Cinnamon Roll Pancakes: A Breakfast Masterpiece Reimagined

Oh my word, these cinnamon roll pancakes are nothing short of genius! They deliver the full, comforting flavor profile of a classic cinnamon roll, all while being incredibly quick to prepare. Imagine sinking your teeth into a fluffy pancake, complete with a rich cinnamon-sugar swirl, all drenched in a luscious cream cheese glaze instead of traditional syrup. It’s a culinary experience that truly satisfies every sweet craving. We absolutely adored every single bite!

My journey with this recipe began back in 2012. While the original version was undoubtedly delicious, there was a minor, persistent issue: the buttery cinnamon-sugar mixture tended to melt and cook much faster than the pancake batter itself. This often led to the cinnamon swirl burning, which nobody wants in their breakfast treat.

Determined to perfect this already fantastic concept, I re-worked the recipe. The game-changing solution was to incorporate a small amount of pancake batter directly into the cinnamon-sugar mixture. This simple tweak created a more stable and even consistency for the swirl. It not only prevented the cinnamon-sugar from burning during cooking but also ensured it integrated seamlessly into the pancake, delivering a perfectly gooey and flavorful core with every bite. Problem solved! Now, these cinnamon swirl pancakes are better and more foolproof than ever before, guaranteeing consistent deliciousness every time.

If you’re anything like me, you occasionally embrace the joy of breakfast for dinner, affectionately known as “brinner.” These cinnamon bun pancakes have quickly become a cherished family favorite for such occasions. They offer a delightful way to shake up your usual breakfast or dinner routine, promising a unique and satisfying meal that will impress everyone. Give them a try – they truly won’t disappoint and are sure to earn a permanent spot in your recipe collection!

Ingredients needed to make cinnamon roll pancakes with pancake mix.
  • Pancake Mix: This is your secret weapon for speed and convenience! Choose your absolute favorite brand. I personally find that Member’s Mark buttermilk pancake mix delivers consistently fluffy and delicious results, providing the perfect base for our cinnamon-infused creations.
  • Water: Essential for preparing your chosen pancake mix. Always follow the specific water-to-mix ratio indicated on your pancake mix package to ensure the ideal batter consistency. My preferred mix typically calls for 2 cups (473 ml) of water.
  • Butter (Salted or Unsalted): Used generously in both the cinnamon-sugar swirl and the decadent cream cheese glaze. The butter provides richness and helps carry the flavors beautifully. Feel free to adjust based on your personal salt preference; either salted or unsalted works wonderfully.
  • Brown Sugar: Light brown sugar is key for the cinnamon filling. Its moist texture and subtle molasses notes add a wonderful depth and richness, contributing significantly to that classic, warm cinnamon roll taste we all crave.
  • Cinnamon: The star spice of this dish! High-quality ground cinnamon makes all the difference. I’m particularly fond of Kirkland Saigon ground cinnamon from Costco for its robust and fragrant flavor profile, which truly elevates the swirl.
  • Cream Cheese: For the glaze, always opt for block-style cream cheese, not the spreadable kind from a tub. Block cream cheese has a firmer consistency and less water content, which is crucial for achieving that rich, creamy, and stable glaze that melts beautifully over warm pancakes.
  • Powdered Sugar (Confectioners’ Sugar): This fine sugar is indispensable for creating a smooth, lump-free, and sweet cream cheese glaze. Its powdery texture dissolves easily, ensuring a silky finish.
  • Vanilla Extract: A touch of pure vanilla extract enhances the overall flavor of the cream cheese glaze, adding a layer of aromatic sweetness that complements the tang of the cream cheese and the spice of the cinnamon beautifully.

Crafting Your Perfect Cinnamon Roll Pancakes: A Detailed Step-by-Step Guide

Get ready to transform simple ingredients into an extraordinary breakfast! Follow these detailed instructions to create the ultimate cinnamon roll pancakes:

