Ingredients

Chipotle Chorizo Tacos:

  • 1 cup yellow onion diced
  • 2 tablespoons garlic cloves minced
  • 2 tablespoons olive oil
  • 3 chipotle chilis in adobo sauce minced
  • 2 teaspoons spice mix (see below)
  • 1 lb ground turkey
  • 3 chorizo sausages uncooked, casings removed (~3/5 lb)
  • ½ cup water or chicken broth
  • 2 teaspoons adobo sauce
  • 2 tablespoons tomato paste
  • Kosher salt to taste

Spice Mix for Tacos:

  • ¼ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon ancho chili powder
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground cumin

Mezcal Salad:

  • 2 radish thinly sliced
  • 1 small shallot thinly sliced
  • ½ cup green cabbage thinly sliced
  • 1 tablespoon cilantro chopped
  • ¼ teaspoon sugar
  • 1 tablespoon Mezcal use a good quality mezcal!
  • 1 ½ teaspoons fresh lime juice
  • 1 teaspoon olive oil
  • salt & pepper to taste

Sweet Potato Tortillas:

  • 2 cups masa harina 250g
  • ½ teaspoon kosher salt
  • ½ cup sweet potatoes cooked (e.g., microwaved), passed through a ricer while still warm (125g)
  • 1 ¼ cups warm water

Instructions

To Make Sweet Potato Tortillas:

  • In a medium bowl, combine the masa harina, salt, warm riced sweet potatoes, and 1 cup of the warm water. Using the back of a wooden spoon, mash all the ingredients together, smearing them against the side of the bowl. Continue until the sweet potatoes are evenly distributed and the mixture is homogenous.
  • Add the remaining ¼ cup warm water and use your hands to knead it into the mixture for about 2 minutes, until a smooth dough forms. If the dough feels too dry, add a tiny bit more warm water (1 teaspoon at a time). If it is sticky, add a little more masa harina or simply continue kneading to see if it becomes less sticky.
  • Divide the dough into 18 equal rounds, each weighing approximately 33g (1.2oz) – about the size of a golf ball. Keep these dough balls covered with a damp cloth at all times to prevent them from drying out.
  • Prepare your tortilla press by cutting one side and the bottom edge of a large Ziploc baggie, allowing it to open like a book. This will prevent the dough from sticking.
  • Preheat a griddle or large cast iron pan over medium heat.
  • Place one ball of dough inside the cut baggie on the tortilla press. Press down firmly to create a tortilla about 1/8th inch thick. You may need to experiment with the pressure and dough placement to achieve the desired thickness and shape. Alternatively, you can roll out the dough with a rolling pin, though it may take longer and result in less perfectly round tortillas.
  • Cook the tortilla on the preheated skillet until it easily releases from the surface (about 30-45 seconds). Flip it and cook for another 30 seconds on the second side. Continue cooking in 30-second increments, flipping as needed, until the tortilla has puffed up and is cooked all the way through, typically around 4 minutes total. As each tortilla finishes cooking, place it in a clean kitchen towel and keep it covered to stay warm and soft.
  • Repeat the process with the remaining dough balls. You can press all the tortillas in advance, separating them with plastic wrap, or press them one by one as you cook them.
  • Once all the tortillas are cooked, serve them immediately or place the stack in a sealed plastic baggie. Store them in the refrigerator and reheat gently in the microwave when ready to serve.

To Make Taco Filling:

  • In a large sauté pan or cast iron skillet, heat approximately 2 tablespoons of olive oil over medium heat. Add the diced onions and minced garlic, and cook gently until the onions become translucent and just begin to brown, approximately 5-7 minutes. Stir in the minced chipotle chilis and 2 teaspoons of the spice mix, cooking constantly for about 30 seconds until fragrant.
  • Add the ground turkey and chorizo (casings removed) to the same pan. Break up the meat with a spoon and cook thoroughly, until no pink remains and the meat is browned. Drain any excess fat if necessary. Stir in the water or chicken broth, adobo sauce, and tomato paste. Bring to a simmer and cook until the liquid has slightly reduced and the flavors have melded. Taste the filling and adjust the kosher salt as needed. Keep warm until serving.

Dress the Mezcal Radish Salad:

  • In a medium bowl, combine the thinly sliced radishes, shallots, green cabbage, fresh cilantro, mezcal, sugar, fresh lime juice, olive oil, a pinch of kosher salt, and a pinch of fresh black pepper. Toss thoroughly to coat all the ingredients evenly. Use your fingers to gently break apart any thinly sliced radishes that may have stuck together.
  • If you prepared the radishes and shallots ahead of time and stored them in water (which can mellow their bite), ensure you blot them very well on a paper towel before adding them to the bowl. This step is important for the dressing to properly adhere and for the slaw to maintain its crisp texture.

To make life incredibly easier, you can prep almost everything in advance! I highly recommend juicing your limes for both the salad dressing and any planned guacamole, preparing the taco filling, mincing enough onions for both the guacamole and taco filling, chopping your cilantro, making the sweet potato tortillas, and slicing the radishes, shallots, and cabbage (perhaps with a microplane for ultra-thin slices) all one day in advance. Store the sliced radishes and shallots in separate containers covered with cold water to maintain freshness and temper their sharpness. Store the chopped cilantro in a sealed ziptop baggie. Before serving, simply make the guacamole (which only takes about 5 minutes!), dress the salad (about 2 minutes), and then warm the taco filling and tortillas in the microwave or on the stovetop.
You certainly could use store-bought corn tortillas as an alternative, but I truly believe that the subtle sweetness from the homemade sweet potato tortillas is what makes these tacos exceptional. They beautifully temper the intense corn flavor of traditional tortillas and perfectly balance the spiciness of the chorizo and chipotle filling!
