Welcome to the ultimate guide for creating the most delectable and effortlessly easy carrot cake you’ll ever taste! This recipe promises a moist, perfectly-spiced cake crowned with the BEST cream cheese frosting. Whether you prefer it pure and simple or adorned with your favorite additions, this cake is guaranteed to become a cherished classic in your baking repertoire.

Discover the Magic of a Truly Easy Carrot Cake Recipe

While many associate carrot cake with spring celebrations like Easter, its comforting warmth and delightful flavors make it a beloved dessert year-round. This iconic cake has countless variations, from minimalist versions focusing solely on carrots and aromatic spices, to more elaborate “kitchen sink” creations bursting with nuts, raisins, and coconut. Our recipe strikes a perfect balance, offering a simple yet incredibly flavorful foundation that can be enjoyed as-is or customized to your heart’s content.

What sets this particular carrot cake apart is its exceptional moisture and rich spice profile. We’ve meticulously crafted the recipe to ensure a tender crumb that melts in your mouth, complemented by a harmonious blend of warm spices. In a subtle twist, we’ve incorporated crushed pineapple to enhance the cake’s moistness and add a delicate tang, partially substituting for oil. However, for those who prefer the traditional approach, you can easily use all oil or even applesauce instead of pineapple, ensuring this recipe caters to every preference.

The Versatility of the Best Carrot Cake

One of the most appealing aspects of carrot cake is its incredible adaptability. Every baker seems to have their own unique take, and that’s precisely what makes it such a timeless dessert. Your grandmother might have favored walnuts and raisins, while you might lean towards the tropical notes of pineapple and coconut. This recipe provides a fantastic base that can be transformed with your preferred fillings and flavors, allowing you to create a truly personalized dessert experience.

Believe it or not, despite my passion for baking, this might be one of the few times I’ve made a full-sized layered carrot cake for my husband, who considers it his absolute favorite! In the past, my creations have often been smaller-scale delights like these Coconut Carrot Cupcakes, playful Carrot Cake Whoopie Pies, or decadent Cream Cheese Marbled Carrot Bars. Crafting a magnificent layered cake is always a joy, and it brought back fond memories of my years decorating cakes in a bakery. Achieving that simple yet elegant swirl on top and scalloped edges was a breeze with the help of a cake decorating comb, making the presentation as delightful as the taste.

The Unrivaled Cream Cheese Frosting

No carrot cake is complete without its iconic companion: cream cheese frosting. And let me state with absolute confidence, this recipe features the BEST cream cheese frosting you will ever make. It is my all-time favorite! Unlike many overly sweet frostings, ours is perfectly balanced, allowing the subtle tang of cream cheese to shine through. Its smooth, rich texture spreads effortlessly and pipes beautifully, making it an absolute dream to work with. This exquisite frosting is truly the crowning glory that transforms a good carrot cake into an unforgettable one, solidifying this easy carrot cake recipe as an absolute winner.

Yields: 12 – 15 servings

Ingredients

For the Cake:

  • 2 ½ cups (300 g) all-purpose flour
  • 1 ¼ tsp baking powder
  • 1 tsp baking soda
  • 1 ¼ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • ½ tsp salt
  • 1 lb (454 g) carrots, shredded (about 3 cups, or slightly less)
  • 1 ½ cups (300 g) granulated sugar
  • ½ cup (100 g) brown sugar, gently packed
  • 4 large eggs
  • 1 cup (237 ml) oil (vegetable/canola)
  • 8 oz (227 g) canned crushed pineapple, with juices (do NOT drain)

For the BEST Cream Cheese Frosting:

  • 16 oz (452 g) block-style cream cheese (two 8-oz blocks), cold
  • 1 cup (226 g) unsalted butter (2 sticks), room temperature
  • 2 cups (240 g) powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Thoroughly grease and flour two 9-inch round baking pans. Ensure every crevice is covered to prevent sticking. Set these prepared pans aside.
  2. In a medium-sized bowl, meticulously whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground cloves, and salt. This step ensures an even distribution of leavening agents and spices throughout the cake. Set this dry mixture aside.
  3. Prepare the carrots: Peel them if you prefer a smoother texture, then trim the ends. Grate or shred the carrots using a food processor for speed and consistency, or by hand with a box grater. Aim for about 3 cups of finely shredded carrots.
  4. Using a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), combine the granulated sugar, brown sugar, and eggs. Beat on medium-high speed until the mixture is thoroughly combined, light, and slightly fluffy – this usually takes a few minutes.
  5. Reduce the mixer speed to medium. Gradually add the oil in a slow, steady stream while the mixer is running. Continue mixing until the batter becomes pale in color and well emulsified.
  6. Gently fold in the crushed pineapple (with its juices – do not drain!) and the shredded carrots. Mix until they are just incorporated. The pineapple adds an extra layer of moisture and a subtle tangy sweetness that truly elevates the cake.
  7. Remove the bowl from the mixer. By hand, carefully fold in the dry ingredients mixture until there are no more visible streaks of flour. Be very careful not to over-mix, as overworking the batter can lead to a dense, tough cake.
  8. Divide the batter evenly between the two prepared baking pans. Bake in the preheated oven for approximately 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Baking times can vary, so start checking at the 30-minute mark.
  9. Once baked, allow the cakes to cool in their pans for about 10 minutes. Then, carefully invert them onto a wire cooling rack to cool completely. For easier frosting and to minimize crumbs, you can optionally double-wrap the cooled cake layers in plastic wrap and freeze them for several hours, or even overnight.
  10. MAKE CREAM CHEESE FROSTING: Begin by placing the cold block-style cream cheese in a large mixing bowl. Using a hand mixer or stand mixer, beat the cream cheese on medium speed until it is perfectly smooth and creamy, with no lumps.
  11. Gradually add the room temperature unsalted butter, two tablespoons at a time, to the cream cheese. Continue beating until the mixture is smooth, well-blended, and has a light, fluffy consistency.
  12. Add all of the powdered sugar and vanilla extract at once. Blend on low speed until just combined, then increase to medium-high and beat until the frosting is smooth and light. Be cautious not to over-beat, as this can make the frosting too soft. If the frosting becomes too soft, simply place it in the refrigerator or freezer for a short period until it firms back up to a workable consistency.
  13. Once the cakes are completely cool and the frosting is ready, frost your carrot cake as desired. For the best flavor and texture, store the frosted cake covered in the refrigerator. A dedicated cake container is ideal, but loosely covering it with plastic wrap works perfectly fine to keep it fresh.

Recipe Notes & Tips

  • Alternative Pan Size: This recipe can also be baked in a 9×13-inch pan. If using this size, the baking time may increase by 5-10 minutes. Keep the cake in the pan to cool completely, and for a sheet cake presentation, you might only need half the frosting recipe.
  • No Pineapple Option: If you prefer a classic carrot cake without pineapple, simply substitute the 8 oz (½ cup) of crushed pineapple with an equal amount of oil (totaling 1.5 cups oil) or applesauce for added moisture.
