During my time working in a bustling grocery store bakery, M&M cookies were a staple. However, the method often felt like a shortcut: essentially chocolate chip cookies with a mere sprinkle of M&M’s on top. While still tasty, it always bothered me that each cookie didn’t boast a generous, even distribution of those colorful, candy-coated chocolates. I believed a true M&M cookie experience deserved more.

The Best M&M Cookies: A Perfect Chocolate Harmony

Years of baking and countless cookie batches later, I’ve perfected what I consider to be the ultimate M&M cookie. The secret? A harmonious blend of both classic chocolate chips and iconic M&M’s candies. This combination isn’t just about aesthetics; it’s about creating a complex flavor and textural profile that elevates the humble cookie to bakery-quality perfection.

Incorporating chocolate chips provides a smooth, melty chocolatey base that permeates every corner of the cookie. These chips melt beautifully, contributing to the cookie’s tender interior and rich flavor. Complementing this, M&M’s candies add their signature crunch and vibrant color, primarily on the surface, making each cookie visually appealing and offering a delightful textural contrast. You get the best of both worlds: deep, smooth chocolate and fun, candy-coated chocolate in one bite.

While options like M&M’s Minis or baking bits are available for more even distribution, I wholeheartedly recommend sticking with classic, full-sized M&M’s alongside your favorite chocolate chips. The larger candies create pockets of delightful crunch and their colorful shells truly pop, making these cookies a treat for both the eyes and the palate. This recipe leverages a slightly higher ratio of brown sugar to granulated sugar and an extra touch of vanilla, enhancing the chewiness and deep flavor profile that sets these cookies apart.

Soft, Chewy, or Crispy Cookies? Achieving Your Desired Texture

The beauty of this M&M cookie recipe lies in its versatility. You can easily adapt it to achieve your preferred texture, whether you crave a soft, melt-in-your-mouth cookie, a perfectly chewy one, or a crispier treat. Here are the key factors and simple adjustments to guide you:

  • Butter Temperature is Crucial: Always use butter that is soft enough to indent with a finger, but still firm and cool to the touch. This “room temperature” butter is essential for proper creaming with sugar, which incorporates air and creates a tender crumb. Avoid using melted butter, as it will cause the cookies to spread excessively, resulting in thin, greasy, and brittle cookies. If your butter is too soft, a quick 10-15 minute stint in the refrigerator can firm it up just right.
  • For Soft & Chewy Cookies: Bake your cookies until the edges are just barely golden brown and the centers still appear slightly under-baked and puffy. This often means removing them from the oven when they still look a little pale in the middle. The residual heat from the baking sheet will continue to cook them gently, resulting in that coveted soft and chewy interior. Allow them to rest on the hot baking sheet for 3-5 minutes before transferring to a wire rack. This brief resting period is vital for them to set without overbaking.
  • For Crispy Cookies: If you prefer a crispier cookie, simply extend the baking time by an additional 2-3 minutes past the recommended duration. Bake until the entire cookie, including the center, is golden brown and appears fully set. Keep a close eye on them to prevent burning. Once baked, transfer them immediately to a wire rack to cool completely, which will help them crisp up further.

Thick or Thin Cookies? Shaping Your M&M Masterpiece

Beyond texture, the thickness of your cookies significantly impacts the overall eating experience. Whether you prefer a robust, thick cookie or a delicate, thin one, a few simple adjustments to your dough and baking process will help you achieve it:

  • For Perfectly Thick & Puffy Cookies: Start by using a more generous amount of cookie dough, ideally about 2 tablespoons per cookie. When scooping, aim to shape the dough balls tall and round, rather than flattening them. This vertical structure encourages them to bake upwards, creating a thicker profile. For an extra boost of thickness, consider chilling the dough for 30-60 minutes before baking. Cold dough spreads less in the oven. Immediately after removing the baked cookies from the oven, use the back of a serving spatula or a round cookie cutter slightly larger than your cookie to gently push the edges inward, shaping them into a perfectly round and thick disk. This trick works wonders!
  • For Delicately Thin & Crispy Cookies: To achieve thinner cookies, use a slightly smaller portion of dough, roughly 1.5 tablespoons per cookie. You can also use butter that is marginally softer than room temperature (but not melted!) to encourage a bit more spread. Alternatively, after scooping the dough balls onto the baking sheet, gently press them down about one-third of the way with the palm of your hand or a flat-bottomed glass. This slight pre-flattening will help them spread out more evenly during baking.

