cookies are an enchanting holiday staple, celebrated for their delicate, melt-in-your-mouth texture and rich, buttery flavor. These delightful shortbread cookies, generously studded with crunchy pecans and elegantly rolled in a snowy blanket of powdered sugar, are a must-have for any festive occasion. Their irresistible charm makes them a beloved Christmas cookie, perfect for sharing with family and friends.
If you adore these buttery delights, you might also enjoy another similar cookie with a delightful twist: Almond Crescent Cookies offer a unique flavor profile while retaining that crumbly, tender texture we all love.

Embracing the Holiday Spirit with Snowball Cookies
There’s something truly magical about the holiday season, and nothing quite captures its essence like the aroma of freshly baked cookies filling your home. Snowball Cookies, with their pristine white coating and festive appeal, are not just a treat for the taste buds but also a feast for the eyes. They embody the warmth and joy of winter festivities, making them a perfect addition to any holiday cookie platter or as a thoughtful homemade gift.
These classic Christmas cookies are essentially perfect little spheres of buttery, nutty goodness. The name “Snowball Cookies” is quite fitting, as the generous coating of white powdered sugar mimics freshly fallen snow, adding to their whimsical holiday charm. This powdered sugar exterior is also where much of their sweetness comes from, with only a delicate hint of sweetness infused into the cookie dough itself, allowing the rich butter and nutty flavors to truly shine.
One of the secrets to their signature melt-in-your-mouth tenderness lies in using powdered sugar (also known as confectioners’ sugar) in the cookie dough, rather than granulated sugar. This finely milled sugar dissolves more readily, creating a softer, more delicate crumb that practically melts away the moment it touches your tongue, much like our popular Christmas Meltaway Cookies. Beyond texture, powdered sugar also helps prevent the cookies from spreading excessively during baking, ensuring they retain their charming spherical shape. You’ll be amazed at how simple these snowball cookies are to make, yielding a truly delicious result that will have everyone asking for more!

A Cookie of Many Names: Exploring Global Variations
While commonly known as Snowball Cookies, these delightful treats boast a fascinating array of aliases across different cultures and regions. You might encounter them as Italian Wedding Cookies, Russian Tea Cakes, Mexican Wedding Cookies, or Southern Pecan Butterball Cookies. Despite the varied names, the core concept remains wonderfully consistent: a tender, buttery, nutty shortbread cookie often dusted with powdered sugar.
The subtle differences between these variations typically involve the choice of nut – pecans are a classic, but walnuts, almonds, or even hazelnuts are frequently used. Sometimes, a dash of almond extract might be swapped for some of the vanilla to introduce a slightly different aromatic note. Regardless of the name or minor ingredient tweaks, the essence of these cookies endures: a delightful, crumbly, and profoundly buttery confection that brings joy with every bite.
The versatility of this recipe is one of its greatest strengths. Feel absolutely free to experiment with different nuts based on your preference or what you have on hand. Pecans offer a rich, buttery flavor, while walnuts provide a slightly more earthy taste. Almonds contribute a delicate sweetness, and pistachios can add a beautiful color and unique texture. For those with nut allergies or simply looking for a twist, you can even forgo the nuts entirely and incorporate mini chocolate chips or finely chopped dried cranberries for a different kind of deliciousness. The possibilities are truly endless, allowing you to customize this classic to suit any palate or occasion.

