Our recipe simplifies the process, making it accessible for bakers of all skill levels, and guarantees a batch of these extraordinary dessert bars that are extra rich, delightfully chewy, and utterly irresistible.

Brookies: The Best of Both Worlds in One Bite

There are moments when the craving strikes, and you simply can’t decide between a warm, gooey brownie and a soft, crumbly chocolate chip cookie. It’s a sweet dilemma that many dessert lovers face! Thankfully, the ingenious creation known as the “brookie” eliminates this tough choice entirely. A brookie is a glorious dessert bar that layers rich, fudgy brownie batter beneath a tender, chewy chocolate chip cookie dough, baked together to perfection in a single pan.

The result is a dessert bar that offers a dynamic eating experience. Each bite delivers a harmonious blend of deep cocoa notes from the brownie and the classic vanilla-butter sweetness from the cookie, studded with melting chocolate chips throughout. This combination creates an incredibly satisfying treat that’s both familiar and exciting. Not only do brookies satisfy multiple cravings simultaneously, but they’re also remarkably easy to prepare using everyday pantry staples, making them a go-to recipe for any baker looking for a show-stopping dessert.

Crafting the Perfect Brookies: Our Signature Recipe

Our brookies recipe is a masterful fusion, carefully adapted from two beloved classics: our signature fudgy 9×13 brownie recipe and our best chocolate chip cookies recipe. The secret to their success lies in balancing the components, ensuring neither layer overpowers the other, and that both bake to their ideal textures.

To achieve this perfect harmony, we’ve scaled down the original recipes, using half the amount of ingredients for each. This clever adaptation prevents the bars from becoming overly thick or dense, resulting in a perfectly portioned dessert that’s rich without being overwhelming. For an extra layer of decadence, we’ve also generously sprinkled additional chocolate chips into the brownie batter. This ensures that every bite is packed with gooey, melted chocolate, elevating the brookie experience to new heights. The result is a truly indulgent treat that brings together the best attributes of brownies and chocolate chip cookies into one harmonious bar.

Essential Ingredients for the Fudgy Brownie Batter

The brownie layer of our brookies is designed for maximum fudginess and ease, rivaling the simplicity of a boxed mix but with superior homemade flavor. You won’t need to fuss with melting chocolate bars for this recipe – just simple, high-quality ingredients you likely already have on hand. Here’s what you’ll need to create that irresistible cocoa foundation:

A flat lay of labeled ingredients for brownie batter: granulated sugar, all-purpose flour, cocoa powder, baking powder, salt, large egg, unsalted butter, water, vanilla extract, and chocolate chips.
  • Granulated Sugar: Provides sweetness and contributes to the moist, tender crumb of the brownies.
  • All-Purpose Flour: The structural backbone. Remember to stir, spoon, and level for accurate measurement to avoid dense brownies.
  • Cocoa Powder: The star of the brownie, delivering that rich, deep chocolate flavor. Choose a good quality unsweetened cocoa powder for the best results.
  • Baking Powder: A leavening agent that gives the brownies a slight lift, preventing them from being too flat.
  • Salt: Essential for balancing the sweetness and enhancing all the other flavors, especially the chocolate.
  • Large Egg: Acts as a binder, adds richness, and helps with the fudgy texture.
  • Unsalted Butter, melted: Provides moisture, richness, and contributes to the dense, chewy texture. Melting it makes for an incredibly easy mixing process.
  • Water: Adds moisture without adding extra fat, helping achieve that perfect fudgy consistency.
  • Vanilla Extract: A flavor enhancer that complements the chocolate beautifully. Don’t skip it!
  • Chocolate Chips: Semi-sweet or milk chocolate work wonderfully here, melting into pockets of gooey deliciousness throughout the brownie layer.

(NOTE: Precise measurements and detailed instructions for both brownie and cookie components can be found in the comprehensive recipe card further down.)

