Sarah’s Salad from Utah’s Lion House combines crisp iceberg lettuce, sweet peas, bacon, green onions, and Swiss cheese tossed in a simple, lightly sweet dressing.

Earlier this year I attended a blog conference and a small group of us went to The Lion House Pantry for dinner. The meal was served banquet-style and felt like a comforting home-cooked dinner. The first course was Sarah’s Salad — incredibly simple, yet full of flavor.

The salad centers on crunchy iceberg lettuce, but you can boost nutrition by adding baby spinach or mixed greens if you prefer. It features bright, thawed peas, cubes or strips of Swiss cheese, chopped bacon, and sliced green onions. The dressing is straightforward—creamy with a touch of sweetness—meant to complement the salad ingredients rather than overwhelm them.

I love salads that combine bacon, cheese, and peas—the textures and flavors play so well together. The dressing is a balanced mix of mayonnaise, Miracle Whip, sugar, and seasonings, adding just enough sweetness and creaminess to tie everything together.

This salad makes a light, satisfying side for spring and summer meals. It pairs especially well with grilled chicken, kebabs, or any outdoor barbecue fare. It’s a fresh, easy option to bring to potlucks or gatherings.

Consider this salad for your next Spring or Summer get-together—simple to prepare, visually appealing, and widely enjoyed.
