Essential Ingredients for Your Fluffy Banana Pancakes

This minimalist banana pancakes recipe relies on everyday pantry staples, and the best part is it all comes together effortlessly in a single bowl. You’ll be surprised at how much flavor and fluffiness you can achieve with so few components.

Ingredients laid out for making banana pancakes.
  • Ripe Bananas, Mashed: The star of the show! Overripe bananas (the ones with plenty of brown spots) are key here. They are naturally sweeter and much easier to mash, providing both the characteristic banana flavor and essential moisture for a tender pancake.
  • Pancake Mix: This is your secret weapon for speed and consistency. While I often recommend a buttermilk variety for an extra rich flavor, a regular pancake mix works perfectly, especially if you want to keep the recipe dairy-free (just ensure your chosen mix is dairy-free if this is a concern). The leavening agents are already built-in, guaranteeing a consistent rise.
  • Ground Cinnamon: A touch of cinnamon transforms these into “banana bread pancakes.” It adds a warm, inviting spice that complements the banana beautifully, elevating the overall flavor profile.
  • Water: Used to thin the batter to the perfect consistency. The amount might vary slightly depending on your pancake mix and the moisture content of your bananas, so it’s best to add it gradually.

Crafting the Perfect Banana Pancakes with Pancake Mix

Using a good quality pancake mix makes this banana pancakes recipe incredibly reliable and simple. The pre-measured leavening agents in the mix ensure a consistent rise and a wonderfully light, fluffy texture without the need for eggs or extensive effort. This convenience makes these easy banana pancakes perfect for any day of the week, from a quick weekday breakfast to a relaxed Sunday brunch.

The mashed bananas play a dual role here: they act as a natural binder, helping the pancakes hold their shape, and they infuse the batter with incredible moisture, resulting in an exceptionally tender and soft pancake. It’s truly the best combination for quick, delicious breakfast magic!

Step-by-Step Guide: How to Make Fluffy Banana Pancakes

Making these delightful banana pancakes is a straightforward process. Follow these simple steps for perfect results every time.

Steps to make banana pancakes recipe with a pancake mix.
  1. Prepare the Bananas: Start by placing your ripe bananas in a large mixing bowl. The riper they are, the easier they’ll be to mash and the sweeter your pancakes will be.
  2. Mash the Bananas: Using a fork, thoroughly mash the bananas until they reach a lumpy, somewhat smooth consistency. A few small lumps are perfectly fine and will add to the texture of the pancakes.
  3. Combine Dry and Wet Ingredients: To the mashed bananas, add the pancake mix, ground cinnamon, and start with about half of the recommended water.
  4. Whisk the Batter: Whisk all the ingredients together until just combined. Be careful not to overmix; a few small lumps in the batter are completely normal and often lead to fluffier pancakes. If the batter seems too thick, add the remaining water gradually until it reaches a pourable but still thick consistency. Set the batter aside for a few minutes while you heat your griddle.
Cooking banana pancakes on an electric griddle.
  1. Heat the Griddle: Preheat your electric griddle to 350°F (175°C), or heat a large non-stick frying pan over medium heat. Lightly grease the cooking surface with cooking spray or a small amount of butter/oil.
  2. Cook the Pancakes: Pour or scoop ¼ cup of batter for each pancake onto the hot griddle, ensuring there’s enough space between them to prevent sticking. Cook for approximately 2-3 minutes, or until the edges are set, the bottom is golden brown, and small bubbles start to appear on the surface of the pancakes.
  3. Flip and Finish: Gently flip each pancake and cook for another 1-2 minutes on the other side, until golden brown and cooked through. Transfer the cooked pancakes to a clean plate and cover them loosely with a kitchen towel to keep them warm while you finish cooking the remaining batter.

Tip for Extra Fluffiness: For the absolute fluffiest banana pancakes, allow your batter to rest for 3–5 minutes before you start cooking. This brief resting period gives the leavening agents in the pancake mix time to fully hydrate and activate, resulting in a lighter, airier pancake.

Serving and Storing Your Banana Pancakes

These banana pancakes are incredibly versatile and can be enjoyed in many ways, and they store wonderfully for future quick breakfasts.

  • To Serve: Enjoy these pancakes warm, stacked high, and garnished with fresh banana slices and a generous drizzle of pure maple syrup. For an extra treat, consider adding a dollop of whipped cream, a sprinkle of chocolate chips, fresh berries, or a handful of chopped nuts for added crunch.
  • To Store: Allow any leftover banana pancakes to cool completely. Then, place them in an airtight container and store them in the refrigerator for up to 7 days. They’re perfect for a quick grab-and-go breakfast during the week!
  • To Reheat: Reheating is simple! Pop them in the microwave for 30-60 seconds, or toast them lightly in a toaster or toaster oven until warmed through and slightly crispy.
  • To Freeze: For longer storage, these pancakes freeze beautifully. Ensure they are completely cool, then stack them with small pieces of parchment paper between each pancake to prevent sticking. Place the stack in a freezer-safe zip-top bag or an airtight container. Label with the date and freeze for up to 3 months. Thaw frozen pancakes in the microwave or toaster, ensuring they are reheated sufficiently before serving.