Effortless Brownie Batter Preparation

Preparing the brownie batter for your brookies is incredibly straightforward, designed for speed and simplicity. You’ll be amazed at how quickly you can whip up this rich chocolate base. Follow these few easy steps to create the perfect fudgy layer:

Hands mixing brownie batter in a bowl, showcasing the dark, rich texture of the chocolate mixture.
  1. In a large mixing bowl, begin by combining all your dry ingredients for the brownie batter. This includes the granulated sugar, all-purpose flour, cocoa powder, baking powder, and salt. Whisk them thoroughly to ensure they are well combined and there are no lumps of cocoa powder. This step is crucial for even flavor distribution.
  2. Next, add the wet ingredients to the dry mixture. Stir in the large egg, the melted unsalted butter, water, and vanilla extract. Mix until just combined. Be careful not to overmix; overmixing can lead to tougher brownies. Finally, gently fold in the chocolate chips until they are evenly distributed throughout the rich batter.

Once your delectable brownie batter is ready, set it aside. It’s time to prepare the equally delightful chocolate chip cookie dough that will form the top layer of your brookies.

Key Ingredients for the Chewy Chocolate Chip Cookie Dough

The cookie dough layer brings that classic, comforting chewiness and buttery flavor to your brookies. Many of the ingredients used here will be familiar, overlapping with the brownie batter, which keeps your shopping list concise. To create this irresistible golden layer, gather the following:

A flat lay of labeled ingredients for chocolate chip cookie dough: unsalted butter, light brown sugar, granulated sugar, large egg, vanilla extract, all-purpose flour, baking soda, salt, and chocolate chips.
  • Unsalted Butter, room temperature: Crucial for the creamy texture and flavor of the cookies. Room temperature butter creams beautifully with sugar.
  • Light Brown Sugar: The secret to chewy cookies! Brown sugar adds moisture and a delicious molasses flavor. Make sure it’s gently packed.
  • Granulated Sugar: Contributes to sweetness and helps with the crisp edges and spread of the cookie.
  • Large Egg: Binds the ingredients, adds richness, and contributes to the cookie’s structure.
  • Vanilla Extract: Elevates the overall flavor profile of the cookie dough. Use a good quality pure vanilla extract for the best taste.
  • All-Purpose Flour: Provides structure. As with the brownie flour, stir, spoon, and level for accurate measurement.
  • Baking Soda: The primary leavening agent for cookies, giving them a soft lift and helping them spread slightly.
  • Salt: Balances the sweetness and enhances the buttery and chocolate flavors.
  • Chocolate Chips: Semi-sweet or milk chocolate chips are perfect for that classic chocolate chip cookie experience.

(NOTE: Refer to the full recipe card below for precise measurements and detailed step-by-step instructions for both layers.)

Whipping Up the Perfect Cookie Dough

Crafting the chocolate chip cookie dough is a simple process, made even easier with an electric mixer. Achieving the right consistency is key to a perfectly chewy cookie layer for your brookies. Here’s how to prepare it:

Hands using an electric mixer to cream butter and sugars for chocolate chip cookie dough in a mixing bowl.
  1. In a separate large bowl, use an electric mixer to cream together the room temperature unsalted butter with both the light brown sugar and granulated sugar. Beat them on medium speed until the mixture becomes light, fluffy, and pale in color. This process incorporates air, which is vital for the cookie’s texture. Then, beat in the large egg and vanilla extract until well combined, scraping down the sides of the bowl as needed to ensure everything is thoroughly mixed.
  2. In a medium bowl, whisk together the remaining dry ingredients: the all-purpose flour, baking soda, and salt. Once thoroughly combined, gradually add these dry ingredients to the wet butter and sugar mixture. Mix on low speed until just incorporated. Be careful not to overmix; stop as soon as no dry streaks of flour remain.
  3. Finally, gently fold in the chocolate chips by hand using a spatula. This prevents the chips from breaking up and ensures an even distribution throughout the dough.

