Meet the Culinary Masterminds: Julie & Maddie from Tastes of Lizzy T
Hello, dear readers of Dessert Now, Dinner Later! We are Julie and Maddie, the mother-daughter duo behind the culinary blog Tastes of Lizzy T. Our kitchen is truly our happy place, a space where we bond, experiment, and learn together. While we confess a deep love for all things sweet – baking is our favorite form of relaxation and creative expression, so there’s almost always something delicious cooling on our counter – we are equally passionate about nurturing our bodies with clean, wholesome foods during mealtimes. We firmly believe that a healthy start to the day sets the tone for everything that follows. When we fuel ourselves with a nutritious breakfast, we find it naturally guides us towards making healthier choices throughout the rest of the day.

The Quest for the Perfect Healthy Pancake
Pancakes hold a special place in our hearts as a beloved breakfast staple. About eight months ago, as we embarked on a more dedicated journey towards “clean eating,” we knew we couldn’t abandon our cherished pancake tradition. The challenge was clear: we needed a pancake recipe that we could enjoy regularly, one that delivered on flavor and texture without relying on traditional flour and excessive sugar. After much experimentation and tweaking, we finally cracked the code, and these magnificent Carrot Cake Pancakes emerged as our victorious answer! They perfectly align with our clean eating goals while satisfying our craving for a comforting and indulgent breakfast.

Why You’ll Fall in Love with These Carrot Cake Pancakes
Prepare to be utterly charmed by these pancakes, which boast a rich, satisfying flavor profile despite being packed with incredibly wholesome ingredients. The secret to their grain-free goodness lies in a thoughtful combination of coconut and almond flour. These flours not only make the pancakes suitable for those avoiding grains but also contribute to a wonderfully tender texture and subtle nutty flavor. Each bite is a testament to how delicious healthy eating can be.
Flexible Ingredients for Your Healthy Kitchen
One of the many beauties of this recipe is its adaptability. We’ve designed it with versatility in mind, allowing you to tailor certain ingredients to your personal preferences and what you have on hand. For instance, when it comes to the fat component, you have several excellent choices. You can opt for nutrient-rich ghee, which provides a lovely nutty depth, or choose grass-fed butter for its superior flavor and nutritional benefits. Of course, your favorite brand of high-quality butter will also work beautifully, ensuring a moist and flavorful pancake every time.
Sweetness is another area where you can customize. To achieve that perfect, balanced sweetness reminiscent of classic carrot cake, we recommend using pure maple syrup or agave nectar. Both are natural sweeteners that integrate seamlessly into the batter. For an even more health-conscious approach, or if you prefer a subtle, fruit-derived sweetness, unsweetened applesauce is a fantastic alternative. It adds moisture and a touch of natural sweetness without any added sugars.
A Flavorful Surprise: Carrots You Won’t Even Notice!
Perhaps the most delightful surprise about these pancakes is how well the star ingredient, carrots, integrates into the overall experience. Thanks to a generous blend of warming spices – cinnamon, ginger, and nutmeg – the subtle sweetness and earthy notes of the carrots are beautifully complemented and enhanced. Even the most discerning palates, including those of children, often won’t even realize they’re consuming a significant serving of vegetables. This makes these pancakes a clever and delicious way to sneak extra nutrition into your family’s diet, transforming a typical breakfast into a nutrient-dense meal without sacrificing flavor.
We are confident that you will adore these Carrot Cake Pancakes as much as we do. They represent our commitment to creating recipes that are both nourishing and irresistibly tasty. As the year progresses, we look forward to sharing many more of our “clean” and healthy recipes, so be sure to follow along with us on our culinary adventures!

(6)
eggs -
½ teaspoon
salt -
1 ½ teaspoons
baking soda -
2 tablespoons
cinnamon -
2 ½ teaspoons
ginger -
1 ½ teaspoons
nutmeg -
⅔ cup
(159 ml)
coconut milk -
2 cups
(226 g)
finely shredded or chopped carrots
Instructions
-
Combine all of the ingredients in a large bowl and mix until well blended. The batter will be thick, which is perfectly normal for these grain-free pancakes.
-
Heat a pancake pan or griddle to about medium-high heat, aiming for approximately 300 degrees Fahrenheit (150 degrees Celsius). Lightly spray the griddle surface with cooking spray or brush with a little extra ghee/butter to prevent sticking.
-
Ladle about ½ a cup of the thick pancake batter onto the hot griddle for each pancake. Allow the pancakes to cook for approximately 2½ minutes on the first side. You’ll know they’re ready to flip when the edges look set and small bubbles begin to form on the surface. If they are not flipping easily, give them a little more time to cook through before attempting to turn them.
-
Carefully flip the pancakes and allow them to cook for another 2½ minutes on the second side, or until they are golden brown and completely cooked through in the center. Repeat with the remaining batter.
-
This recipe will generously yield about 16 pancakes, each measuring approximately 4½ inches in diameter. Serve them warm, either plain or with a dollop of your favorite butter and a drizzle of maple syrup or a sugar-free alternative, as desired! For an extra special treat, consider a light cream cheese frosting made with Greek yogurt and a touch of natural sweetener.
Notes
For an even richer carrot cake flavor, you can add a handful of chopped walnuts or pecans to the batter along with the carrots. A touch of grated orange zest can also brighten the flavors beautifully.
Leftover pancakes can be stored in an airtight container in the refrigerator for up to 3-4 days. They also freeze wonderfully; simply place them in a single layer on a baking sheet to freeze, then transfer to a freezer-safe bag for up to 2-3 months. Reheat in a toaster, microwave, or on a griddle until warmed through.