Steps to make cinnamon roll pancakes with pancake mix.
  1. Prepare the Pancake Batter: In a large mixing bowl, combine your chosen pancake mix with the amount of water specified on its packaging. Whisk these ingredients together thoroughly until just combined. A few small lumps are perfectly fine and even desirable for fluffy pancakes; avoid overmixing, as this can lead to tough pancakes. Once mixed, set the batter aside to rest for a few minutes while you prepare the swirl.
  2. Whip Up the Cinnamon-Sugar Swirl: Begin by melting the butter in a heat-safe bowl in the microwave until completely liquid. Add the light brown sugar and ground cinnamon to the melted butter, mixing well until a thick, uniform paste forms. Here’s the crucial trick: incorporate about ¼ cup of your prepared pancake batter into this cinnamon-sugar mixture. Mix until it’s smooth and completely combined. This addition prevents the swirl from burning and ensures a perfectly gooey texture. Carefully transfer this rich filling into a plastic zip-top bag, then snip off a small piece from one corner of the bag (just enough for easy piping) to create a makeshift piping bag. Set this aside, ready for action.
Cooking cinnamon swirl pancakes on a griddle.
  1. Cook the Pancakes to Golden Perfection: Preheat your griddle to a precise 325˚F (approximately 163˚C). Lightly grease the surface with cooking spray or a pat of butter. Pour about ¼ cup of pancake batter per pancake onto the hot griddle, ensuring you leave ample space between each one to prevent them from merging together as they cook.
  2. Master the Cinnamon Swirl Application: Immediately after pouring the pancake batter, take your zip-top bag filled with the cinnamon-sugar mixture. Starting from the center of each pancake, pipe a beautiful spiral outwards, stopping approximately 1 inch from the edge. This small margin is important! (NOTE: Piping too close to the edge may cause the cinnamon-sugar mixture to spill over onto the griddle, potentially burning and making cleanup more difficult.)
  3. Flip and Finish Cooking: Allow the pancakes to cook for about 1-2 minutes on the first side. You’ll know they’re ready to flip when bubbles begin to appear and burst on the surface of the batter, and the edges look set. Carefully slide a turner underneath and gently flip each pancake. Cook for another 1-2 minutes on the second side, or until they are beautifully golden brown and thoroughly cooked through the center.
  4. Keep Them Warm: As each batch of cinnamon roll pancakes finishes cooking, transfer them to a clean plate. To keep them perfectly warm and ready for serving, gently cover the stack with a clean kitchen towel. Repeat the cooking process with the remaining batter and cinnamon swirl mixture, always ensuring the griddle is wiped clean between batches to prevent any lingering cinnamon-sugar from burning.

The Secret to Success: Indulgent Cream Cheese Glaze

No cinnamon roll experience is complete without its signature cream cheese glaze. This simple, yet incredibly rich and flavorful glaze, truly elevates these pancakes, making them taste just like the real deal:

Steps to make cream cheese glaze.
  • Melt and Combine: In a heat-safe bowl, combine the butter and block-style cream cheese. Microwave them together in short intervals (15-30 seconds), stirring after each, until both are completely melted and smoothly combined. This ensures a creamy base for your glaze.
  • Whisk to Smoothness: To the melted butter and cream cheese mixture, add the powdered sugar and vanilla extract. Whisk vigorously until the glaze is entirely smooth, free of any lumps, and has a pourable, yet thick, consistency. If it’s too thick, add a tiny splash of milk (half a teaspoon at a time) until it reaches your desired drizzling consistency. If it’s too thin, whisk in a little more powdered sugar.
  • Serve Immediately: As soon as your pancakes are ready and warm, generously drizzle the freshly made cream cheese icing over them. Serve these exquisite Cinnamon Roll Pancakes immediately to enjoy their full flavor and warmth.

Expert Tips for the Best Cinnamon Roll Pancakes

Achieving perfectly fluffy pancakes with a delicious, gooey cinnamon swirl and a creamy glaze is easier than you think with these expert tips:

  • Piping Precision is Key: When piping the cinnamon-sugar filling onto your pancakes, be mindful not to go too close to the edges. Leaving about a 1-inch border will prevent the mixture from spilling over onto the hot griddle, which can cause it to burn and create a messy cleanup.
  • Keep Your Griddle Clean: After cooking each batch of pancakes, take a moment to wipe your griddle clean with a paper towel. This removes any stray bits of cinnamon-sugar or cooked batter, ensuring that subsequent pancakes cook evenly and don’t pick up any burnt residue. A clean surface means perfect pancakes every time.
  • Glaze Timing for Perfection: While you can prepare the cream cheese glaze slightly ahead of time, it’s best served warm and freshly made for optimal drizzling consistency. If you do make it in advance, you might need to gently reheat it in the microwave (in very short bursts, stirring well) to make it pourable again. For food safety, especially due to the cream cheese, avoid reheating the glaze more than once.
  • Don’t Overmix Your Batter: For the fluffiest pancakes, mix the pancake batter just until the dry and wet ingredients are combined. A few small lumps are perfectly acceptable and indicate you haven’t overmixed. Overmixing develops the gluten, leading to tougher, less tender pancakes.
  • Rest Your Batter: Allowing your pancake batter to rest for 5-10 minutes after mixing can significantly improve the texture. This resting period allows the flour to fully hydrate and the gluten to relax, resulting in lighter, fluffier pancakes.
  • Consistent Griddle Temperature: Maintaining a steady griddle temperature is crucial. If your griddle is too hot, the pancakes will burn on the outside before cooking through; if it’s too cool, they’ll become dense. A temperature of 325˚F (163˚C) is generally ideal for achieving that perfect golden-brown exterior and thoroughly cooked interior.

