Make your Peach Compote:

  • In a small saucepan, combine all the ingredients for the peach compote. Place over medium heat until the mixture comes to a boil, stirring occasionally. Reduce the heat to low and simmer for 30-40 minutes, or until the peaches are tender and the sauce has thickened. For a quicker thickening, you can add ½ teaspoon of cornstarch mixed with 2 tablespoons of water, stir it into the compote, and cook for an additional 10 minutes. Allow to cool completely.

Make your Crisp topping:

  • Combine all ingredients for the crisp topping in a medium bowl and stir until the melted butter has thoroughly coated everything. The mixture should be crumbly but not dry. If it’s a little dry, add a touch more butter, being careful not to add too much, as it could make the topping greasy. Taste test and savor the flavor.

Make your cupcakes:

  • In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
  • In a large bowl, beat together the melted butter and sugar on medium-high speed until the mixture is thick and well combined. Add the eggs one at a time, beating well after each addition.