Assembling Your Masterpiece: Layering Brownies and Cookies

With both the fudgy brownie batter and the chewy chocolate chip cookie dough prepared, it’s time for the exciting part: assembling your brookies! This layering technique ensures you get the distinct, yet harmonious, textures in every bite.

A 9x13-inch baking pan lined with parchment paper, showing a layer of brownie batter spread evenly, with spoonfuls of cookie dough strategically dropped on top.
  • Prepare your baking pan: Start by lining a 9×13-inch baking pan with parchment paper. This is a crucial step for easy removal and clean cutting later. Leave a generous 2-inch overhang on the longer sides of the pan; these “handles” will make lifting the cooled brookies out a breeze. If any sides of your pan aren’t covered by parchment, lightly grease them with cooking spray to prevent sticking.
  • Spread the brownie base: Evenly spread the brownie batter into a thin, uniform layer across the bottom of the prepared baking pan. Use an offset spatula or the back of a spoon to ensure it reaches all corners. This will form the rich, fudgy foundation of your brookies.
  • Add the cookie dough layer: Now, take spoonfuls of the chocolate chip cookie dough and drop them strategically over the brownie batter. You can gently flatten the cookie dough mounds slightly, but don’t feel the need to create a perfectly smooth, uniform layer or cover the brownie batter completely. Allowing some of the brownie batter to “peak through” will create beautiful marbling and ensure both layers bake evenly. For an extra touch of indulgence and visual appeal, sprinkle a few extra chocolate chips over the top of the cookie dough before baking, if desired.

Baking Your Brookies to Perfection

Baking is where the magic truly happens, transforming your layered batters into golden-brown brookies with distinct fudgy and chewy textures. Achieving the perfect bake requires a keen eye and precise timing, as ovens can vary. Here’s how to bake your brookies for optimal results:

Close-up of baked chocolate chip cookie brownies, showing a golden brown top layer of cookies and the dark rich brownie underneath.
  • Preheat and initial bake: Preheat your oven to 350˚F (175˚C). Once the oven is ready, cover the entire baking pan loosely with aluminum foil. This prevents the cookie dough from browning too quickly while allowing the brownie layer to set. Bake for 25 minutes with the foil on.
  • Uncover and finish baking: After 25 minutes, carefully remove the foil. The brookies will continue to bake and develop a beautiful golden-brown crust on the cookie layer. Bake for another 15 minutes, or until the cookie dough is golden brown and a toothpick inserted into the brownie portion comes out with moist crumbs, but not wet batter.
  • Cooling for clean cuts: This step is critical! Allow the dessert to cool completely in the pan on a wire rack before attempting to lift it out. Cooling can take a couple of hours, but it’s essential for the brookies to set properly, ensuring clean, neat squares when cut. Once fully cooled, use the parchment paper overhangs to carefully lift the entire slab of brookies out of the pan. Transfer to a cutting board and slice into your desired serving squares.

A Note on Baking Time & Oven Variation: Initially, I baked these brookies covered with foil for 20 minutes, then uncovered for another 20 minutes. While still delicious, they browned a bit more than I ideally wanted. I’ve adjusted the times in this recipe to compensate for this, aiming for a perfectly golden top without overbrowning. Keep a close eye on your brookies, especially during the uncovered phase, as every oven is different. Factors like the amount of brown sugar in the cookie dough (which tends to brown quicker) can also influence the bake. Even if they appear a bit darker, rest assured they will still taste absolutely phenomenal! The key is a fudgy brownie and a chewy cookie.