Achieving Perfect Snowball Cookies: Expert Baking and Freezing Tips
Crafting the perfect batch of Snowball Cookies is a rewarding experience, and with a few key tips, you can ensure your cookies are tender, flavorful, and beautifully presented every time:
- Accurate Flour Measurement is Key: For the most tender cookies, always measure your flour correctly. Begin by stirring the flour in its container to aerate it, then gently spoon it into your measuring cup. Level the cup with the flat back of a knife. This method prevents compacting the flour, which can lead to using too much and result in dense, dry cookies.
- Keep Cookie Dough Balls Small: Aim for uniformly sized cookie dough balls, roughly 1-inch in diameter. A #50 or #60 size cookie scoop (approximately 1 Tablespoon) is ideal for achieving this consistency. Snowball cookies are designed to be delicate, bite-sized treats, and they don’t spread or puff up significantly during baking, so maintaining a small size is crucial.
- Hand-Roll for Smoothness: Even if you use a cookie scoop, taking a moment to lightly round the dough balls with your hands will further smooth and refine their exterior. This simple step ensures a beautifully uniform shape and helps the powdered sugar coating adhere more evenly later.
- Do Not Over-Bake: This is perhaps the most critical tip for Snowball Cookies. They are delicate and prone to drying out if baked too long. The cookies are done when their bottoms are lightly golden brown. The tops may show a few small cracks, but they should remain pale. Never wait for the tops to brown, as this indicates they are already over-baked and will become overly dry and crumbly instead of melting in your mouth.
- The Double Powdered Sugar Roll: To achieve that iconic, pristine “snowball” appearance and maximum sweetness, roll the cookies in powdered sugar twice. The first roll should happen while the cookies are still warm, right out of the oven. At this stage, the warmth helps the sugar adhere and slightly melt onto the surface. After the cookies have cooled completely, roll them a second time. This final coating creates a beautiful, thick, and perfectly white exterior.
- Freezing for Future Enjoyment: Snowball Cookies freeze beautifully, making them an excellent make-ahead option for busy holiday seasons. To freeze, first allow the baked cookies to cool completely and apply both coatings of powdered sugar. Then, carefully pack the cookies in an airtight freezer-safe container. To prevent them from sticking together or breaking, separate each layer with a piece of wax paper or parchment paper. Avoid packing them too tightly. They can be frozen for up to two months, ready to be thawed and enjoyed whenever a craving strikes!

Yields: 32 cookies
Ingredients
Cookies:
- 1 cup (226 g) butter, (2 sticks) softened
- ½ cup (60 g) powdered sugar
- ¼ tsp salt
- 1 ½ tsp vanilla extract
- 2 ¼ cups (270 g) all-purpose flour, (stir, spoon, & level)
- 1 cup (112 g) chopped pecans
Extras:
- 1 cup (120 g) powdered sugar, for rolling
Equipment
- #60 Cookie Scoop
- Silicone Baking Mat
- Aluminum Half Sheet Tray (2 Pack)
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper or silicone baking mats. Set aside.
- In a stand mixer, cream the butter and powdered sugar until light and fluffy. Add the salt and vanilla extract. Mix well, scraping down the sides of the bowl. Gradually add the all-purpose flour and chopped pecans. Mix until just combined, being careful not to overmix.
- Scoop roughly 1 tablespoon of dough (using a #50 or #60 cookie scoop) and roll it into smooth, 1-inch balls with your hands. Place the formed cookies on the prepared baking sheets about an inch or two apart. (These cookies do not spread much during baking).
- Bake at 350˚F for 11-13 minutes, or until the bottoms of the cookies are lightly golden brown. The tops of the cookies may show slight cracks. It is crucial not to over-bake or wait for the tops to brown, as this will result in dry cookies.
- Remove the baking sheets from the oven and allow the cookies to cool on the sheets for just a few minutes, until they are warm enough to handle comfortably.
- While the cookies are still warm, place 1 cup of powdered sugar in a wide bowl or pie dish. Gently roll each cookie individually in the powdered sugar, ensuring it’s fully coated. Lightly shake off any excess sugar. Place the coated cookies on wire cooling racks to cool completely.
- Once the cookies have cooled completely to room temperature, repeat the coating process: roll each cookie in powdered sugar a second time. This creates a beautiful, thick, and lasting “snowy” layer.
Notes
Store finished cookies in an airtight container at room temperature for up to one week.
TO FREEZE: Allow cookies to cool completely and apply the second coating of powdered sugar. Pack the cookies in a freezer-safe container, separating each layer with wax paper to prevent sticking and breakage. Don’t pack the cookies too tightly. Freeze for up to 2 months. Thaw at room temperature before serving.
