Ingredients

  • 1 ½ cups dry uncooked Uncle Ben’s Instant Brown Rice
  • 2 ½ cups water
  • 1 Tbsp butter
  • ½ (16oz) bag frozen peas and carrots
  • ½ Tbsp sesame oil
  • 1 ½ tsp minced garlic (about 3 cloves)
  • 2 boneless skinless chicken breasts, cut into ½-inch cubes
  • ½ cup brown sugar
  • ½ cup low-sodium soy sauce
  • 1 tsp minced ginger
  • Salt and pepper, to taste

Instructions

  1. Combine Uncle Ben’s Instant Brown Rice, water, and butter in a saucepan. Bring the mixture to a rolling boil. Once boiling, reduce the heat to a simmer, cover the saucepan, and cook for 10 to 12 minutes, or until all the water has been completely absorbed by the rice. Alternatively, you can follow the specific microwave directions provided on the rice packaging for convenience. Keep the cooked rice warm while you prepare the other components of the dish.
  2. While the rice is cooking, prepare your vegetables. Place the frozen peas and carrots into a separate pot. Add just enough water to barely cover the vegetables. Bring this to a simmer and cook for approximately 6 to 7 minutes, or until the peas and carrots are tender and easily pierced with a fork. Drain any excess water thoroughly once cooked.
  3. Simultaneously, heat the sesame oil in a large skillet over medium-high heat. Add the minced garlic to the hot oil and stir continuously for about 30 seconds until it becomes wonderfully fragrant. Be careful not to burn the garlic. Next, add the cubed boneless, skinless chicken breasts to the skillet. Cook the chicken, stirring occasionally, until it is lightly browned on all sides and cooked all the way through, ensuring no pink remains inside.
  4. Once the chicken is cooked, add the drained peas and carrots and the warm cooked rice to the skillet with the chicken. Pour in the brown sugar, low-sodium soy sauce, and minced ginger. Stir all the ingredients together thoroughly to combine, ensuring the sauce coats everything. Let the mixture simmer for about 3 to 5 minutes, allowing the rice to absorb most of the delicious teriyaki sauce. Taste and season with additional salt and pepper as needed.