Storage, Troubleshooting, and Expert Tips for Brookie Success

To ensure your brookies remain as delicious as the day they were baked, and to help you master this recipe, here are some essential storage guidelines and helpful tips:

Baked Brookies, half brownies and half cookies, stacked neatly on a white plate, ready for serving.
  • Storage: Once completely cooled, store brookies in an airtight container at room temperature for up to one week. For longer preservation, brookies can be frozen! Cut them into individual squares, then layer them in an airtight freezer-safe container, separating layers with parchment paper to prevent sticking. They can be frozen for up to 2-3 months. Make sure to thaw completely at room temperature before serving for the best texture.
  • Knowing When Brookies Are Done Baking: This can be a bit tricky due to the two different batters and generous amount of chocolate chips. The cookie dough layer should be visibly golden brown. For the brownie layer, a toothpick inserted into the center should come out with moist crumbs attached, but not wet batter. Remember that the bars will continue to set and firm up significantly as they cool, so it’s better to err on the side of slightly underbaked than overbaked for maximum fudginess and chewiness. Trust the recommended bake time, especially if you know your oven temperature is accurate.
  • Quality Ingredients Matter: Using good quality ingredients can truly elevate your brookies. A high-quality unsalted butter will impart a richer flavor, and premium cocoa powder will ensure a deep, satisfying chocolate taste in your brownies. Similarly, choosing good chocolate chips that melt beautifully will make a noticeable difference in the final product.
  • Don’t Overmix: For both batters, mix only until ingredients are just combined. Overmixing develops gluten, which can lead to tough, dry brownies and cookies.
  • Room Temperature Butter for Cookies: Ensure your butter for the cookie dough is truly at room temperature. It should be soft enough to indent with your finger but not melted. This allows it to cream properly with the sugars, creating a light and fluffy base.
  • Parchment Paper is Your Best Friend: Don’t skip lining the pan with parchment paper, leaving an overhang. This makes lifting the entire slab out of the pan effortless and allows for clean, easy cutting into perfect squares.

  • ¾ cup (128 g) semi-sweet chocolate chips

Cookie Dough:

  • ½ cup (113 g) unsalted butter, (1 stick) room temperature
  • ½ cup (100 g) light brown sugar, gently packed
  • ⅓ cup (68 g) granulated sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (180 g) all-purpose flour, (stir, spoon & level)
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (170 g) semi-sweet chocolate chips

Equipment

  • Electric Hand Mixer
  • 6-Quart Steel Mixing Bowl
  • Silicone Spatula Set
  • Nylon Whisk
  • 9×13-inch Pan
  • Parchment Paper

Instructions

  • Preheat oven to 350 degrees Fahrenheit (175˚C). Line a 9×13-inch baking dish with parchment paper, leaving a 2-inch overhang on the sides for lifting the bars out of the pan.
  • BROWNIE BATTER: In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, and salt.
  • Stir in the egg, melted butter, water, and vanilla extract. Fold in the chocolate chips until just combined. Set the brownie batter aside while you make the cookie dough.
  • COOKIE DOUGH: In a separate large bowl, use an electric mixer to cream the room temperature butter with both sugars until light and fluffy. Add the egg and vanilla extract. Mix together and scrape the bowl.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the butter mixture and mix on low speed until just incorporated.
  • Gently fold in the chocolate chips by hand.
  • ASSEMBLE AND BAKE: Spread the brownie batter into a thin, even layer in the prepared baking pan.
  • Drop spoonfuls of cookie dough into the brownie batter. You may flatten the cookie dough slightly, but allow some of the brownie batter to peak through — do not cover completely. Sprinkle with extra chocolate chips on top, if desired.
  • Cover the pan loosely with foil and bake at 350˚F (175˚C) for 25 minutes. Then remove the foil and bake for another 15 minutes, or until the cookie layer is golden brown and a toothpick inserted into the brownie layer comes out with moist crumbs.
  • Allow the dessert to cool completely in the pan on a wire rack before lifting it out using the parchment paper overhangs. Then, cut it into squares for serving.

Notes

  • One 12-oz bag of chocolate chips is usually enough to cover both batters, if preferred.
  • How to know when brookies are done baking: The cookie dough will be golden brown and a toothpick inserted into the brownie portion will come out with moist crumbs, but not wet batter. This can be pretty tricky to determine because of all the chocolate chips. The bake time provided is generally accurate, but always account for differences in individual ovens. The bars will continue to set as they cool.
