  • In a small saucepan, combine the butter with the scraped vanilla bean pod. Cook over medium heat, stirring or whisking occasionally to prevent solids from burning, until the butter browns to an amber color and emits a distinct nutty aroma. This process creates the wonderful “beurre noisette” fundamental to financiers.
  • Immediately remove the pan from the heat and transfer the browned butter to a heat-proof bowl. This stops the cooking process and prevents it from burning. Set aside, keeping it warm.
  • In a medium bowl, thoroughly whisk together the almond flour, all-purpose flour, confectioner’s sugar, and fresh orange zest. Once combined, whisk in the egg whites until a smooth batter forms.
  • Gradually add the warm browned butter to the flour mixture, whisking it in after each addition until fully incorporated. Cover the surface of the batter directly with plastic wrap to prevent a skin from forming and refrigerate until thoroughly chilled, ideally for several hours or overnight. This chilling period is crucial for developing flavor and achieving the perfect financier texture.
  • Preheat your oven to 350°F (175°C). Prepare your financier molds by lightly spraying them with non-stick cooking spray or brushing them with a thin layer of melted butter. Place the prepared molds on a flat baking sheet for easy handling.