Serving Suggestions and Delicious Variations

These Cinnamon Roll Pancakes are a complete meal in themselves, especially with that rich cream cheese glaze. However, you can enhance the experience even further or add a personal touch with these serving suggestions and variations:

  • Classic Companions: Serve alongside crispy bacon or savory sausage for a balanced breakfast. Fresh fruit like berries or sliced bananas also makes a wonderful, light complement.
  • Extra Indulgence: For those with a serious sweet tooth, a sprinkle of chopped pecans or walnuts over the glaze adds a delightful crunch and nutty flavor. A dusting of extra cinnamon or powdered sugar also never hurts!
  • Seasonal Flair: In the fall, a dollop of apple butter or a sprinkle of pumpkin spice in the batter could add a festive touch. During summer, fresh peaches or blueberries would be heavenly.
  • Chocolate Lover’s Dream: While not traditional, mini chocolate chips folded into the pancake batter or sprinkled on top of the swirl before flipping could be a delightful variation for chocolate enthusiasts.

Storing and Freezing Cinnamon Swirl Pancakes for Later

Planning ahead or have leftovers? These cinnamon roll pancakes are great for making in advance or saving for a quick treat later. Proper storage ensures they remain delicious:

  • Refrigeration: For short-term storage, allow the cinnamon roll pancakes to cool completely. Then, transfer them to an airtight container and store them in the refrigerator for up to 7 days. To reheat, simply pop them into the microwave for a minute or two, or toast them in a toaster or toaster oven until warmed through and slightly crispy.
  • Freezing for Later: These pancakes freeze exceptionally well! Ensure they are completely cool before preparing them for the freezer. To prevent sticking, stack the pancakes with a piece of parchment paper separating each layer, then place the stack into a freezer-safe zip-top bag. Alternatively, you can wrap each pancake individually in plastic wrap before placing them in the bag. Label the bag with the date and freeze for up to 3 months. When ready to enjoy, thaw them briefly in the microwave or reheat directly in a toaster or toaster oven until piping hot.
  • Important Glaze Note: Do NOT freeze the pancakes with the cream cheese glaze already on top. The texture of the glaze will not hold up well to freezing and thawing. Instead, freeze the glaze separately in a freezer-safe container or a small zip-top bag. When reheating the glaze after freezing, ensure you only reheat it once for food safety reasons, due to the cream cheese content.

  • ¼ cup (50 g) light brown sugar, gently packed
  • 1 ½ tsp ground cinnamon

Cream Cheese Glaze

  • 1 tsp vanilla extract

Equipment

  • Presto Electric Griddle
  • Turner
  • 6-Quart Steel Mixing Bowl

Instructions

  • PANCAKE BATTER: Prepare pancake mix according to directions on package, by whisking together the pancake mix and water in a large bowl. Set aside.
  • CINNAMON-SUGAR FILLING: Melt the butter in a heat-safe bowl in the microwave. Add the brown sugar and cinnamon and mix. Then add ¼ cup of the prepared pancake batter to the filling and mix until smooth and combined. Transfer filling to a plastic zip-top bag and cut off a small piece of the corner (to use for piping onto the pancakes). Set aside.
  • Heat griddle to 325˚F. Grease with cooking spray. Make pancakes with ¼ cup of batter each, leaving space between each pancake so they don’t stick together.
  • Pipe a swirl on top of each pancake with the cinnamon-sugar mixture, starting from the center and spiraling outwards, stopping about 1-inch from the edge. (NOTE: If you go too close to the edge, the cinnamon-sugar will spill over onto the griddle.)

Notes

  • Don’t pipe the cinnamon-sugar filling too close to the edge of the pancakes, or cinnamon-sugar will spill over onto the griddle.
  • Wipe the griddle and spatula after each batch to remove any cinnamon-sugar before proceeding with the next batch.
  • Store cinnamon roll pancakes in an airtight container in the refrigerator for up to 7 days. Reheat pancakes in the microwave or toaster.
  • TO FREEZE: Make sure pancakes are completely cool before stacking inside of a freezer-safe zip-top bag with parchment paper separating each layer. Label and freeze for up to 3 months. Thaw in the microwave or toaster and make sure to reheat sufficiently. (Do NOT freeze with glaze on top. Freeze glaze separately in a freezer-safe container or zip-top bag. Only reheat the glaze once for food safety due to the cream cheese.)