Recipe Notes & Expert Tips for Perfect Banana Pancakes

Achieving consistently perfect, fluffy banana pancakes is easy with a few simple tricks up your sleeve. Keep these tips in mind as you cook:

  • Embrace Very Ripe Bananas: The browner and spottier your bananas are, the better! These overripe fruits are not only naturally sweeter, reducing the need for added sugar, but they also mash more easily and contribute more moisture and intense banana flavor to your pancakes.
  • Maintain a Thick Batter: Resist the urge to add too much water. A batter that is too thin will result in flat, less fluffy pancakes. Start with the recommended amount of water (or ¼ cup if adjusting) and add more only as absolutely needed, aiming for a thick, pourable consistency.
  • Cook on Medium Heat: Patience is key! Cooking pancakes on medium heat ensures they cook evenly through the center without burning the outside. A griddle temperature of 350°F (175°C) is generally ideal. If your pan smokes or your pancakes brown too quickly, lower the heat.
  • Flip Gently and Once: For the lightest and fluffiest pancakes, try to flip them only once. Wait until you see firm edges and plenty of bubbles appearing on the surface before gently sliding your turner underneath and flipping. Excessive flipping can deflate your pancakes.
  • Don’t Overcrowd the Griddle: Give your pancakes space to breathe! Cooking too many at once can lower the griddle temperature and cause them to steam rather than properly brown, impacting their texture.
  • Use a Consistent Scoop: For uniform pancakes that cook at the same rate, use a ¼-cup measuring cup or an ice cream scoop to portion out your batter.

Experience Banana Bread Pancakes Flavor with Just Cinnamon

One of the most appealing aspects of these simple banana pancakes is their incredible flavor profile, which remarkably mimics that of classic banana bread. Thanks to the natural sweetness and rich aroma of very ripe bananas, combined with the warm, comforting spice of cinnamon, each bite is cozy and deeply satisfying. This humble recipe truly delivers a gourmet experience with minimal effort.

If you’re eager to enhance that delightful banana-bread vibe even further, you can certainly experiment with a few optional additions:

  • A Pinch of Nutmeg: Just a tiny dash of ground nutmeg can deepen the warm spice notes, adding another layer of complexity that’s often found in traditional banana bread recipes.
  • Chopped Walnuts or Pecans: For a pleasant textural contrast and a nutty richness, fold in about a quarter to half a cup of finely chopped walnuts or pecans into the batter. This adds a delightful crunch that many love in banana bread.
  • A Splash of Vanilla Extract: A half teaspoon of pure vanilla extract can brighten and round out all the flavors, adding a subtle warmth and aroma that makes these pancakes even more irresistible.

Even with these tempting additions, remember that these banana pancakes remain utterly delicious and perfectly balanced with just the original four ingredients. The core recipe is a testament to the power of simplicity!

Ultimately, these easy banana pancakes are proof that a truly satisfying breakfast doesn’t need to be complicated or time-consuming. With just mashed bananas, a reliable pancake mix, a hint of cinnamon, and water, you can create a stack of fluffy, comforting, naturally egg-free, and incredibly delicious pancakes that will brighten any morning. Yields8 pancakes

Ingredients

  • ¾ cup (210 g) mashed banana, (about 2 small bananas)
  • 1 cup (135 g) pancake mix, dry
  • ½ tsp ground cinnamon
  • ½ cup (120 ml) water

Equipment

  • 6-Quart Steel Mixing Bowl
  • Nylon Whisk
  • Presto Electric Griddle
  • Turner

Instructions

  • In a large bowl, mash bananas with a fork. (I weigh them so I don’t have to measure them in a cup. If you don’t have a kitchen scale, measure them out.) Add the pancake mix, cinnamon, and water. Whisk until combined; some lumps are ok. Set aside.
  • Heat griddle to 350˚F. Grease with cooking spray. (Alternately heat a large non-stick pan over medium heat. Grease with cooking spray.)
  • Make pancakes with ¼ cup of batter each, leaving space between each pancake so they don’t stick together. Cook until the pancakes are set at the edges, brown on the bottom, and starting to bubble on top about 2-3 minutes.
  • Then flip and cook 1-2 minutes more until golden brown and cooked through. Transfer pancakes to a clean plate and cover with a kitchen towel to keep warm. Serve warm with banana slices and maple syrup.

Notes

  • Tip for extra fluffiness: Let the batter rest for 3–5 minutes before cooking. This allows the pancake mix to fully hydrate.
  • To Store: Place banana pancakes in an airtight container in the refrigerator for up to 7 days. Reheat pancakes in the microwave or toaster.
  • To Freeze: Make sure pancakes are completely cool before stacking inside of a freezer-safe zip-top bag or container with parchment paper separating each layer. Label and freeze for up to 3 months. Thaw in the microwave or toaster and make sure to reheat sufficiently.
