In true celebratory spirit for the movie’s release, I couldn’t resist creating these adorable Baymax Cupcakes for everyone to enjoy during your at-home screening! Imagine the delightful smiles and happy giggles these charming treats will bring to your children’s faces. The best part? They are incredibly EASY to make, even for novice bakers!

To begin your Baymax baking adventure, you’ll need to prepare a batch of cupcakes from a standard boxed mix. For these particular Baymax designs, I find that making 18 cupcakes instead of the typical 24 from one box works best. By baking them at a slightly higher temperature of 400 degrees Fahrenheit for approximately 11 to 13 minutes, you achieve beautifully peaked tops, which are ideal for our Baymax design and help you use less frosting. We opted for a rich chocolate flavor for our cupcakes, as it pairs wonderfully with the sweet, ethereal marshmallow frosting we’ll be making. Of course, feel free to use your family’s favorite cupcake flavor – vanilla, red velvet, or even a funfetti mix would work perfectly!

Once your cupcakes are baked and cooled, and your delectable marshmallow frosting is prepared (the recipe for which you’ll find below), all that’s left are a few simple decorating components: large marshmallows for Baymax’s head and arms, and black decorating gel to create his iconic eyes.

Creating these delightful Baymax cupcakes is a fun activity that yields impressive results. Here’s a detailed guide to bring your culinary Baymax to life:

  1. Frosting Application: First, using a piping bag fitted with a round tip, generously pipe some of the homemade marshmallow frosting onto the cooled cupcakes. Don’t worry if the frosting seems a bit soft and starts to droop slightly as it sits – this soft, pillowy texture perfectly mimics Baymax’s lovable, inflatable form!
  2. Crafting Baymax’s Eyes: Next, take a large marshmallow and select one of its flat ends. Carefully squeeze two distinct black dots onto this flat surface using your black decorating gel. Repeat this step for all 18 cupcakes.

The middle triangle can be discarded or, more likely, enjoyed as a chef’s treat! Repeat this process for all 18 cupcakes.

Ingredients

  • 15.25 oz (432 g) box cake mix, flavor optional
  • Ingredients needed to make cake mix (e.g., oil, water, eggs)
  • Large marshmallows (approx. 36, for heads and arms)
  • Black decorating gel
  • ½ cup (113 g) unsalted butter, softened to room temperature
  • 1 cup (120 g) powdered sugar
  • 7 oz (198 g) jar marshmallow creme
  • 1 tsp clear vanilla extract (regular vanilla extract is also fine)

Instructions

  • Prepare Cupcakes: Mix the box cake mix according to the directions on the package. Instead of filling 24 paper cups, fill 18 paper-lined muffin cups.
  • Bake Cupcakes: Bake at 400 degrees Fahrenheit for 11 to 13 minutes, or until a toothpick inserted into the center comes out clean. This slightly higher temperature and fewer cupcakes per batch help create tall, peaked tops, which reduce the amount of frosting needed. Let cool completely on a wire rack.
  • Prepare Marshmallow Frosting: In a medium bowl, beat the softened butter and powdered sugar together with an electric hand mixer until crumbly. Add half of the marshmallow creme and the vanilla extract. Beat again until well combined. Then, add the remaining marshmallow creme and continue to beat until the frosting is smooth and fully combined. Scoop the prepared marshmallow frosting into a piping bag fitted with a round tip.

  • Final Assembly: Carefully place the marshmallow head (with the eyes) onto the top center of the frosted cupcake.
