  • 5 sprigs basil on the stem
  • 2 sprigs oregano on the stem
  • 3 sprigs thyme on the stem
  • ¼ teaspoon dried sage

Instructions

  • In a large, heavy-bottomed pot or Dutch oven, gently sauté the chopped onion and minced garlic in olive oil over medium-low heat. Stir frequently until the onion becomes translucent and softened, about 8-10 minutes. Be careful not to brown the garlic. Once aromatic, add the whole Italian tomatoes and crush them by hand directly into the pot. This hands-on approach creates a wonderful, rustic texture in the sauce. Stir in the tomato paste, chicken broth, the fresh herb sprigs (basil, oregano, thyme), bay leaf, salt, and freshly ground black pepper. Bring the mixture to a gentle simmer.
  • Reduce the heat to low and allow the sauce to simmer uncovered for approximately two hours. In my updated version, I’ve simplified this by using whole sprigs of fresh herbs on the stem.