Pro Tips for Making Flawless M&M Cookies: Your Baking Success Guide

Achieving bakery-quality M&M cookies is all about paying attention to a few key details. These professional tips will ensure your cookies are consistently delicious and picture-perfect:

  • Invest in a Cookie Dough Scoop: A cookie scoop is an invaluable tool for consistent baking. It ensures that each cookie is the same size, which means they will bake evenly and look uniform on your cooling rack. I highly recommend a #30 scoop (approximately 2 tablespoons) or a #40 scoop (approximately 1.5 tablespoons). Remember, a smaller number indicates a larger scoop. For the generously sized cookies pictured in this post, a #30 scoop was used.
  • Strategic M&M Placement: To ensure every cookie boasts those vibrant M&M colors, only mix about 1/2 cup of the candies directly into the dough along with the chocolate chips. Reserve the majority of your M&M’s for pressing onto the tops of the scooped dough balls right before baking. Be generous! As cookies spread, you want a beautiful display of candies and a burst of chocolatey crunch in every bite. When pressing, gently place them with your pointer fingers to maintain the dough ball’s round shape, which is key for thicker cookies.
  • Optimal Baking Sheet Spacing: Resist the urge to crowd your baking sheets. Instead of the typical dozen, I recommend baking no more than 8 cookies per standard sheet tray, spaced at least 3 inches apart. This generous spacing is crucial for several reasons. Firstly, it prevents cookies from merging into one another as they spread. Secondly, adequate space allows for even heat distribution, ensuring each cookie bakes consistently to that perfect soft-chewy texture without becoming too thin or unevenly cooked.
  • Flour Measurement Matters: Correctly measuring your flour is paramount. Do not scoop flour directly from the bag with your measuring cup, as this compacts it, leading to too much flour and dry, crumbly cookies. Instead, fluff the flour in its container with a spoon, then gently spoon it into your measuring cup until overflowing, and finally, level it off with the back of a knife. Alternatively, using a kitchen scale to measure by weight (grams) is the most accurate method.
  • Quality Ingredients: Using high-quality ingredients makes a noticeable difference. Opt for good quality butter, fresh eggs, and a vanilla extract with rich flavor. These components are the backbone of your cookie’s taste profile.

I genuinely hope you cherish this M&M cookie recipe as much as I do! Its unique combination of flavors, achieved through a generous amount of vanilla and a carefully balanced ratio of brown sugar to granulated sugar, results in an incredibly rich, moist, and flavorful cookie that will become a staple in your home.

  • 1 ½ cups (336 g) M&M’s candies, divided

Equipment

  • Serving Spatula
  • #30 Cookie Scoop

  • Aluminum Half Sheet Tray (2 Pack)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Line cookie sheet trays with parchment paper or a silicone baking mat.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and both sugars. Cream until light and fluffy. Add the eggs and vanilla. Mix well and scrape the bowl with a spatula.
  3. In a separate bowl, stir together the flour, salt, and baking soda. Add dry ingredients to the butter mixture until just combined, about 1 minute.
  4. Add the chocolate chips and 1/2 cup of the M&M’s. Mix gently on low speed until just combined, about 30 seconds.
  5. Scoop cookie dough balls (about 2 Tbsp each) and place onto prepared baking sheet about 3-inches apart. (8 cookies per tray.) Generously press M&M’s into the tops of cookie dough balls (about 6-7 M&M’s per cookie) maintaining a round shape.
  6. Bake at 350˚F for 8-10 minutes until edges are just barely starting to brown. For thicker cookies, press edges inward with a cookie spatula while still warm. Allow to cool for 1-2 minutes on the tray, then transfer to a wire rack to cool completely.
