  • 1 ½ cup
    (300 g) granulated sugar
  • 1 ¾ cups
    (403 g) bananas, mashed (about 4½-5 bananas)
  • 2
    large eggs

    (270 g) all-purpose flour, (stir, spoon, & level)
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • ⅔ cup
    (159 ml) buttermilk, (or ⅔ cup milk + 1 tsp lemon juice/white distilled vinegar)

  1. In the bowl of a stand mixer with the paddle attachment (or using a large bowl & electric hand mixer), cream the softened butter and granulated sugar together until the mixture is light, pale, and fluffy.
  2. Add the mashed bananas to the creamed mixture and mix until they are thoroughly incorporated and mashed up. (If your bananas were frozen and thawed, the butter might appear slightly chunky, but this is completely normal and will not affect the final cake.)
  3. Crack the two large eggs into the bowl, mixing them in one at a time until each is fully combined. Stir in the vanilla extract until just incorporated.
  4. In a separate, medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients in the mixer bowl while the machine is running on low speed. Mix only until just combined; be careful not to overmix.
