  • 1 ½ cup granulated sugar
  • 3 large eggs at room temperature
  • 1 tablespoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 1 cup Sour Cream full fat, at room temperature
  • ½ cup whole Milk at room temperature
  • 2 ½ cups Cake Flour *see note below for measuring
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • 1 ½ teaspoons kosher salt

For the vanilla buttercream:

  • 1 ½ cups unsalted butter softened, at room temperature
  • 6 ¼ cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/3 cup heavy cream cold

Instructions

For the Cake Layers:

  • Preheat oven to 350°F (175°C) for either convection or regular baking. Prepare two 9-inch round cake pans by spraying with non-stick spray and lining the bottoms with parchment paper circles.
  • Ensure all cake ingredients are at room temperature. Sift together the cake flour, baking powder, baking soda, and salt in one bowl. In another separate bowl, whisk together the sour cream and milk. Set both aside.
  • In the bowl of a stand mixer (with paddle attachment) or using a hand mixer, cream the room temperature butter and granulated sugar until the mixture is light and fluffy.

  • Allow the baked cake layers to cool in their pans for 10 minutes. Then, carefully invert them onto a wire rack, remove the parchment paper, and let them cool completely to room temperature before frosting.

To make the Vanilla Buttercream:

  • In the bowl of a stand mixer fitted with the paddle attachment, beat the softened butter on medium-high speed until it is smooth and slightly lighter in color.
  • Reduce mixer speed to low and gradually add the powdered sugar, about ½ cup at a time, ensuring each addition is fully incorporated before adding more.
  • Once all the sugar is incorporated, add the vanilla extract (and optional vanilla bean seeds) and mix on medium speed until the buttercream is light and smooth.
  • Switch to the whisk attachment. On medium-low speed, slowly pour in the cold heavy cream. Increase speed to high and whisk until the buttercream is light, fluffy, and visibly white.
  • Pro Tip: To achieve an extra-smooth, bubble-free finish, switch back to the paddle attachment and mix the buttercream on low speed for 2-3 minutes. This will make the buttercream slightly denser but will give a flawless finish to your frosted cake.

Assemble and Decorate the Cake:

  • Place the first cooled cake layer onto a cake plate, stand, or cake board on a turntable. You can use a small dab of frosting to “glue” the cake board to the turntable and the first cake layer to the board for stability.
  • Spread about 1 cup of vanilla buttercream evenly over the top of the first cake layer using an offset spatula.

  • Spread another 1 cup of buttercream smoothly over the top of the second layer. Then, apply a thin layer of buttercream around the sides of the cake, pressing it into any gaps between layers. This is the “crumb coat.” Smooth it out lightly. If adding a filling, chill the cake after adding the second layer (and piping a buttercream dam) before applying the crumb coat. Chill the crumb-coated cake for 30 minutes to set.
  • Spread the remaining buttercream generously over the top of the chilled cake, working it towards the edges and over the sides. Smooth the frosting over the sides using an offset spatula or a bench scraper for a clean finish. Create decorative swirls on top with your spatula, or achieve a perfectly smooth top with a large offset spatula.
  • For decoration, use a closed star tip (like Ateco 845) to pipe rosettes or other decorative elements as desired. Finish with sprinkles if you wish!
